    PEMANFAATAN TEPUNG PORANG (Amorphophallusoncophyllus) SEBAGAI PENSTABIL EMULSI M/A DAN BAHAN PENYALUT PADA MIKROKAPSUL MINYAK IKAN

    This research was aimed to investigate the ability of porang (Amorphophallus oncophyllus) flour to stabilizeoil-in-water (O/W) emulsion and further more can be used as encapsulating matrix for fish oil microencapsules. The experiments were divided into three stages: A) emulsification with ultra turrax to form coarse emulsion which designed using randomized block design with two variables, namely concentration of porang flour (55% glucomanan) i.e. 0.5% and 1% , and oil concentrations i.e.20%, 30% and 40%;B) Variables that produced stable coarse emulsions were selected to be used in fine emulsion process using high pressure homogenizer; and 3) Stable and effective fine emulsions were spray dried to produce fish oil microcapsules. Porang flour used was yellow in colour with 7.75% moisture content, 8% ash, 9.72% crude fiber, 0.43% fat and 55% glucomanan. The statistical analysis showed that all variables i.e. porang flour and oil concentrations influenced the emulsifying activity values and viscosity significantly (P≤0.01). The most stable coarse emulsion was the one that emulsified by 40% oil and 1% porang flour with viscosity of 3647 cP and 100% emulsifying activity, and separation of 2.70 ml serum layer after 7 days storage. Stable fine emulsion was produced by the same variables’ combination as coarse emulsion with average droplet size of 614 nm, polydispersity index of 0.237, emulsion zeta potential of -25.83 mV, and separation of only 0.25 mL after 16 days storage. Emulsion that spray dried effectively contained 0.5% porang flour. The peroxide values of fish oil microcapsules were in the range of 16.5 – 32.5 meq/kg oil.     In multi-criteria decision making, accuracy in weighting for the determination of the various alternatives available criteria is always taken into account. The decision makers always face difficult choices in selecting options available. Hence, expert opinions are required as part of the decision making process. This study aimed to formulate a multi-criteria decision-making strategies and to propose priorities within Gayo coffee agroindustry development. A total of ten experts were involved to select various alternatives based on certain criteria that have been set. Weighting data analysis of the expert assessment conducted by Fuzzy-Eckenrode, whereas Fuzzy-Topsis method was used to determine alternative for Gayo coffee agroindustry development. This study found that Fuzzy-Eckenrode method was able to facilitate a good weighting result to determine a certain criterion in  the consideration of Gayo coffee agroindustry development, and the application of the Fuzzy-Topsis approach provided a opportunity  to find the main or the most ideal alternative of a Gayo coffee agroindustry development system. Based on the Fuzzy-Eckenrode approach, the highest weight founded was the assessment quality of various aspects that will be implemented. Meanwhile, form the Fuzzy-Topsis approach, it wasfound that institutional conduciveness as a priority in the Gayo coffee agroindustry development.     Growing population make public consumtion in term of foods becoming more complex, resulting in the opportunities to produce new product. One of them is producing new product from vegetables, which is now widely grown variety of organic vegetables. This is an opportunity to produce a new product are made from organic spinach. The purpose of this research is to identify the characteristics of a new product of organic spinach puree; analyze consumer preference; and formulate marketing strategies on the new product of organic spinach puree. In this research, the analysis performed includes descriptive analysis; conjoint analysis to know consumer preference consisting of packaging and flavors; and Analytical Hierarchy Process (AHP) to formulate marketing strategy for the new product of organic spinach puree. The result showed that as many as 96 respondents of 100 total respondents used as the sample claimed to be interested in the new product. The analysis result of consumer preference using conjoint analysis show that the packaging is the most important attribute for consumer to make purchasing decision. For the best combination of choice attributes is organic spinach puree with melon flavors and packaging in sachet. According to the AHP method which has been done, a strategy to strengthen business colaborations or partnerships is an alternative strategy to be a priority in the marketing of organic spinach puree.     Physicochemical of arenga palm sugar blocks produced by farmer was vary one to another. Therefore,it is necessary to characterize and standarize the quality of those palm sugar blocks. This study aims todetermine the nature of the physicochemical, structural and morphological properties of palm sugar blockproduced by farmers compared to control as a raw material palm sugar granules. The result of analysis showed11.0-14.4% of moisture content, 0.4 -0.7%, of insoluble material, 143.4-319.8% of total acid, 2.1-3.7% of ashcontent, 1.0-4.3% of reducing sugar and 83.7-93.5% of sucrose. Generally, arenga palm sugar blocks producedby farmer (sample A, B, C, D and E) were different with sample F (made by the research) except the reducingsugar content, but all of the characteristics of the palm sugar blocks met the SNI quality standard except ashcontent. The structure of the palm sugar block produced by farmers have a lower crystallinity (57.12-65.24%)compared with sample F (68.68%). In general, morphology of palm sugar blocks were made up of octahedroncrystal particles agregated by a dough-like binder.     This research aimed to identify the characteristic of red palm olein emulsion, the importance of thequality attributes and technical process and to recommend development of red palm olein emulsion’s based onQuality Function Deployment applications. Identification of emulsion characteristic on color was analyzed withMunsell Colour Chart, viscosity with Viscometer Ostwald and emulsion stability based on period of time changeof emulsion characteristic. The results of this research found out that emulsion color is yellow (5Y 810),emulsion stability : ± 5 days and viscosity : 50,4 cP. The level of importance of quality attributes red palm oleinemulsion based on sixquality attributes, the emulsion stability is a priority in assessing the quality of red palmolein emulsion with the value 0.223 followed by color(0.180), taste (0.177), aroma (0.159), viscosity (0.136) andflavor (0.124). The importance level of technical process that are intimately associated with the quality attributesof red palm olein emulsionin the process of homogenitation II (0.454), process of adding complementarymaterials(0.432),and homogenitation I (0.114).     