Bibliometric mapping analysis of Pickering emulsion applied in 3D food printing
SummaryThree‐dimensional food printing (3DFP) can produce foods with tailored nutritional content, complex shapes and textures. This technology requires food formulations (food inks) with specific rheological properties. Pickering emulsions (PE) have gained attention due to their long‐term stability and desirable printable properties, making them an excellent candidate for 3DFP. The purpose of this study is to use bibliometric analysis to identify the most important scientific research on PE used in 3DFP. This includes identifying key authors, countries and universities or institutions where the research was conducted, as well as the primary journals that provide information on this topic. Our study provides insight into the relevance of food ink properties for next‐generation 3DFP and the main raw materials used for the development of PE. Out of the 28 original research articles analysed, only 10 countries have studied the application of PE for 3DFP. China and the United Kingdom have been the primary leaders in researching this topic. The Food Hydrocolloids Journal has been the main source of scientific information. The studies cited Pickering stabiliser particles, including soy protein isolate, microcrystalline cellulose and acetylated microcrystalline cellulose, as well as oil phases based on sunflower, canola, olive and soybean oils. High internal phase Pickering emulsions (HIPPEs) have shown great thermal and conductive stability, making them a promising choice for 3DFP post‐processing. Further studies should assess the bioavailability and bioaccessibility of the bioactive compounds that are encapsulated. It is also important to explore their potential use in real food systems and to integrate innovative packaging solutions

Zusammenfassung: Der erfindungsgemäße Tastschalter weist eine Folienschalteranordnung und ein Betätigungselement auf, das die Folienschalteranordnung über eine Federanordnung nach dem Prinzip „umgekehrter Dom” betätigt. Während die äußere Peripherie der Federanordnung an dem Betätigungselement abgestützt ist, dient der Mittelteil der Federanordnung zur Übertragung der Schaltbetätigungskraft auf die Folienschalteranordnung. Zwischen letzterer und der Federanordnung kann ein Amboss vorgesehen sein, dessen Material auf minimalen Verschleiß der Federanordnung abgestimmt sein kann. Vorzugsweise besteht der Amboss aus einem nicht abrasiven Kunststoff wie beispielsweise PE, PTFE oder dergleichen. Durch das Prinzip „umgekehrter Dom” lässt sich einerseits eine gute taktile Rückmeldung und andererseits eine Kontaktgabe bei gleichzeitig gutem Schutz des in einem geschlossenen vorzugsweise hermetisch geschlossenen Raum liegenden Schalters erreichen. Außerdem ist zusätzlicher Bauraum für elektrische und elektronische Komponenten in unmittelbarer Umgebung des Schalters geschaffen, wodurch das Betätigungselement eine zusätzliche Funktionalität, beispielsweise hinsichtlich NFC-Datenaustausch oder optischer Signalisierung erhalten kann
Weight Perturbation and Competitive Hebbian Plasticity for Training Sparse Excitatory Neural Networks
Neuroplasticity, the adaptive capacity of the nervous system, spans a broad spectrum from short-term synaptic adjustments to the establishment of new neuronal connections. While artificial neural networks (ANNs) draw inspiration from the human brain, their current implementations primarily focus on synaptic weight plasticity, notably using the backpropagation algorithm (BP). Despite its machine learning prowess, BP deviates from biological realism due to imposed constraints and lacks the brain’s superior generalization capabilities. To bridge this gap, previous works have proposed a local competitive learning rule aligned with Hebbian plasticity, yet it presents challenges in sparsity and adherence to Dale’s law. This work addresses these challenges by integrating this competitive learning rule with additional mechanisms. A nonnegativity constraint is introduced to align with Dale’s law and to induce sparsity. Weight Perturbation (WP) is employed as a biologically plausible surrogate gradient. Homeostatic plasticity counters long-term potentiation (LTP) induced by Hebbian plasticity. The resulting framework offers a biologically plausible model, maintaining robust classification performance despite the constraint of a purely excitatory network. This learning rule demonstrates strong sparsification abilities, even pruning entire hidden neurons, potentially preventing overparametrization, thereby fostering the potential for better generalization
Using Immersive Technologies and Digital Twins in a Real World with Non-Orthogonal Coordinate Systems
The paper describes the use of immersive technologies and Digital Twins in the architecture, engineering, and construction (AEC) industry. Immersive technologies have immense potential to improve interdisciplinary collaboration as they utilize a visual representation of virtual objects in their real-world perspective. This immersion facilitates effective communication between all parties involved, e.g. to identify errors during the planning and construction of buildings. A specific example of such interdisciplinary collaboration is kitchen planning. The architect draws the house and room plans, the kitchen planner plans the kitchen according to the homeowner’s wishes and the craftsmen then carry out their installations according to the plans for electricity, water, and heating. All plans are based on flat floors and perpendicular walls. However, this is rarely the case in a real building. The challenge with the exact visual representation of virtual objects in the real world using AR therefore lies in the positioning of objects such as a cupboard in relation to the non-orthogonal coordinate systems that result for each room from the real floors and walls. The paper presents an assistance system that integrates immersive technologies and Digital Twins. It is a solution approach for the transformation of object properties based on orthogonal coordinate systems into the non-orthogonal coordinate systems prevalent in reality. With the assistance system, the kitchen planner can create his plans using virtual reality (VR), customers can experience their kitchen virtually and the craftsmen can then be guided using augmented reality (AR), e.g. by precisely localising drilling positions for cabinets
