International audienceThis study examines the connection between agricultural trade and the use of irrigation in Tunisia. It produces a database that merges information differentiated by products and regions on production, water footprints, and trade. We emphasize the heterogeneity of Tunisian provinces in terms of the crop specialization and the irrigation water footprint associated to their overall agricultural production and exports. Our findings reveal a higher valuation of irrigation water through exports of cultivated crops than their sale on the domestic market. Olives and dates, the flagship products of Tunisia’s agriculture, account for the vast majority of virtual water “hidden” in the exports of agricultural goods (raw and processed), but yield a slim valuation of irrigation water. We find a value of around 2-3 per m3 for the exports of olives and olive oil. Citrusfruits, tomatoes, and cereals, grown mainly in more humid areas and with a significant use of rainwater, yield values up to ten times higher. However, Tunisia is less competitive in these products, most of which are consumed locally, while soil and climate conditions do not permit to extend their cultivation in arid regions.
Positive influence of apple trees on soil chemical and biological activity in an agroecological garden orchard system
International audienceThe specific aim of this study was to assess the impact of 20-year-old apple trees on the soil agronomic quality in an agroforestry system consisting of 2 rows of apple trees with 5 rows of vegetable beds in between. The effects of this system were analyzed specifically on soil microbial activity and fertility. Measurements were carried out for 2 years between 2019 and 2021 in apple tree rows (R) and in vegetable rows 1.5 m (B1), 3 m (B2) and 5 m (C) from the apple tree row. Litter quantities and soil organic matter (SOM) content were measured as well as the decomposition rates of apple tree leaf litter. Soil microbial activity was characterized by measuring (1) in-situ soil respiration and (2) basal (BR) and substrate induced respiration (SIR) under controlled conditions. The results showed that proximity to apple trees was linked to higher SOM content. The litter decomposition rate was up to 1.7-times greater under the tree rows than in vegetable beds. The amplitude of insitu soil CO 2 flux variation and the maximum flux were lower under the tree rows than in vegetable beds, mainly due to lower temperature. In the vegetable beds, the maximum in-situ soil CO 2 flux was attained faster in B1 than in C. Under controlled laboratory conditions, we showed that BR was significantly stronger in R, B1 and B2 than in C (5, 5, 4.7 and 3.5 µgC-CO 2 .h − 1 .g − 1 soil DW, respectively). In addition, the soil in the apple tree rows was more sensitive to the addition of glucose (SIR) than the soil in the vegetable beds. Our results suggest that soil microbial activity was more intensive up to 3 m from the apple trees. Globally, the results highlight the complexity of the interactions among the biotic and abiotic factors that are at the origin of the spatial heterogeneity encountered
Assessing affective states in farm animals remains a major challenge in animal welfare science, requiring practical physiological tools that can be applied at the farm level. Human studies suggest that gene expression profiles and DNA methylation in immune cells can reflect affective states. This thesis aimed to investigate the transcriptome and methylome of immune cells in multiparous pregnant sows exhibiting contrasted affective states, resulting from differences in physical (environmental enrichment) or social (dominance status) conditions. In the first experiment, sows were housed during their productive lives in either a conventional or enriched environment. In the second experiment, sows were housed in conventional environments throughout gestation, with one group periodically accessing an enriched environment. The results showed that environmental enrichment had a modest effect on the transcriptome and methylome of immune cells, regardless of the experimental design. In contrast, dominance status had a significant impact, particularly on functions related to humoral responses (experiment 1). Additionally, parity was a key factor influencing both gene expression (experiments 1 and 2) and DNA methylation profiles (experiment 1), underscoring the importance of this factor even among multiparous sows. The findings of this thesis provide potential genes and/or biological functions that could be associated with pigs' affective states, contributing to a deeper understanding of these critical aspects of animal welfare.L'évaluation des états affectifs chez les animaux d'élevage représente encore un défi majeur pour la science du bien-être animal, nécessitant des outils physiologiques pratiques pouvant être appliqués au niveau de la ferme.
The quality of food products relies on precise control of thermal treatments, especially for cooked cereal products. These treatments influence texture, color, and the development of desired aromas, but can also lead to the formation of toxic compounds if not managed properly. The main objective of this internship was to analyze a system of Ordinary Differential Equations (ODEs) describing the rate of change in concentrations of chemical compounds involved in these reactions. The complexity of this system lies in its non-linearity and the numerous unknown parameters compared to available data.Emphasis was placed on determining, under variable temperature conditions, the values of unknown parameters in the model—reaction rate constants—using the Arrhenius model. This model describes reaction rate constants as functions of temperature.By using tools such as identifiability and gradient descent optimization, and integrating existing work, we were able to define a theoretically solvable differential system and identify reference values for model parameters.Gradient descent optimization successfully minimized the gap between experimental data and simulations, yielding initial results at constant temperature based on literature data. Additionally, improving an existing ODE solver program to account for temperature variations laid the groundwork for future optimizations under variable temperatures and more precise modeling of cooking processes.
