Kontrola kvaliteta prisustva fosfata u dimljenoj svinjskoj pečenici
The various phosphate compounds used in the meat industry are not necessary, but are widely
used due to water retention and binding. The use of phosphate additives leads to the establishment
of ionic capacity in the meat product. And one of the biggest advantages of using phosphate is the
reduction of sodium nitrite usage, achieving consistency and sensory properties that are adapted
to the consumer. The aim of this work was to examine the amount of polyphosphates present and
the effect on the amount of water and protein ratio. The data obtained from the analysis of 30
samples of tested smoked pork loins after industrial production were processed. The following
analyzes were carried out on the tested samples: phosphate content (expressed as P2O5), moisture,
protein, fat and ash. The goal was to establish the ideal amount of the ratio of phosphate salts and
water during the brining process. These data were used to process the ratio of water and protein,
as well as to estimate and calculate the impact on the nutritional value. The biggest benefit of
using phosphate is the reduced use of sodium nitrite, which, present in significant amounts, can
have a harmful effect on human health. This is precisely achieved by an adequate ratio of salt and
water. The aim of the test was to monitor the presence of phosphates and to harmonize the values
with the legal regulations, as well as to obtain products with an extended shelf life, as well as color
and taste. With the increase in the amount of added phosphates, the water content (ratio of water
and protein) in the finished products of the obtained smoked pork loins also increased. The
obtained values of the amount of phosphate in the final product were below the maximum
permissible value of phosphate prescribed by the national regulation. The nutritional value of the
obtained smoked pork loin is 378 kJ, i.e. 90 kcal, with a ratio of water to protein of 4.3.Različita fosfatna jedinjenja koja se koriste u industriji mesa nisu neophodna, ali se zbog
zadržavanja i vezivanja vode široko koriste. Upotreba fosfatnih aditiva dovodi do uspostavljanja
jonskog kapaciteta u mesnom proizvodu. A jedna od najvećih prednosti korišćenja fosfata je
smanjenje korišćenja natrijum nitrita, postizanje konzistencije i senzornih svojstva koja su
prilagođena potrošaču. Cilj ovog rada bio je ispitivanje količine prisutnih polifosfata i uticaja na
količinu odnosa vode i proteina. Obrađeni su podaci dobijenih analizom 30 uzoraka ispitanih
dimljenih svinjskih pečenica nakon industrijske proizvodnje. Na ispitanim uzorcima su
sprovedene sledeće analize: sadržaj fosfata (izražen kao P2O5), vlage, proteina, masti i pepela. Cilj
je bio da se uspostavi idealna količina odnosa fosfatnih soli i vode u toku procesa salamurenja.
Ovi podaci su iskorišćeni za obradu odnosa vode i proteina kao i procenu, odnosno proračuna
uticaja na nutritivnu vrednost. Najveći benefit korišćenja fosfata je smanjene korišćenja natrijum
nitrita, koji prisutan u znatnim količinama može imati štetan uticaj na ljusko zdravlje. Ovo je
upravo postignuto adekvatnim odnosom soli i vode. Cilj ispitivanja bio je praćenje prisustva
fosfata i usklađivanje vrednosti sa zakonskom regulativom, kao i dobijanje proizvoda sa
produženim rokom trajanja, ali i boje i ukusa. Sa porastom količine dodatih fosfata rastao je i
sadržaj vode (odnosa vode i proteina) u gotovim proizvodima dobijenih dimljenih pečenica.