According to energy law, the government Indonesia is required to develop alternative energy. It is also mandated to consider equalization of energy development for each region in taking decision. Simple Addictive Weighting (SAW) method was able to provide the best solution in determining decision and can be applied to determine the renewable energy center. The result was than reinforced by Weighting Product to normalize the so that reaches the absolute value equals 1 that was yielded based on eigen Analytic Hierarchy process method. That alternative Bagan Sinembah was chose with value of 0.8090 which has 25% of five alternatives. Besides that, to find out the possibility of alternative that was not chosen as primary alternative, of decision making in group by using K –Means Clustering method was used. The comparison between the result of main criteria LSP and HPP had the best trend in which contiguity value was 2.45% in SAW. The results concluded that the main criterion of LSP and HPP was not dominant criteria influence the absolute value final decision either by using SAW or WP. The potential energy that can be palm production including waste of shell, fiber frond, and an empty bunch will be 135% of electrical energy of Riau area.     Derived products from coconut shell wood vinegar in Indonesia are still limited, consequently need todevelop new products. Critical step of new product development is product concept selection. Currently, productconcept selection has been done based on intuition by decision makers and it mostly gained the fail products.Therefore, it needs to design a decision support system for selecting product concepts of coconut shell woodvinegar with intelligent system. The objective of this study was to obtained the intelligent decision support systemfor selecting new product concept. In detail, the objectives were to gain new product concepts of coconut shellwood vinegar, design success prediction model and design priority and recommendation determination modelfor selecting new product concepts. Literature study was carried out to find the new product concepts,backpropagation artificial neural networks was applied for prediction model, and pairwise comparation alsoBayes method used to design priority and recommendation determination model. The intelligent decision supportsystem for selecting new products concept model can be used to rank priority of coconut shell wood vinegar newproduct concepts. The increase of fuel prices, labor costs, and presence of traffic congestion in Jabodetabek andBandung area and also to determine the best alternative strategies which viewed from the estimated of thecompany’s required raw materials on each day, empty capacity of the truck, and also costs incurred on eachmonth. The determine the best alternative distribution strategies, raw material necessity forecasting are neededwhich will affect the entire capacity of the truck as well as the minimum spanning tree which used to determinethe most efficient alternative pathway. After simulation of the company’s distribution channel, then there arethree alternative distributions which incorporating with the different combination of pathways. Alternative Idetermined by changed the distribution channels of each company’s truck, alternative II determined by changedthe distribution channels based on the shortest distance of the main warehouse and unify all outlets both insideand outside Jabodetabek and Bandung area into one distribution pathway, and the alternative III determinedbased on the shortest distance from the main warehouse but separating outlets in outside Jabodetabek andBandung area into one group.       *Penulis untuk korespondensi In bio insecticide production, the use of agricultural by products as a substrate to produce the starter has the role important on the efficient production processes, as well as the use of single isolate and production media. The bio insecticide production was carried out by the solid state cultivation, by examining the effect of substrate thick nessoncell growth and bio insecticide toxicity of bio insecticide produced. The bacterial of localisolates used were obtained from carrion worm of Attacus atlas, and identified as Bacillus thuringiens is and had  important potential as bio insecticide. Tofu whey was used for starter media, while mixture of dregs sago and iles-iles as its production media. During the cultivation the media thickness affected on pH, cell growth, spores and substrate consumption. The increased of substrate thickness caused the decrease of  pH, and  simultaneously the decrease of  cell growth, spores and substrate consumption.  The product with highes toxicity capability against dipteralarvae (LC50 of 0,24 mg/mL) and lepidoptera larvae (LC50 of 3,3 mg/mL) was obtained under cultivation process with substrate thicknes of 1 cm.     TRANSESTERIFICATION OF CALOPHYLLUM OIL (Calophyllum inophyllum L) BY CALCIUM OXIDE CATALYST : OPTIMIZATION AND KINETIC MODEL

    Metil ester berhasil diproduksi dengan transesterifikasi minyak nyamplung menggunakan katalisator kalsium oksida. Proses transesterifikasi dilakukan dalam suatu reaktor batch yang dilengkapi dengan pemanas, termokopel, pengaduk, termostat, dan pengambil sampel. Reaksi selanjutnya dilakukan selama 120 menit dan sampel diambil setiap 10 menit. Pengaruh parameter operasi yang berbeda seperti rasio molar metanol minyak, pemuatan katalis, suhu reaksi, dan waktu reaksi dievaluasi. Sebesar 82,53% konversi diperoleh pada kondisi optimum 12: 1 rasio molar metanol minyak, 60˚C suhu reaksi, 5% berat katalis, dan 2 jam waktu reaksi. Model optimasi:  Model kinetika reaksi kimia disusun dan diselesaikan dengan MATLAB. Nilai faktor frekuensi tumbukan adalah 0,0974 dan  0,0003 (dm3/gmol.min).
