    STUDY THE EFFECT OF SUN AND MICROWAVE DRYING ON QUALITY OF CAMEL MEAT (Camelus dromedarius) SLICES

    Drying is still considered to be an efficient and important process used for food preservation. Several drying methods are commonly used, so it would be interesting to compare them. The comparison could focus on the quality of the dried products, which is mainly dependent on changes occurring during processing. In the current contribution, an experimental study of drying camel meat (Camelus dromedarius) by two methods, namely direct sun drying and microwave drying, is performed. The investigation is carried out to determine the adequate better drying technique for camel meat from the region of Ouargla, southeast Algeria. Under pre-treatment in a saline solution during 30 minutes of soaking, the samples used are slices 8 mm thick, 100 mm long and 20 mm wide. They are characterized by the initial water content of 73.38 ± 0.13%, the protein content of 19.77 ± 0.05%, an ash content of 1.123 ± 0.009 and a lipid content of 3.72 ± 0.05%. The sun drying experiments are carried out at an average temperature of 21.55°C and average relative humidity of 28.57%. The microwave drying is carried out at a power of 180 and 270 W. At the end of drying, kinetics, rate drying, duration drying, organoleptic properties (color and size) and nutritional values (protein and lipid) are determined in each case. Although drying in the microwave is faster and shorter, the results show that the samples sun dried are better. Indeed, sun drying shows a shrinkage rate of 43.63 ± 0.37% against 56.75 ± 0.36% at 180 W and 57.65 ± 0.32% at 270 W for microwave drying, with total color differences of 20.59 ± 0.48 against 24.63 ± 0.73 at 180 W and 23.10 ± 0.70 at 270 W for microwave drying. Protein content increases significantly after sun drying (49.44 ± 0.21) and microwave drying (45.30 ± 0.02% at 180 W and 40.64 ± 0.01 at 270 W). The results also show lipid preservation of 84.13% during sun drying and an increase in ash content in both drying processes from 1.123 ± 0.009 to: (i) 4.235 ± 0.015 at 180 W and 4.266 ± 0.037 at 280 W, in microwave drying; (ii) 3.903 ± 0.07 during sun dryin

    This study was aimed to identifying the economic dimension of the breeding and production of camel meat in Algeria. In achieving its objectives, the study relied on standard economic analysis and, in particular, the partial adjustment model was used to estimate camel meat production and consumption in 2021. The study showed an increase in the number of camels from 381.882 in 2017 to 438.752 in 2020, where women account for 39% of the total number of herds Camel meat production in Algeria increased by 2 per cent from 2017, but it remains a very limited amount in view of the high production of other domesticated animals, especially sheep and cows.     La thématique de notre recherche est décrire les caractéristiques structurales, la régénération naturelle et la structure démographique de chêne zeen de la forêt d’Ouled Bechih (Souk Ahras). Les données ont été collectées par échantillonnage aléatoire sur 6 parcelles carrées de 0,09 ha. Les paramètres dendrométriques mesurés sont le diamètre à 1,3 m au-dessus du sol et la hauteur totale des arbres et les semis dont le diamètre est ≤ 10 cm. Les structures en diamètre et hauteur ont été ajustées à la distribution théorique de Weibull à l’aide des logiciels Minitab14 et XLStat 2022. Les principaux résultats obtenus indiquent que la hauteur moyenne, le diamètre moyen et la surface terrière sont significativement différents dans les 6 parcelles. La densité moyenne des arbres de chêne zeen au niveau du massif forestier d’Ouled Bechih est 157 arbres/ha avec une surface terrière de 22,65±5,53 m2/ha, la régénération naturelle est moyenne, elle est de 234,27%. L’analyse des structures en diamètre et en hauteur montre une prédominance d’individus âgés à gros diamètres avec des hauteurs élevées. Ces résultats constituent une base de données, ils contribuent à l’amélioration et la gestion durable de chêne zeen de la forêt d’Ouled Bechih

    Parmi les ressources biophysiques des oasis du Niger, le sel occupe une place importante. Dans les oasis de Bilma situées au nord-est du Niger, l’exploitation artisanale des sels se fait dans les oasis reliques des lacs fossiles et dans les oasis à eau saumâtre et affleurante. Ce travail a pour but de caractériser les principaux sels des oasis de Bilma afin de dégager leur aptitude à la consommation humaine et animale. La méthodologie est basée sur les échantillonnages des sels dans les salines et natronières puis une analyse aux rayons X dans un laboratoire au Nigéria. Des enquêtes socio environnementales ont été effectuées auprès des oasiens pour s’enquérir de leur système de production. Les résultats montrent que les modes d’accès à ces salines sont restés ancestraux. Les mesures des conductivités électriques indiquent que les eaux des salines ont une forte conductivité par rapport à celles des mares natronières. Les analyses aux rayons X montrent que la composition des sels de cuisine de Bilma (B1) est dominée par la burkeite (60%), de Fachi (F1) par la Thenardite (79,62%) et de Siguidine (S1) par d’analcite (83,67%). L’halite (NaCl) est présente dans ces trois sels de cuisine (B1, F1 et S1) dans une proportion variable. Les sels à lécher des trois sites sont principalement composés de la Thenardite et les natrons (A1 et A2) par le trôna. Le minéral B3 est composé en majorité de la Thenardite et du quartz. Ces sels sont utilisés dans l’alimentation humaine et animale. Ils sont aussi utilisés comme savon, remède contre certaines maladies telles que la constipation et les brulures d’estomac. Pour valoriser ces sels, il faut moderniser les systèmes d’exploitation afin qu’ils soient consommés sans aucun danger et devenir compétitifs sur les marchés

    This paper aims to clarify the motives for accounting reform in Algeria and analyze them based on the sociological perspective of the new institutional theory in its three forms: “coercive, normative and mimetic”. Therefore, the problem of the study came to search for the real motives behind the accounting harmonization process in Algeria. To discuss this problem, we adopted a field study to present the Algerian experience using the tools of scientific research, mainly represented in: interview, observation and documentary analysis, and employing a sociological approach to the new institutional theory. We have reached a set of results, the most important of which was an acknowledgment of coercive pressures behind the accounting reform process, which was matched by the ambition and desire of the Algerian legislator to catch up with the global ranks and simulate successful experiences.