Dobijene vrednosti količine fosfata u krajnjem proizvodu su bile ispod maksimalno dozvoljene
vrednosti fosfata propisane nacionalnom regulativom. Nutritivna vrednost dobijene dimljene
svinjske pečenice je 378 kJ, odnosno 90 kcal, sa vrednošći odnosa vode i proteina od 4.3
An in vitro study of contact and residual toxicity of carvacrol in the control of Dermanyssus gallinae
Инфестација живине црвеном кокошијом грињом (Dermanyssus gallinae) поред
тога што утиче на здравље самих јединки, негативно се одражава и на
продуктивност што је приморало произвођаче да траже ефикасне мере контроле
које би биле укључене у интегрисано сузбијање штеточина. Коришћени су
различити начини контроле инфестација, који су укључивали примену
хемикалија, имплементацију биолошких и/или физичких мера, употребу
производа биљног порекла, или комбинацију две или више мера. Висока
биолошка ефикасности (контактно и фумигантно дејство) и низак степен
токсичности, указали су да спољашња примена етарских уља може бити
алтернатива акарицидима. Ураду су приказани резултати испитивања контактне
(директно излагање D. gallinae у трајању од 1 минута испитиваној супстанци) и
резидуалнe токсичности (1дан након наношења испитиване супстанце на
површину посуде излагање D. gallinae у трајању од 1 сата) карвакрола, једног
од главних фармаколошки активних састојака етарских уља. У лабораторијским
условима применом методе Петријеве посуде, акарицидна ефикасност
карвакрола, у концентрацијама од 0,5 и 0,3%, је тестирана на одраслима
јединкама D. gallinae. Kарвакрол у концентрација од 0,5% и 0,3 % је испољио
100% и 99% контактну токсичност редом навођења, а код испитивања
резидуалне токсичности показао је ефикасност код 6% (у конц. од 0,5%) и 3%
(у конц. од 0,3%) јединки, након 48 часова. Преживљавање адултних форми
гриња прати и принос јаја. У тесту резидуалне токсичности принос јаја је била
у 47% и 33% случајева, у концентрацијама од 0,3 и 0,5%, редом навођења.
Добијени резултати указују на то да се ефикасност карвакрола против гриња,
које су биле директно изложене, у великом проценту губи накнадним
излагањем, тако да се не очекује продужени ефекат од значаја. Узимајући у
обзир добијене резултате испитивања и неопходне елементе за сузбијање D.
gallinae, можемо закључити да код потенцијалне екстерне примене карвакрола,
упркос неким добрим карактеристикама, постоје ограничења и да у чистој
формулацији није рационалан избор за сузбијање гриња код живине.Poultry red mite (Dermanyssus gallinae) infestation affects the health of chickens,
and has a negative impact on productivity, which has forced producers to look for
effective control measures that could be included in integrated pest control. Various
methods of infestation control have been used, including the application of chemicals,
the implementation of biological and/or physical measures, the use of herbal products,
or a combination of two or more measures. Estimated biological efficiency (contact
and fumigant effect) and low level of toxicity indicated that the external application
of essential oils can be an alternative to acaricides. The results of contact (direct
exposure of D. gallinae for 1 minute to the test substance) and residual toxicity (1 day
after application of the test substance to the surface of the container, exposure of D.
gallinae for 1 hour) of carvacrol, one of the main pharmacologically active ingredients
of essential oils, are presented in this paper. In laboratory conditions using the Petri
dish method, the acaricidal efficiency of carvacrol, in concentrations of 0.5 and 0.3%,
was tested on adult forms of D. gallinae. Carvacrol in concentrations of 0.5% and
0.3% showed 100% and 99% contact toxicity, respectively, and in the residual toxicity
test it showed efficacy at 6% (in a concentration of 0.5%) and 3% (in a concentration
of 0.3%), after 48 hours. The survival of adult mites is accompanied by egg
production. In the residual toxicity test, egg yield was in 47% and 33% of cases, in
concentrations of 0.3 and 0.5%, respectively. The obtained results indicate that the
effectiveness of carvacrol against directly exposed mites is significantly diminished
with subsequent exposure, so that a prolonged efficiency is not expected. Taking into
account the obtained test results, we can conclude that the potential external
application of carvacrol, despite some good characteristics, has major limitations in
succesfull control of D. gallinae and does not represent a rational choice for the
control of mites in poultry
Disinfection properties of UV lamps
Priča o prevenciji i kontroli zaraznih bolesti ostaje otvorena jer se niz patogenih
