    DRY-AGED BEEF: COLOR PARAMETERS AND SENSORY CHARACTERISTICS

    Research work involves the instrumental analysis of the change in color (L*, a*, b*) and the sensory characteristics of the Simmental beef, parts of the carcass: T-bons, received from the local farm, during the dry-aging period for 0, 14, 21, 28, 35 days and for the roasted aged beef at high and very high temperatures. The analyzed beef samples presented uniform results for the chromatic parameters during the dry-aging period, being influenced by the values of meat pH and the water-holding capacity, namely: for the dry-aged meat, the L* parameter values indicate an increase in the brightness of the meat, for the a* parameter, decreasing values were established, which indicates a reduction in the oxygenation of the meat, a reduction of oxymyoglobin in meat, responsible for the intense red color and for the b* coordinate a slight decrease in values was observed, oriented to yellow color. For roasted beef parameter L* decreases due to the reduction of the beef moisture during the roasting process. The redness of beef a* decreases in intensity primarily depending on the beef aging period but also with the increase in the roasting temperature, due to the drastic degradation of myoglobin. The b* parameter also decreases, possibly due to the increase in metmyoglobin content during heat treatment. The sensory characteristics of the dry aged beef have been considerably improved due to the increase in the pH of the meat, which attracts the activation of meat-specific enzymes that contribute to the accumulation of secondary compounds with a major impact on the beef taste, aroma and juiciness. These aspects are later reflected on the sensory properties of the roasted aged beef, being intensified by the heat treatment process

    EFFECTS OF CONTENT MARKETING ON CUSTOMER SATISFACTION AND BRAND LOYALTY

    It is considered that the content marketing strategies implemented by the companies affect the satisfaction of the consumers and their loyalty towards the brand positively or negatively. The aim of this study is to investigate whether the content marketing strategies of the companies have an effect on customer satisfaction and brand loyalty. Within the scope of the research, content marketing was examined from four sub-dimensions, while customer satisfaction and brand loyalty were examined as one-dimensional. As a result of the factor analysis, content marketing was represented in a two-dimensional structure, while customer satisfaction and brand loyalty were represented in a one-dimensional structure. As a result of the regression analysis, it was determined that the interaction and information dimensions, which are the sub-dimensions of content marketing, positively influence customer satisfaction and brand loyalty

    FORM OF CONSTITUTIONAL RIGHTS OF WIFE AND CHILDREN AS VICTIMS OF SIRRI POLYGAMY

    The phenomenon of sirri polygamous marriages, or without the permission of a legal wife and without the permission of the Religious Courts, common in Banjar Regency, South Kalimantan Province, still raises arguments for and against. Originally the meaning of sirri marriage was intended for the case where the conditions of marriage were not met, but now it has been extended to marriages that meet the conditions but have not been registered with the religious affairs office (KUA) of the sub-sector for those who are Muslim. The purpose of the study was to elucidate the constitutional rights of wives and children who were neglected as victims of polygamous marriages in Banjar Regency. This research is a type of empirical legal research with statutory, case and conceptual approaches. The results of the analysis show that sirri polygamy has an impact in the form of constitutional losses for spouses and children. If a polygamous marriage has received permission from the first wife, then the sirri wife can be well received and does not receive social sanctions in society, as well as the children of sirri polygamy are well received and equal in society. Sociologically, a child of a qualifying sirri polygamous marriage is legitimate, so the legal relationship between the child and both parents is one of kinship and inheritance. The constitutional issue for children of sirri polygamous marriages takes the form of legal issues related to identity rights. This is inseparable from the usual factors in an area, where for the Banjar community children born in wedlock, whether Sirri or registered, are considered legitimate children

    ASSESSMENT OF THE TAX BURDEN IMPACT ON THE ENTITY'S FINANCIAL RESULTS: MICRO AND MACROECONOMIC ASPECTS

    Taxes are costs for entities that significantly affect the financial results of the economic-financial activity. The level of fiscal burden imposed on taxpayers depends both on the external fiscal environment in which the entity operates and on the characteristics of its financial and economic activities, including its cost structure, sales revenue, income and other indicators. Therefore, to ensure efficient activity, it is necessary to carry out a comprehensive analysis of the impact of fiscal burden on the entity's financial results. The purpose of this research is to assess the level of fiscal burden and determine the degree of influence on some indicators that characterize the economic-financial activity of the entity. The study is based on the methods of assessing the fiscal burden applied in international practice at both the micro and macroeconomic levels. The study reveals that in order to determine the fiscal burden, especially at the microeconomic level, there is a need to combine several indicators, in accordance with the conceptual approach to the analysis of the tax system. Therefore, increasing the entity's financial results does not only involve reducing taxes, but creating an efficient system for managing and optimizing the entire taxable system

