Assessment of consumer preferences in the context of multiple labels: the case of fishery and aquaculture products
International audienceLabels are currently numerous and diverse in the fishery and aquaculture products (FAPs) market, providing consumers with information about the different attributes of FAPs. This extensive development implies that consumers have to face trade-off situations. This paper aims (1) to identify which labels are most valued by consumers when they face a trade-off situation, (2) to study the consumption profiles behind these preferences and (3) to suggest ways of improving the efficiency of labelling policies. Based on a survey conducted in 2021 (n = 1 427), this article describes FAPs consumers’ preferences for labelled FAPs. To do so, each consumer was asked to rank their favourite scheme from a pool of nine hypothetical labels related to specific FAPs characteristics. Then, we used a mixed multinomial logit model (MMLM) with marginal effects to analyse consumption profiles. Our results show heterogeneity among consumers regarding labelled FAPs. Overall, labels that ensure intrinsic qualities remain preferred to labels linked to ethical considerations. Moreover, while preferences for domestic productions are prominent, there is a very wide gap with real purchasing behaviour. Furthermore, this study shows that personal motivation, age, gender, knowledge or place of residence influence the preferences expressed. Labels are a policy tool used to reform the FAPs value chain. Nevertheless, they are struggling to achieve their objectives. Our results can be useful for better targeting the messages to be implemented, improving the efficiency of labelling policies and helping consumers to make informed and sustainable choice
Can Environmental or Local Information Help Manage an Invasive Species Through Consumption?
International audienceThe consumption of invasive species could be an opportunity to regulate these species to limit the negative environmental impacts. However, the commercialisation of an exogenous species raises several questions. We assess the acceptance of wels catfish, an invasive species in an alpine lake, and the willingness to pay (WTP) for environmentally friendly and locally produced wels catfish products. The results show that knowledge is an important dimension to explain consumption. Informing consumers about an environmental or local dimension increases WTP for wels catfish, but it does not increase product acceptance. There is no additional premium when both types of information are used together
Caractérisation d' un mécanisme de défense chez Propionibacterium freudenreichii pour résister à l'infection de phages filamenteux
International audienceLes bactériophages (ou phages) sont des virus qui infectent les bactéries. Parmi les phages décrits, les phages filamenteux se caractérisent par une forme allongée, et sont constitués d’ADN simple brin. Le phage M13 infectant Escherichia coli en est le modèle. Depuis plusieurs années, notre laboratoire étudie les phages filamenteux infectant les bactéries propioniques laitières (BPL). Ces bactéries sont utilisées dans l’affinage des fromages à pâte pressée cuite, comme l’emmental. Les phages filamenteux des BPL ont la particularité d’être les seuls phages filamenteux connus et cultivables capables d’infecter des bactéries Gram positif. Dans ce travail, nous nous sommes intéressés au phage filamenteux B5 [1], capable d’infecter Propionibacterium freudenreichii, en particulier la souche sensible CIRM-BIA15 (CIRM-BIA, INRAE, Institut Agro, Rennes, France). Nous avons étudié le mécanisme de résistance mis en place par un variant M isogénique de la souche CIRM-BIA 15 présentant une résistance au phage B5. Dans un premier temps des tests d’adsorption entre le phage B5 et la souche sauvage sensible ou son variant M ont été réalisés. Puis des tests de transformation par électroporation de la forme replicative double brin du phage B5 ont été réalisés dans la souche sensible et le variant M. Finalement, après séquençage, les génomes des deux souches ont été comparés pour mettre en évidence une ou des mutations éventuellement responsables de cette résistance. Les résultats ont montré que le phage B5 parvient toujours à s’adsorber à la surface du variant M. De plus, la transformation de la forme réplicative de ce phage dans le variant M restaure sa capacité à former des plages de lyse. Ces résultats indiquent que la résistance se situe vraisemblablement au niveau de la paroi du variant M et plus précisément au niveau de l’étape d’injection de l’ADN. L’analyse des séquences du génome de la souche sensible et du variant M a montré une mutation d’un nucléotide au niveau d’un gène codant pour une hypothétique protéine transmembranaire pouvant lier l’ADN. L’insertion de ce gène muté sur un plasmide réplicatif dans la souche sauvage sensible a permis de démontrer son implication dans la résistance de P. freudenreichii au phage B5.Ce mécanisme de défense répondant à une infection phagique d’un phage filamenteux, peu connu chez les bactéries et caractérisé chez la bactérie Gram positif P. freudenrenchii, fera l’objet de cette communication
Consideration of the Disease Complexes, the Missing Link to Correctly Analyze the Impact of Intercropping on Disease Development
International audienceDiversification at the plot level, through the use of intercropping (mixtures of crops), is an alternative to the conventional system of intensive agriculture, based on monospecific, usually single-variety canopies. Intercropping has been shown to provide benefits in terms of disease control. However, competition phenomena and the heterogeneity of the associated crops raise new ecological questions, particularly with regard to the dynamics and evolution of parasite populations. No study has assessed the potential impact of these associations on the dynamics of pathogenic species complexes. Changes in the nutritional status of plants and therefore in their physiological susceptibility to infection within intercropping systems could contribute to an increased diversity of ecological niches and thus affect the composition of the parasitic complex and its spatiotemporal dynamics. In this review, focusing on foliar diseases of fungal origin, and after outlining some elements of the biology and epidemiology of these fungal diseases, we will (i) describe the mechanisms that contribute to the composition of disease clusters and that drive interactions, but we will also review the strategies that these foliar diseases have adopted to deal with these co-infections; (ii) define how intercropping can lead to changes in epidemic dynamics, in particular by presenting the mechanisms that have a direct and indirect effect on disease evolution; and (iii) present the approach that should be adopted to properly study intercropping correctly in a multi-infection situation
Protein ingredient quality of infant formulas impacts gut physiology and microbiota in mini-piglets used as a human infant model.