bakterija iznova pojavljuje kao izazivač infekcija. Da bi se taj problem prevazišao,
antibiotici su bili dominantni tokom prethodne ere. Rezistencija kao fenomen kojim se patogeni mikroorganizmi opiru dejstvu lekove je postavo izuzetno raširen u
svetu. Više naučnih pravaca se razvija u svrhu prevazilaženja ovog problema, pa je
tako fotodinamička inaktivacija definisana u platformu za otkrivanje i razvoj antimikrobnih sredstava. Koncept fotodinamičke inaktivacije je prilično jednostavan
i zahteva izlaganje mikroba energijom svetla koja uzrokuje pobuđivanje molekula, što rezultira proizvodnjom singlet kiseonika ili drugim reaktivnim kiseoničkim
vrstama koje reaguju sa intracelularnim komponentama, a posledično dovode
do ćelijske inaktivacije. To je oblast sve većeg interesovanja, kao i istraživanja u
smerovima: (1) da se identifikuju fotohemijski i fotofizički mehanizmi uključeni u
inaktivaciju, (2) da razviju mo©ni i klinički kompatibilni fotosenzibilizatori, (3) da
se razume kako na fotoinaktivaciju utiču ključni mikrobni fenotip elementi (rezistencija na više lekova i efluks, virulencija i determinante patogeneze, biofilmovi),
(4) da se istraže nove platforme za isporuku inspirisane trenutnim trendovima u
farmakologiji i nanotehnologijama i (5) za identifikaciju fotoinaktivacije primene
izvan kliničkog okruženja kao što je životna sredina tj. dezinfekciona sredstva.The prevention and control of infectious diseases problem remains open as a
number of pathogenic bacteria re-emerge as the cause of infection. To overcome
this problem, antibiotics were dominant during the previous era. Resistance as a
phenomenon by which pathogenic microorganisms overcome the effect of drugs
has become extremely widespread in the world. A lot of scientiϔic attempts in
different directions are being developed in order to overcome this problem, so
photodynamic inactivation has been deϔined as a platform for the discovery and
development of antimicrobial agents. The concept of photodynamic inactivation
is quite simple and requires exposure of microbes to light energy that causes molecular excitation, resulting in the production of singlet oxygen or other reactive
oxygen species that react with intracellular components, and consequently lead
to cellular inactivation. It is an area of increasing interest, as well as research in
the directions: (1) to identify the photochemical and photophysical mechanisms
involved in inactivation, (2) to develop potent and clinically compatible photosensitizers, (3) to understand how photoinactivation is affected by key microbial
phenotype elements (multidrug resistance and efϔlux, virulence and pathogenesis
determinants, bioϔilms), (4) to explore new delivery platforms inspired by current
trends in pharmacology and nanotechnologies and (5) to identify photoinactivation applications outside the clinical setting such as life the middle ie disinfectants
Pathogenisis of laminits in dairy cows
Хромост је најранији, али и најважнији клинички симптом обољења акроподијума говеда. Према литературним подацима у 90 % случајева узрок хромости је локализован у папцима, а у 10 % случајеваје у другим анатомским деловима екстремитета. Патолошки процес је у 88 % случајева испољен на задњим екстремитетима. Ламинитис представља асептично запаљење коријума папака. Као узроци настанка овог обољења поред механичког преоптерећења папака наводе се и токсични узроци. Дуже давање лако сварљиве концентроване хране, стварање ацидозе у бурагу, нагла промена хране, посебно исхрана зеленим јечмом, овсем, свеже покошеним младим легуминозама и исхрана плеснивом храном, могу довести до појаве ламинитиса. Ламинитис је често резултат утицаја великог броја чиниоца, као што су метаболички и дигестивни поремећаји, порођај стрес, маститис, метритис, дислокација сиришта, лежиште без или са врло мало простирке, немогућност кретања, прегојеност и лош менаџмент исхране. Оброк који доводи до ацидозе, доводи и до ламинитиса, врло је тежак за корекцију када се највећи проценат хранива у оброку састоји од угљено хидратних материја. Сматра се да вазоактивне материје (хистамин) које улазе у крвоток из бурага доводе до оштећења коријума папака. Метаболички поремећај настаје услед ниског pH садржаја бурага и ланчано долази до патофизиолошких поремећаја који на крају резултирају исхемијом коријума папака и клинички манифестним ламинитисом (одлагањем ногу због бола, а понекад и принудног лежања). Верује се да осим хистамина и бактеријски ендотоксини, млечна киселина и друге биолошки активне материје доприносе настанку овог обољења. Примена основних принципа исхране музних крава могу