A Pacific Cafe

Although Chef Jossel in was 
classically trained at the Culinary 
School of Paris. he found his true 
calling in Hawaii. 
For the Rosewood Hotels. the 
luxury chain renowned for hiring 
top-notch chefs. Josselin opened 
the Crescent Court Hotel in Dallas. 
Texas. His fresh . distinctive fare 
drew rave reviews and earned 
Chef Josselin a position at one of 
the jewels of the Rosewood 
collection. the exclusive Hotel 
Hana-Maui on the secluded east coast of M9ui. 
It is said that the old Hawaii still exists in Hana. 
Maui. and it was the bounty of this pristine 
paradise that changed Chef Josselin's culinary 
perspectives ... forever. The herbs. vegetables and 
indigenous produce grown by the local farmers. 
the eclectic catch of the local fishermen. the unique 
flavors of the different ethnic groups to settle here. 
were combined by Chef Josselin with classical 
European techniques to create a sophisticated menu. 
In concert with several other leading Hawaii chefs. 
Chef Josselin helped to spawn a cuisine that has 
since captured the imagination of the culinary 
world. It is called Hawaii Regional Cuisine. 
"' In 1990 on the island of Kauai. Chef Josselin 
opened his first restaurant. A Pacific Cafe. Under his 
creative leadership. the restaurant's Euro-Pacific 
cuisine. enhanced by the freshest ingredients from 
the islands. garnered many prestigious accolades. 
Mimi Sheraton. writing for Conde Nast Traveler. 
named it one of the "50 choice restaurants around 
the country." Bon Appetit dubbed it one of the best 
restaurants in America. David Rosengarten of 
Departures called it the "best restaurant in the state 
today." 
As word spread of this unique. inventive restaurant 
on Kauai. Chef Josselin spread his wings as well. 
Today. you can enjoy A Pacific Cafe Maui. A Pacific 
Cafe Oahu. The Beach House and the Pacific Bakery

umbrellas have been used for centunes to denote 
Royal Rank. by the use qf elaborate jewels,
