    Instrumental textural data for retting ability of Fufu in Nigeria

    Fufu, a fermented wet paste food product from cassava is a good source of dietary energy and is one of the widely consumed foods in Nigeria and other West African countries. In fufu processing, retting involves the steeping of cassava roots in water for a period of 72 hours. Due to the genetic make-up of different cultivars of cassava, there is variation in the retting abilities of these cassava roots. Therefore, it is of importance to standardize the procedure involved in determining the different retting behaviors of these different cassava cultivars using a hand held penetrometer.     The radial repartition of water/acetone extractives within the selected Atlas cedar tree (bark, sapwood, transition wood, outer heartwood and inner heartwood), at different tree height levels, were screened. HPLC analyses were performed, especially to characterized flavonoid compounds of these extractives fractions. The radial variation of the extractive composition obtained, highlighted the phenomenon of heartwood formation. Hypotheses on the metabolic pathways involved in the heartwood formation process of cedar wood were suggested, especially based on the occurrence and the radial evolution of (-)-catechin, (+)-taxifolin and flavan compounds. Then, the fungicidal and anti-termitic activities of the extracts were tested. The water/acetone extractives from the studied Cedrus atlantica showed a strong repellent activity against termites and a moderate antifungal activity against crops and fruits pathogens. Even if the sampling in this study was limited to a single tree, the results seem to bring out a potential valorisation of the extractives of the Atlas cedar, as wood preservatives and/or as biocontrol products against pathogens of ligneous agricultural crops

    This database contains 109 NIR average spectra of HSI images of fresh cassava root acquired in CIAT (Colombia), by using hyper spectral camera Specim FX17. Cassava roots were harvested from 07/03/2022 to 11/03/2022 in CIAT (Colombia) and analysed immediately after harverst. Twelve roots were used and each root is divided into six semicylinders .