превенирати појаву ламинитиса самим тим и појаву економских губитака услед хромости.Lameness is the earliest, but also the most important clinical symptom of acropodium disease in cattle. According to literature data, in 90% of cases the cause of lameness is localized in the ankles, and in 10% of cases it is in other anatomical parts of the extremities. In 88% of cases, the pathological process is manifested in the hind limbs. Laminitis is an aseptic inflammation of the corium of toe. In addition to mechanical overloading of the toe, toxic causes are cited as the causes of this disease. Prolonged administration of easily digestible concentrated food, creation of acidosis in the rumen, sudden change of food, especially feeding on green barley, oats, freshly cut young legumes and feeding on moldy food, can lead to the appearance of laminitis. Laminitis is often the result of the influence of a large number of factors, such as metabolic and digestive disorders, childbirth stress, mastitis, metritis, dislocation of the abomazus, bed without or with very little mat, inability to move, obesity and poor nutrition management. A meal that leads to acidosis also leads to laminitis, it is very difficult to correct when the largest percentage of nutrients in the meal consists of carbohydrates. It is believed that vasoactive substances (histamine) entering the bloodstream from the rumen lead to damage to the corium of the papilla. The metabolic disorder is caused by the low pH content of the rumen and leads to pathophysiological disorders in a chain, which ultimately result in ischemia of the corium of the toe and clinically manifest laminitis (postponement of the legs due to pain, and sometimes forced lying down). It is believed that, in addition to histamine, bacterial endotoxins, lactic acid and others biologically active
substances contribute to the development of this disease. The application of the basic principles of feeding dairy cows can prevent the occurrence of laminitis and thus the occurrence of economic losses due to lameness
Prva molekularna detekcija citomegalovirusa svinja u Srbiji
Kliničko oboljenje uzrokovano sa porcine citomegalovirus (PCMV) se javlja samo
kod svinja, iako se infekcije srodnim virusima pojavljuju i kod drugih životinjskih vrsta
uključujući i ljude. Citomegalovirus kod svinja uzrokuje rinitis sa inkluzionim
telašcima (IBR), PCMV pripada podfamiliji Betaherpesvirinae i familiji Herpesviridae,
ali nije svrstan ni u jedan rod, a genetska istraživanja su pokazala da je PCMV genetski
srodniji humanim herpes virusima 6 i 7. Infekcija sa PCMV je prisutna širom sveta,
dominantno u zemljama sa intenzivnom proizvodnjom svinja i uglavnom je klinički
inaparentna zbog stečenog imuniteta zapata. Virus se prenosi horizontalno
(oronazalnim putem), a moguća je i kongenitalna transmisija, pa inficirani fetusi mogu
biti, mumificirani, mrtvorođeni ili rođeni živi kao slabo vitalna prasad. Kliničko
oboljenje se pojavljuje u akutnoj ili subakutnoj formi kod prasadi starosti do 4 nedelje,
a može se pojaviti i kod drugih starosnih kategorija u neimunim zapatima. Svinje koje
su prebolele infekciju ostaju doživotne kliconoše. Suide predstavljaju jedini rezervoar
virusa u prirodi. Rinitis sa inkluzionim telašcima je visoko prevalentna infekcija i
pretpostavlja se da je prevalencija oboljenja preko 90% na globalnom nivou, odnosno
98% u Evropi. U našoj zemlji još uvek nisu rađena opsežna istraživanja na utvrđivanju
prevalence oboljenja zbog čega su prevalenca infekcije i incidenca oboljenja još uvek
nepoznate. Zbog cirkulacije drugih respiratornih virusa u farmskim uslovima uzgoja
svinja, PCMV je često zapostavljen. Na poziv veterinarske službe, na farmi koja je imala učestale probleme sa
respiratornim oboljenjima, izvršili smo uzorkovanje oralnog fluida i analizirali
prikupljene uzorke primenom lančane reakcije polimeraze na prisustvo sledećih
virusnih agenasa: Encephalomyocarditis virus (EMCV), PCMV, Porcine circovirus tip 2
(PCV2). Virus reproduktivnog i respiratornog sindroma svinja (PRRSV) i Virus
influence svinja (SIV), sa ciljem uvida u prisustvo virusnih infektivnih agenasa na
farmi. Izvršenim analizama smo pored detekcije PRRSV, PCV2 i SIV, ustanovili i
prisustvo genoma PCMV kod prasadi iz odgoja. Mortalitet prasadi u neimunim
zapatima od posledica kliničkog PCMV-rinitisa može dostići 10%, ali se može povećati
do čak 50% ukoliko se bolest komplikuje drugim virusnim ili bakterijskim infekcijama.
Klinički značaj prisustva PCMV u konkretnom slučaju bi trebalo razmatrati u
kontekstu detekcije drugih virusnih patogena i njihovog sinergističkog efekta.