    Based on the new generation sequencing method – pyrosequencing (Illumina), for the first time in Moldova, there were determined and described the metagenomic characteristics of the typical chernozem microbiome under different land use conditions. It was revealed that the prokaryotic community is represented by both domains, in particular, seventeen bacterial phyla (59.8%) and two phylum Archaea (6.2%), only nine phyla had an abundance above 1.0%: the archaeal phylum Thaumarchaeota and the bacterial phyla Proteobacteria, Actinobacteriota, Bacteroidota, Acidobacteriota, Firmicutes, Verrucomicrobiota, Planctomycetota, and Myxococcota. Phyla with a share of less than 1.0% preferred the conditions of experimental variants of crop rotations. A significant proportion were unclassified microorganisms, the abundance of which varied from 25.8 to 38.2% in spring and from 27.9 to 40.2% insummer. The conducted studies showed that the agrotechnical measures had a significant impact on the structure of the microbiome community of a typical chernozem

    BREAD ROPE SPOILAGE DEVELOPMENT

    Rope spoilage of bread is produced by bacteria belonging to Bacillus genus. Insufficient cleaning of the wheat before the milling operation contributes to obtaining flour with a high degree of contamination with these bacteria which produce thermoresistant endospores and further maintain their viability in the baking process. After baking, thermoresistant endospores can pass into the vegetative form and can multiply, causing spoilage of bread, which is manifested by the occurrence of an unpleasant odour, and the core of the bread becomes sticky. In this study, samples of bread from second-grade wheat flour were obtained. The kinetics of bacterial growth in the core of the thermostated bread at 37 °C for 84 hours was determined. It was found that immediately after baking the degree of contamination of the bread core was 1.28·104 cfu/g, and after 40 hours of thermostating the degree of contamination of the bread core increased by 2.85 logarithmic cycles, at this bread sample were observed the first signs of the rope spoilage (unpleasant odour). Thus, bread obtained from highly contaminated flour can contain a very large number of bacteria belonging to Bacillus genus, having no signs of rope spoilage, and thus the consumption of this bread may be dangerous to the consumer’s health

    Asimilarea azotului și productivitatea culturilor în diverse procedee de fertilizare cu paie

    In order to identify efficient and rational procedures for the valorization of straw surpluses as fertilizer, the authors studied their influence on plant production and nitrogen supply to plants. The experiment was established on clayey-loamy poorly eroded ordinary chernozem, in Cahul district, Republic of Moldova. The experimental design included variants consisting in the application of straw that was not supplemented with nitrogen and variants in which straw was supplemented with low doses of nitrogen. The combination of straw with sheep manure as well as with high doses of chemical fertilizers containing nitrogen and phosphorus was also tested. Straw and associated fertilizers were applied once every four years, in 2009, 2013 and 2017, in July. The most efficient variant consisted in the procedure by which 4 t/ha of chopped straw was spread on the stubble over which chemical fertilizers N20 P20 were distributed. This procedure ensured an average annual increase of 480 kg/ha of conventional wheat. The phenomenon of crop yield decrease because of the incorporation of straw applied separately without nitrogen did not occur in this experiment. This is due to the ability of chernozem soils to form, through humus mineralization, enough nitrogen needed for the microbiological processing of straw applied in the summer. Thus, the soil type and climatic conditions in the South of the Republic of Moldova allow to incorporate straw surpluses as a fertilizer, including without being supplemented with nitrogen-containing fertilizers

    The researches were carried out in the period 2014-2017 in the intensive apple orchard of the enterprise „Codru ST” Ltd. founded in 2006. The efficiency of chemical fruit thinning was studied in Gala Must variety grafted on M9 rootstock. The following active substances were applied: 1. naphthalene-acetamide NAD (Geramid-New), 2. naphthylacetic acid ANA (Dirager) and 3. benzyladenine BA (Gerba 4LG), using different doses and thinning periods. During the research the following indicators were studied: the number and average weight of fruits, the yield per tree and per unit area, and the average fruit diameter. On average, over the years 2014-2017, the highest number of fruits in the crown of apple trees was obtained using the growth regulators Dirager (131.2 pcs/tree) and Geramid-New (128 pcs/tree), while the variants treated with Gerba 4LG recorded the highest yield per tree 18.01 kg/tree and the highest average fruit diameter 74.1 mm. The average fruit weight as a quality indicator varied greatly over the studied years. This indicator largely correlated with the number of fruits in the tree crown and weather conditions in the year of reference. It was established that the treatments with Geramid-New in a dose of 1.2 l/ha when 80% of the petals have fallen + 2-3 days, with Dirager in a dose of 0.3 l/ha when the diameter of the central fruit is 8-9 mm and with Gerba 4LG in a dose of 2.5 l/ha when the fruit diameter is 10-15 mm have a significant effect on the studied indicators

    The paper provides a general presentation of the staphylinid species Philonthus jurgans Tottenham, 1937, reported for the first time in a grapevine plantation in Cocieri village, Dubasari district. The status of a new and adventive species in the fauna of the Republic of Moldova justifies the scientific interest in specifying the most representative aspects of description and confirmation. Based on the samples collected, observations and identifications undertaken and the study of the specialized literature, this paper presents the origin and geographical distribution, the status of species, the range of populated habitats and detailed information about the imago (male, female)