International audienceInfant formulas (IFs), the only adequate substitute to human milk, are complex matrices that require numerous ingredients and processing steps. Previously, we showed that the quality of the dairy protein ingredients within IFs modulated protein microstructure and in vitro and in vivo digestive kinetics. Therefore, the aim was to assess the impact of protein ingredient quality (composition and structure) on gut physiology and microbiota.Three isonitrogenous IFs were formulated with whey proteins from different origins (cheese whey: IF-A, vs. ideal whey: IFs-B/C) and casein with different organizations (micellar: IFs-A/B, vs. non-micellar: IF-C). Twenty-four Yucatan mini-piglets (2- to 21-day-old), used as an infant model, received one of the three IFs. Digestive contents, faeces, and tissues were analysed using metagenomic, histological, ex vivo permeability and gene expression approaches and a metabolomic analysis was done on serum. Univariate and multivariate statistical analyses were performed.The increase of colonic paracellular permeability associated with a slight immune boost, and the changes in colonic amino acid transporter expression in IF-C compared with IF-A fed piglets, suggested a combined effect of whey origin and casein supramolecular organization on intestinal physiology in favour of IF-C, whose parameters were closer to those recently reported for human milk-fed piglets (Charton et al., 2022). Gut microbiota composition was moderately changed between diets, whereas faecal short-chain fatty acid composition differed according to whey protein origin. Differences in microbiota fermentative activity may result from differences in digestive kinetics previously observed in vitro between cheese whey-based IF (A) and ideal whey-based IFs (B and C), which could modulate the colonic substrate available for the microbiota. Serum metabolomic data are currently being analysed and may provide a better understanding of the mechanisms involved.The use of ideal whey and the modulation of casein organization appear to be possible avenues for improving IFs
How membrane fatty acids influence sardine size across diverse marine environments
International audienceDifferences in diet quality and quantity may influence trophodynamic processes in small pelagic fish. Yet, we currently lack direct and comprehensive information on how large-scale areas differ in dietary resources and the degree to which these differences influence fish physiological performances (i.e., growth), ultimately influencing entire fish stocks. Fatty acid composition is one of the bioindicator that can provide insights on how dietary provisions of essential lipids influence the structure of the membrane fatty acids and subsequently fish growth among contrasted habitats. To address this issue, we conducted a large-scale sampling of European sardine (Sardina pilchardus) a species with major socioeconomic importance that plays a key role as an energy pathway linking lower and upper trophic levels in pelagic ecosystems. We sampled individuals from the Gulf of Lions (Mediterranean Sea), the Bay of Biscay, and the English Channel (Atlantic Ocean) of age-0 to-3 + and found clear spatial differences in the quantity and quality of dietary lipids. Sardines from the Gulf of Lions fed on trophic food web based on dinoflagellates, with greater proportions of DHA (22:6n-3; docosahexaenoic acid) in reserve lipids. Sardines' reserve lipids had important proportions of zooplankton biomarkers in the English Channel (e.g., 20:1n-9 and 20:1n-11), and diatoms biomarkers such as 16C fatty acids and EPA (20:5n-3; eicosapentaenoic acid) in the Bay of Biscay. The relationship between sardines' membrane fatty acid composition and individuals' length changed progressively with individuals' age, a result consistent across areas, indicating ontogenetic abilities between largest and smallest individuals. Before maturity, largest sardines had higher DHA proportions, followed after maturity by higher proportions of ARA (20:4n-6; arachidonic acid), EPA and DPA (22:5n-3; docosapentaenoic acid). Finally, the study highlights the importance of considering the quality and diversity of dietary resources to better understand how individuals cope with their physiological needs. It is thus important to consider combined aspects (e.g., diet quality and diversity, influence of particular nutrients on length) to better understand the underlying mechanistic processes influencing fish physiology, likely cascading to different expression of their life history traits and affecting fisheries stocks