Međutim, obzirom da PCMV samostalno ili u koinfekcijama sa drugim, pre svega
virusnim respiratornim agensima može biti uzrok povećanja mortaliteta, ne treba ga
zanemariti. Vakcina protiv PCMV i specifična terapija ovog oboljenja ne postoje, sa
druge strane, ne postojanje informacija o prevalenci PCMV u našoj zemlji kao ni
vršenje rutinskog pregleda na ovu infekciju, predstavlja značajan rizik za širenje
virusa pre svega uvođenjem novonabavljenih životinja u zapat
Traditional Meat Products—A Mycotoxicological Review
Traditional meat products are commonly produced in small family businesses. However,
big industries are also involved in the production of this kind of product, especially since a growing
number of consumers crave the traditional taste and aromas. The popularization of original and
organic products has resulted in a return to traditional production methods. Traditional meat products
are produced worldwide. However, in such (domesticated) conditions there is a potential danger for
mycotoxin contamination. This review aims to present the sources of mycotoxins in traditional meat
products, the most common mycotoxins related to such meat products, and future prospects regarding
the suppression of their occurrence. Special attention should be paid to reducing the transfer of
mycotoxins via the food chain from animal feed to animals to humans (stable-to-table principle),
which is also described in this review. Other sources of mycotoxins (spices, environment, etc.) should
also be monitored for mycotoxins in traditional production. The importance of monitoring and
regulating mycotoxins in meat products, especially in traditional meat products, is slowly being
recognized by the institutions and hopefully, in the future, can deliver legally regulated limits for such
products. This is especially important since meat products are available to the general population
and can seriously affect human health
Diagnostics of fish viral diseases in freshwater aquaculture
U cilju pouzdane dijagnostike virusnih bolesti riba odgajanih u slatkovodnoj akvakulturi, neophodno je upoznati se sa svim dostupnim anamnestickim podacima, patološkim promenama i rezultatima identifikacije infektivnog agensa kako bi, ukrštanjem ovih nalaza utvrdili najverovatniji uzrok bolesti i osnovne faktore koji su uticali na njen nastanak. Na vreme uočiti i prepoznati simptome bolesti kod riba predstavlja jedan od prvih koraka ka postavljanju adekvatne dijagnoze bolesti odnosno uočavanja problema koji je doveo do određenih simptoma. Pri farmskim uslovima gde se zdravstveni status riba prati i drži pod kontrolom uz primenu svih profilaktičkih i preventivnih mera, u koliko se primete znaci bolesti riba, oni se pažljivo isprate, a nekoliko obolelih riba se pregleda i secira radi utvrđivanja kliničkih i patoanatomskih znakova bolesti. Ukoliko postoji sumnja da je infektivni agens uzročnik oboljenja uzimaju se uzorci I šalju na laboratrorijska ispitivanja. Metode dijagnostike i detekcije virusnih bolesi riba obuhvataju izolaciju virusa na kulturi tkiva, elektronsku mikroskopiju i upotrebu seroloških i molekularnih metoda. Izolacija virusnih patogena na kulturi tkiva i dalje ostaje preporučeni meted za dijagnostiku virusnih bolesti riba. Nakon izolacije određenih virusa, dalja laboratorijska procedura je usmerena ka identifikaciji virusa, koja se vrši pomoću različitih metoda, kao što su serum-neutralizacioni test, test fluorescentnih antitela, ELISA test i molekularne metode PCR tehnike. Neke od ovih metoda dijagnostike se takođe koriste i za detekciju virusnih antigena iii nukleinskih kiselina u inficiranim tkivima riba, što obezbeđuje mnogo bržu identifikaciju virusa i postavljanje tačne dijagnoze.In order to reliably diagnose viral diseases of fish raised in freshwater aquaculture, it is necessary to get acquainted with all available anamnestic data, pathological changes and the results of the identification of the infectious agent in order to determine the most probable cause of the disease and the basic factors that influenced its occurrence by crossing these findings. Spotting and recognizing disease symptoms in fish in time is one of the first steps towards making an adequate diagnosis of the disease, that is, noticing the problem that led to certain symptoms. In farm conditions where the health status of the fish is monitored and kept under control with the application of all prophylactic and preventive measures, if signs of fish disease are observed, they are carefully monitored, and several diseased fish are examined and dissected to determine clinical and pathoanatomical signs of the disease. If there is a suspicion that an infectious agent is the cause of the disease, samples are taken and sent for laboratory tests. Methods of diagnosis and detection of viral fish diseases include virus isolation on tissue culture, electron microscopy and the use of serological and molecular methods. solation of viral pathogens on tissue culture remains the recommended method for the diagnosis of viral diseases in fish. After the isolation of certain viruses, the further laboratory procedure is directed towards the identification of the virus, which is carried out using different methods, such as the serum-neutralization test, the fluorescent antibody test, the ELISA test and the molecular methods of the PCR technique. Some of these diagnostic methods are also used to detect viral antigens or nucleic acids in infected fish tissues, which ensures much faster virus identification and accurate diagnosis