Impacts of soil de-sealing practices on urban land-uses, soil functions and ecosystem services in French cities
International audienceSoil sealing has been recognised as one of the main causes of urban soil degradation in Europe. To tackle this issue, de-sealing measures have recently been promoted in cities to increase the sustainability of soil ecosystem services. To our knowledge, very few evaluations of de-sealing projects have as yet been done to assess the current framework of these urban planning practices. Therefore, we conducted an online survey to collect and analyse soil de-sealing projects throughout mainland France. A 60-question survey was run over a 4-monthperiod, and data about 57 projects were collected. The answers covered a diversity of projects, structures and stakeholders and included data such as the location / objectives / costs and benefits of the projects implemented in cities of various sizes. A typology of urban land-uses before and after de-sealing was defined. Among the diverse objectives of de-sealing, rainwater management, reducing urban heat, and greening were most frequent. More than half of the respondents (64%) indicated that ecosystem services were used to drive their de-sealing project. The methods usually required excavation of the sealing cover and road layers being replaced by newly imported fertile materials. Recent de-sealing projects have reused derelict materials from the site (soilmaterial inventory) and/or local urban waste for soil construction, which can help minimise both the economic and environmental costs of urban greening projects. The results of this study provide quite an exhaustive view of current French de-sealing practices and could provide guidelines for improving soil functions by applying soil engineering processes to construct sustainable fertile soils for urban greening
Effect of a minimal processing route for the production of infant formulas on their sensory properties
International audienceInfant formulas (IFs), the sole adequate substitute to human milk, undergo several thermal treatments during production that can damage milk proteins and promote the formation of Maillard reaction products, modifying nutritional and sensory properties. The aim of this study was to determine the impact of a minimally processing route based on membrane filtration associated with different levels of heat treatment, on the odor, taste, texture and color attributes of IFs, then to compare with those of commercial milks. Three experimental IFs (produced with membrane filtration associated with low - T(-), medium - T(+), or high thermal treatments - T(+++)) were evaluated. Triangular tests conducted with a panel of 50 adults highlighted clear disparities between all the IFs. The same panel applied the Check-All-That-Apply method to evaluate the IFs: the range of variability between T(-) and T(+++) was similar to that between the 2 commercial IFs, and the sensory characteristics of the experimental IFs were not far from the commercial brands for flavor and texture attributes. Analysis performed on the citation frequencies for each descriptor differentiated T(-)/T(+) from T(+++), but all the experimental IFs were described with positive sensory characteristics, unlike one commercial IF. Volatile organic compounds (VOCs) content of IFs with low and high thermal treatments were analyzed. Forty VOCs were identified by gas chromatography-mass spectrometry. T(-) contained a higher quantity of VOCs than T(+++), except for benzaldehyde (Maillard reaction product), and aldehydes (oxidation-related products) were the most represented compounds. In conclusion, the processing was associated with sensory differences among IFs, but no marked difference in flavors was found according to CATA and physicochemical analysis. Additionally, no unpleasant sensory descriptors were noted. This shows that the minimally processed route leads to IFs that could fit well within the market from a sensory point of view

(Saisine 2023-SA-0034).
Mapping soil organic carbon content in two contrasted pedoclimatic regions by combining time series of Sentinel-2 and Sentinel-1 with Vis-NIR laboratory spectra
International audienceMapping Soil organic carbon (SOC) is essential for continuous monitoring of its spatial and temporal dynamics. In this study, we developed a method using time series of Sentinel-2 (S2) data combined with Sentinel-1 (S1) and vis-NIR laboratory spectra to map SOC content of agricultural soils of two contrasting sites. Site 1, in temperate Brittany (northwest France), and site 2, in semi-arid central Tunisia, are agricultural areas of 1.5 km² and 40 km², respectively. From each site soil samples were collected, their SOC content measured and their spectra recorded under laboratory conditions. The SOC content ranged from 15.2 to 49.4 g.kg-1 in site 1 and from 4.1 to 11.9 g.kg-1 in site 2. Deep neural network algorithms were implemented after dividing the data set constructed from the time series of S2 and S1 images into calibration (70%) and validation (30%) sets. Three random draws of the validation sets were performed to assess model robustness. Four approaches were tested: (1) models developed using S2 bands as a single input, (2) applying multiple factor analysis (MFA) to select 12 of 40 indices calculated from S2 data and adding them to the S2 bands, (3) adding soil moisture derived from the time series of S1 (SM1), and (4) progressively adding five indices calculated from laboratory spectra in descending order of their correlation with SOC. Model performance was compared based on validation results, and semi-variograms for observed and predicted SOC were then used to analyze the maps generated. Results showed that for site 1, only models using approach 4 were validated (RPIQ = 1.78±0.19 - 3.07±0.6), whereas for site 2, the models showed good performance in validation regardless of the approach used (RPIQ = 1.95±0.03 - 2.12±0.17). The S2 indices used in approach 2 differed between sites due to different spatial distributions in the MFA plane. The addition of SM1 improved model robustness for site 1, as predictive performance was stable over the 3 random draws of validation sets. In approach 4, laboratory indices showed significant correlations with SOC content only for site 1. Thus, we were able to validate our models once we added the two indices with the highest correlation. Semivariograms of the predicted values showed lower sill-to-nugget ratios but similar shapes to the observed values. Finally, the developed method allowed us to map 70% of the area studied in Site 1 and 97% of the area studied in Site 2