Beef protein ingredients from fat rendering process are promising functional ingredients
International audienceThe valorization of co-products may be a promising way to meet the dual challenge of increasing global food resources and sustainability of food systems. In particular, meat co-products may be nutritionally interesting protein resources, if they offer functional properties in accordance with food applications. In that aim, two bovine co-products, resulting from the fat rendering process, have been characterized, regarding the protein solubility, gelling, and emulsifying properties. The effect of protein concentration, pH variation and NaCl addition on these properties was tested. Despite an effect of the ionic strength on the protein solubility of the two ingredients, a little or no significant impact was observed on the functionalities. Similarly, the functional properties were scarcely affected by pH. In the end, the protein concentration has proven to be the only important parameter, which points to an easy utilization of these ingredients in many food conditions
Régulations nutritionnelles de la persistance de la lactation chez les ruminants laitiers
International audienceIl est maintenant connu depuis de nombreuses années que la courbe de lactation chez les ruminants laitiers est déterminée par le nombre de cellules dans le tissu mammaire tout au long de la lactation. Cependant, les facteurs nutritionnels qui régulent la persistance de la lactation n'ont pas été entièrement élucidés. Nous avons donc conçu une série d'expériences pour étudier les effets de traitements nutritionnels sur le renouvellement des cellules du tissu mammaire.Des vaches laitières ont ainsi été soumises à une restriction alimentaire sévère (n = 11 par lot) ou modérée (n = 9 par lot) et comparées à des lots témoins. La restriction sévère (foin et ensilage d’herbe vs maïs, luzerne et 30% de concentré) de 2 semaines avant le vêlage jusqu'à la semaine 11 après le vêlage alors que la restriction alimentaire modérée correspondait à une réduction 20 % de la quantité ingérée pendant 4 semaines en milieu de lactation. Un autre essai a été mené sur 32 vaches laitières avec des rations apportant 2 teneurs en amidon (155 vs. 283 g/ kg MS) croisés avec deux teneurs pour les 3 acides aminés (AA) les plus limitants (lysine : 6,4 vs. 7,2 % de PDI ; méthionine : 1,8 vs. 2,1 % de PDI, et histidine : 2,0 vs. 2,3 % de PDI ; Inra, 2018) selon un plan factoriel entre la 8ème et la 26ème semaines post-partum. La teneur en amidon a été modulé en modifiant la part de maïs dans la ration et les teneurs en AA par des AA protégés de la dégradation du rumen. De même, un essai a été mené sur 24 chèvres en milieu de lactation avec 2 niveaux d’apport d’énergie nette (de 1,48 vs. 1,65 Mcal/ kg MS) modulés avec différents apports de concentrés énergétiques et deux teneurs en méthionine (1,9 vs. 2,6 % de la PDI° avec de la méthionine protégée) pendant 4 semaines selon un plan factoriel. Le renouvellement des cellules du tissu mammaire a été évalué par des analyses immunohistochimiques dans toutes ces expériences et l'exfoliation des cellules épithéliales mammaires dans le lait a été examinée dans une étude.Chez les vaches laitières, les baisses de production laitière dues à une restriction alimentaire (- 38 % et - 8 % respectivement pour une restriction alimentaire sévère et modérée) et les modifications de persistance ont été associées soit à un niveau plus élevé de mort cellulaire, soit à une augmentation de l'exfoliation des cellules épithéliales mammaires, sans effet sur la prolifération cellulaire. L'augmentation de la production laitière (+ 11 %) et de la persistance induites par la supplémentation en amidon chez les vaches laitières s'est accompagnée d'une augmentation de la prolifération cellulaire. La supplémentation en acides aminés n'a pas affecté la production laitière des deux espèces mais chez la vache, la persistance de la lactation a été significativement plus faible à bas amidon en l’absence d’apport d’acides aminés protégés (interaction amidon x AA). La supplémentation en acides aminés a augmenté la prolifération cellulaire chez les deux espèces et a réduit la mort cellulaire chez les chèvres laitières.Ces résultats étayent l'hypothèse selon laquelle la régulation de la persistance de la lactation chez les vaches et les chèvres laitières, soumises à des traitements nutritionnels, entraîne des changements du nombre de cellules mammaires, médiés par des ajustements de l'équilibre apoptose/prolifération, et le taux d'exfoliation des cellules mammaires dans le lait
