In this review and disclosure article, we first present theoretical considerations and legal premises for the development of ecological tourism in indigenous communities in the Ecuadorian Amazon of Pastaza, the result of a thorough bibliographical and documentary research on the subject. Ecotourism is a trend different from traditional tourism and contrasts with the "maximum profitability" approach. Ecotourism, nature and culture are uniquely interrelated in the Amazon, unique and important for its anthropological aspects and biodiversity. This community activity with features of cooperativism privileges the sustainability, appreciation-preservation and improvement of the natural and cultural environment that welcomes travelers. It represents a viable alternative of sustainable development that satisfies the needs of tourists and residents of the destination without compromising future generations that inhabit it-visit. However, native communities lack the appropriate tools and scientific-technical strategies, as well as the business skills and competences to achieve local tourism ventures effectively that comply with the Ecuadorian Government's Strategic Tourism Plan for tourism sustainability.

In order to determine the voluntary consumption, digestibility and nutritional balance of Cuban Creole cows during the rainy season, without supplementation in a rational grazing system; lactation cows from 10 second, with 410 ± 10 kg of live weight, were used. The system had 52 scrubs of 0.2178 ha each one, covered with Brachiaria humidicola cv. CIAT 679 as predominant pasture, with 92.81% of purity. Two animals groups were used, one pointer. Leading cows were submitted to a grazing intensity of 83 UGM.ha-1.dia-1 and the followers to 160 UGM.ha-1.dia-1, both groups with one stay day in each quarter. Voluntary grazing was determined using the double marker technique, which uses chromic oxide (Cr2O3) as external marker and insoluble acid ash from the pasture as internal marker. The data were analyzed by a simple classification model with 5 repetitions that controlled the animals’ group effect, with the statistical package SPSS, version 22.0. Leading cows dry grass consumption was close to 3% of the live weight and 2.5% in the continuous ones. Dry matter intake and digestibility indices in both groups were related to the chemical composition of the pasture offered. It is concluded that the Criollas cows voluntary consumption was related to the pasture digestibility and the position of the group during grazing. The group consumption continues making corrections to the management system.

Through a relative frequency distribution, a group of agricultural production units (APUs) located in the provinces of Pastaza and Napo, Ecuadorian Amazon were socio environmentally characterized. Thirty APUs were selected and a participatory methodology was used that incorporates a set of indicators (25) within the environmental and socio-cultural dimension. From the environmental point of view, the production units are described by having an average size between 21-50 hectares, with 60% of the units studied applying agroecological practices combined with different activities and crops, which reflects the productive potential of the area and how it could serve as a model for the rest of the farms. Soil quality is marked by fine textured clay, with granular structure in the surface horizon, high in organic matter, high acidity, and low fertility, affecting the nutrient availability and limiting its use. Sociocultural characteristics are varied at the farm level, however the evaluation suggests that there are key elements that can affect the continuity and sustainability of the production process, such as: the number of people working in the system, the replacement generation, the aging population, the low management capacity in terms of not keeping records, low institutional support and low participation in governance spaces.

Bromatological chemistry (Weende), the components of the cell wall (Van Soest), and the nutritional value is determined through in vivo digestibility to estimate the value of MS and NDT, evaluate and meat production profitability by using two agricultural products (corn stover and rice), fortified with three levels of molasses and urea (1; 2 and 3%) in tropical mestizos feeding sheep. The digestibility coefficients for DM, OM, CP, CF, EE, and ELN corn stover are in the order of 40.49; 48.56; 22.14; 64.55; 67.03, and 36.94%, respectively, while for MS and NDT values 1377.80 kcal kg-1 DM and 40.39% are recorded, surpassing the rice (P <0.01). There is a high degree of positive association between FC and content CDMO (r= 0.984). The greatest CA (P<0.01), recorded the treatment based on rice stubble (1,343 kg DM animal-1  day-1). While corn stover had the highest GPD, more efficient ICA, and RC (0.132 kg animal-1 d-1, 7.50 and 45.09%). Urea levels did not affect (P>0.05) the CA, the GPD, the ICA, and the RC. Treatments based on rice stubble and corn combined with molasses and urea exceed (P<0.01) the control (free grazing). The higher return is obtained by providing the combined corn stover 2 and 3% of urea (50.15 and 34.91%, respectively).

Microbial protein was characterized in the Biotechnology laboratory of the Polytechnic School of Chimborazo (Escuela Superior Politécnica de Chimborazo). This was obtained from a mixture of whey, passion fruit peel (Passiflora edulis), and ripe banana (Musa paradisiaca), using solid state fermentation (SSF). Treatments were allocated under a completely randomized design, with a 4x4 factorial arrangement and three repetitions. Factors were: whey (0, 5, 10 and 15 %) and fermentation time (FT) (0, 12, 24, and 36 h). Food indicators, pH, ammonia-nitrogen (NH3), volatile fatty acids (VFA), and yeast count were assessed. The pH increased as whey was added, between 4.9 and 5.6, however, regarding fermentation time, the value differs significantly across treatments (P≤  0.001). The  number  of  yeast  cells  increased  significantly  (P<  0.001)  in treatments with 10 and 15 % whey with respect to the control. There was a significant relation (P<0.001) between VFA production and FT. The treatment with the highest VFA production was the one with 15% whey at 24 h with 13.33 meq/L. Crude fiber (CF) decreased (P ≤0.0001) with the increasing levels of whey. True protein (TP) increased (P ≤ 0.0001) as whey and FT levels increased in each treatment. Adding up to 15% of whey on the passion fruit peel and ripe banana enabled the obtaining of better food and fermentation indicators during microbial protein production.
