Characterization of carbohydrates, amino acids, viscosity, and antioxidant capacity in rice wines made in Saitama, Japan, with different sake rice
Get PDFWe investigated the physicochemical properties of Japanese rice wines, including their functional properties and carbohydrate and amino acid content in solution and solid state. Three samples were tested. The glucose, allose, and raffinose contents in samples (A, B, C) in g/100 g were (3.47, 3.45, 7.05), (1.60, 1.63, 1.61), and (2.14, 2.75, 1.49), respectively. The total amino acid in µmol/mL was (3.1, 3.5, 4.4). Glutamic acid, alanine, and arginine varied in content across the samples. The viscosity (10 °C) and activation energy (ΔE) calculated using the Andrade equation were (2.81 ± 0.03, 2.74 ± 0.06, 2.69 ± 0.03) mPa-s and (22.3 ± 1.1, 22.0 ± 0.2, 21.3 ± 0.5) kJ/mol, respectively. Principal component analysis using FT-IR spectra confirmed the separation of the samples into principal components 2 and 3. The IC50 values from the DPPH radical scavenging test were (2364.7 ± 185.3, 3041.9 ± 355.1, 3842.7 ± 228.1) µg/mL. What is The Current “The place to educate people”? ～ Towards Enhancement of Student Support as “Systematic and Strategic Involvement in Education”～
Get PDF本稿のねらいは、1990 年代からこんにちまでの 30 年以上におよぶ大学改革の流れをふり返り、どのような観点から改革の方向性が示されてきたのかを探ることにある。同時に、改革がどのような効果をもたらしたのかについても見極めたい。それらを踏まえ、“人を教うるゆえんの道”である大学のあるべき姿についても展望する。本稿を通して、答申や報告書などを分析し、こんにちまでの大学改革の流れを分析し考察を重ねた。1991 年の大綱以降、答申や報告書などにおいて、多くの特徴的な観点が示され、新しい時代のあるべき大学像を求めて、大学改革が促され続けてきたことがわかった。しかし、大学改革は決して順風満帆ではないことが本稿を通して見えてきた。ユニバーサル段階、ユニバーサル・アテンダンス型にあるこんにちの大学は、数多くの課題を抱えている。そのようななか、大学において、“組織的かつ戦略的な教育関与”として、徹底的に学生支援に取り組むことで、新しい時代の大学像が見えてくるようになるであろうことを、本稿において指摘した。また、学生支援力を強化し、学生支援体制を充実させることで、大学における教育の質保証を実現し、自律的な改革サイクルとしての内部質保証も円滑に機能することにつながる、という視点についても言及した。これこそが、現代の“人を教うるゆえんの道”の姿なのではないだろうか。The purpose of this paper is to look back over the 30-plus years of university reform from the 1990s to the present, and to explore from what perspective the direction of reform has been indicated. At the same time, I would like to see what kind of effects the reforms have had. Based on these, we will also look at the ideal form of a university, which is “The place to educate people.” Through this paper, the authors analyzed reports and analyzed and considered the flow of university reforms up to the present. Since the outline in 1991, many characteristic points of view have been presented in reports and reports, and it has been found that university reforms have continued to be promoted in search of the ideal image of universities in a new era. However, through this paper, we have come to see that university reform is by no means smooth sailing. Today’s universities, which operate under the universal stage and universal attendance model, have many problems. Under these circumstances, this paper points out that the image of a new era of universities will come into view if they are thoroughly engaged in student support as “Systematic and Strategic Involvement in Education”. In addition, the perspective that strengthening student support capabilities and enhancing the student support system will lead to the realization of quality assurance for education at the university and the smooth functioning of internal quality assurance as an autonomous reform cycle is also mentioned.論文 / Article
