Trends in Nutrition and Andean Food for People with Celiac Disease: A review study
Celiac disease is characterized by nutritional imbalances due to intestinal inflammation caused by gluten, which hinders the absorption of essential nutrients. Iron deficiency anemia is common, as well as the lack of vitamins and minerals, some of which are reversed with a gluten-free diet. Andean foods constitute an option in the diet of celiac patients due to their high nutritional quality in proteins, carbohydrates, vitamins, minerals, and fiber, which are generally deficient nutrients. Studies suggest that products such as quinoa, corn, and rice can be viable substitutes in baking, extruded products, and beverages, offering nutritious and acceptable options. However, despite the positive trend towards including these foods in the diet of people with CD, challenges are identified, such as nutritional education to promote their consumption. In conclusion, it is suggested that Andean nutrition and food offer valuable options for people with CD, but effective strategies are needed to integrate them into patients\u27 diet
How to Corporate Financialization Impact on Financial Performance, The Moderating/Mediating Role of ESG (Environmental, Social, and Governance) Practices
Measuring corporate financialization concerning environmental, social, and governance standards has not been thoroughly researched, considering the growing attention on this subject among businesses that are not financial. More research is required to truly comprehend the impact of ESG practices on the correlation between financialization and economic performance. Previous research efforts have not correctly accounted for significant variances in this field. This study attempts to address this limitation by investigating the effect of corporate financialization on the financial performance of both State-Owned Enterprises and Non-State-Owned Enterprises in China. The work employed dataset collected about performance indicators of different enterprises from different sources and had identified that the corporate financialization had enhanced financial performance in NSOEs (coefficient=0.3501, p<0.0001) compared to SOEs (coefficient=0.2801, p<0.0001). Further, the study also shows that the environmental component of ESG has a positive and significant impact on financial performance in both SOEs (coefficient=0.1197, p=0.0028) and NSOEs (coefficient=0.1492, p<0.0001

Board structure and corporate risk-taking: Empirical evidence from Vietnamese enterprises
The research investigates the relationship between board structure and corporate risk-taking among publicly listed companies in Vietnam. We examine the impact of factors such as board size, independence, and duality on corporate risk-taking behavior. Our sample is based on an unbalanced panel dataset of listed firms on the Vietnamese stock exchange, excluding commercial banks, covering the period from 2012 to 2023. Using the generalized method of moments estimator to address potential endogeneity issues, the results suggest that larger board size, a higher proportion of independent directors, and a reduction in the number of executive directors are associated with lower levels of corporate risk-taking. In contrast, an increased presence of executive directors is positively correlated with higher corporate risk-taking. These findings contribute to the understanding of corporate governance and may inform regulatory and policy decisions