Aeromonas veronii biovar sobria infekt in cultivated sterlet (Acipenser ruthenus)
Nedavno je prijavljeno da je Aeromonas veronii važan patogen riba koji uzrokuje sepsu ulcerozni sindrom slatkovodnih riba, sto dovodi do gubitaka u akvakulturi i ugrožava sigurnost hrane. U Srbiji se uzgajaju dvije vrste jesetri iz porodice Acipenseridae: ruska jesetra (Acipenser gueldenstaedtil) i kečiga (Acipenser ruthenus). Bakterijska hemoragijska septikemija utvrđena je u mlađi kečige (Acipenser ruthenus) uzgojenog u srpskom recirkulacijskom sustavu (RAS). Zaražene ribe pokazivale su krvarenja na koži trbusne strane glave, tijela i na dnu peraja, uz crvenilo anusa. Ribe su pokazivale nadutost abdomena s nakupljanjem ascitne tekucine, petehijalno krvarenje u jetri i povećanu, natečenu slezenu. Dobivene ciste bakterijske kolonije bile SU sivo-bijele, glatke povrsine, neprozirne i blago konveksne, stvarajuci D-hemolizu na krvnom agaru, a sastojale su se ad gram-negativnih, pokretnih, kratkih stapićastih bakterija. Aeromonas veronii biovar sobria identificiran je na temelju morfoloskih i biokemijskih značajki korištenjem konvencionalnih metoda i MALDI TOF MS (Matrix Assisted Laser DesorptionIonization Time of Flight Mass Spectrometry).Recently, Aeromonas veronii has been reported as an important fish pathogen causing freshwater fish sepsis and ulcer syndrome, resulting in losses to the aquaculture and threatening food safety.In Serbia, two sturgeon species of the Acipenseridae family are cultivated: Russian sturgeon (Acipenser gueldenstaedtit) and sterlet (Acipenser ruthenus). Bacterial haemorrhagic septicemia occurred in young sterlet (Acipenser ruthenus) cultivated in Serbian recirculating system (RAS). Affected fish showed haemorrhages on the skin of ventral side of head, body and at the base of fins, with reddening of the anus.Internally, fish showed abdominal distension with accumulation of ascitic fluid, petechial haemorrhage in the liver and enlarged, swollen spleen. Obtained pure bacterial colonies were grey-white, smooth-surfaced, opaque, and slightly convex, producing -hemolysis on blood agar, consisiting of gram-negative, motile, short rod-shaped bacteria. The Aeromonas veronii biovar sobria was identified based on morphological and biochemical features by using conventional methods and MALDI-TOF MS (Matrix Assisted Laser DesorptionIonization Time of Flight Mass Spectrometry)
Porcine viral diseases can be successfully monitored using non-invasive sampling strategy
Non-invasive sampling is increasingly used in domestic and wild animals. Traditional sampling methods are labour, time-consuming, and require trained personnel. Oral fluid is an alternative sample that can replace nasal swabs. Air sampling with special device and testing represents the newest method of non-invasive sampling, which is particularly useful and validated when testing pigs. Udder skin sampling is a new sampling approach that provides insight into litters of pigs before weaning, containing their nasal and oral secretions
Microbiological parameters and sensory characteristics of sliced meat products packaged in modified atmosphere throughout the shelf life
Demand for food, such as ready to eat food which is easy to consume with as long as possible
shelf life, has continuously increased due to the modernization and growth of the human population.
Sliced meat products that were normally packed and placed on the market in vacuum
packaging, were packed in MAP with the aim of extending the shelf life. The research objective
of this study was to determine the microbiological parameters and sensory characteristics
of 6 sliced meat products packaged in modified atmosphere (smoked pork loin with added
water, Budim sausage, Kamendin pancetta, Smoked pork neck with added water, Kulen,
Ham for pizza with added water) during the expected shelf life. This study included sensory
analysis and microbiological parameters (Listeria monocytogenes, Enterobacteriaceae and
total aerobic mesophilic microorganisms). All samples of sliced meat products packaged in
modified atmosphere had satisfactory microbiological and sensory characteristics during the
