    TECHNOLOGY OF SLAUGHTERING LAMB, THE CHEMICAL COMPOSITION AND THE NUTRITIONAL VALUE

    The aim of the research is to identify the quality, chemical composition and nutritional value of lamb meat. Were taken three samples, at different points of the lamb carcass and fresh immediately after slaughter, while the distance from industry to laboratory was about 1 hour. The samples were packaged with vacuum to avoid the contamination or any damage and were analyzed in the chemistry laboratory at the Kosovo Food and Veterinary Agency. Analyzed parameters are: protein, fat, moisture and collagen. According to the results and reference values we conclude that the first and the third sample exceed the value of the moisture because by 76,15 and 77,05 it should have up to 73 based on the reference values, while the second sample exceed the value of fat because by 11,72 it should have up to 5-6. The reason of sampling points is that we wanted to do the research of the quality of the meat at different part of the lamb carcass because as we know that is difficult to determine the quality of the whole carcass taking just one sample

Forensic research is a procedure of applying tactics of obtaining information, their analysis, assessment of the application of legal measures and technical methods and means in order to clarify and provide evidence, to initiate a procedure. The legislator envisages legal measures and actions, but their application is conditioned by the professional and professional approach of the criminal officers who build and apply appropriate tactics and techniques based on scientific knowledge, but also practical experience. This is the subject of study in this paper in order to obtain indicators on the basis of which strategies will be built for protection of cyber financial data, as well as strengthening the detective function of the police as a competent body for combating this crime

One of the largest shocks related to the COVID-19 crisis was not only the lethality of the virus itself, but also the chaotic and ad hoc response to it from so many sectors of society. When it became clear in early March 2020 that COVID-19 was spreading rapidly on a global scale, most governments began shutting down businesses, schools, and universities. Many higher education institutions switched to online classes after only a few days of preparation. Many have struggled to decide how to assess student learning remotely, whether to postpone or cancel final exams. A big concern for many higher education institutions has been to avoid increased cheating and plagiarism during online examinations. How higher education institutions will move forward after the pandemic? Will universities return to a “business as usual” or, will use this disruption to transform the education

Namely, for the development of a basic concept of rural tourism, it is necessary for it to be developed in an environment that has rich traditions, natural resources, cultural values and individual authenticity. Based on that, the basic concept for development of rural tourism is based on setting a framework for its development and its identification as a model for better local economic development.     THE RIGHT TO EDUCATION IN THE 21ST CENTURY: PERSPECTIVES AND CHALLENGES

    The right to education is a human right that belongs to the so-called second generation of human rights. Today, the right to education is protected by a number of international and national legal acts. In principle, the right to education implies a positive obligation of the state. This means that the state has an obligation to respect, promote and fulfill the right to education, depending on its resources and capabilities. In this regard, the right to education is also qualified as a public service or a public good in the states. According to the International Human Right Law, the primary goal of education is to ensure human dignity and the holistic development of the human person. Education also transforms society, promotes economic growth, and fosters sustainable development in modern democracies. Education can be defined in a wider and narrower sense. Consequently, the European Court of Human Rights states as follows: “the education (of children) is the whole process whereby, in any society, adults endeavor to transmit their beliefs, culture and other values to the young, whereas teaching or instruction refers in particular to the transmission of knowledge and to intellectual development.” The subject of this paper is a normative analysis of the right to education, with particular focus on higher education, in correlation to the democratic society development. In terms of methods, the authors will apply the normative method, the comparative method, as well as case law method

    The analysis presented aims to assist in understanding of ways that transport can contribute to sustainable social development in developing countries. Hence, the approaches that can lead towards the transformation of socially unsustainable transport at the moment are given. The implications of social dimension in transport sustainability are analyzed in correlation with affordable options and reliable checklist for sustainable social development. Undertaking them is of emerging importance for providing a framework that can be used in developing countries towards the social sustainability in transport. These recommendations will help to build the technical capacity of transport planners and decision makers to make a needed change in low-income countries regarding this issue

    EXTRACTION METHODS FOR CAFFEINE FROM Camellia sinensis

    Mints are considered to be aromatic where the leaves fresh or dried are used as culinary source. The main application of the mint is against stomach ache and chest pains. Caffeine is a substance present in tea giving the pleasant and stimulant effect. The tea samples, raw and in bags from Mentha Spicata were bought from local market and the fresh sample was from the garden. Extraction methods were Soxhlet with the use of methanol with three cycles and boiling tea samples with water as solvent in the period of one hour. Lead(II) acetate was used to separate tannins from caffeine followed by filtration through filter paper with black ribbon. To 5 cm3of the filtrate was added 3 drops of 0.1% ferric chloride. A brownish green showed positive test for tannins. The determined pH values for fresh, raw and tea in bags were 5.94, 5.92, and 5.89, respectively

    DETERMINATION OF FREE FATTY ACID CONTENT OF MACEDONIAN WHITE BRINED CHEESE

    The main objective of this scientific research was to determine the free fatty acids content of Macedonian white brined cheese. Four variants of white brined cheese were selected and analysed for concentration of free fatty acids. The results of free fatty acids content which were obtained from the analysed cheese samples, define the Macedonian white brined cheese as a typical cheese, in which all free fatty acids were determined, with the exception of the following free fatty acids: valeric acid, caproic acid and α-linoleic acid. The detected free fatty acids in the tested cheese variants were present with different but approximate parameter values. From the detected free fatty acids, the concentration of palmitic acid was highest in all examined cheese samples with values from 34.40±0.2 mg% to 36.10±0.1 mg% and the concentration of butyric acid was at lowest level from 0.01±0.003 mg% to 0.02±0.003 mg%). The concentration of saturated fatty acids in all examined cheese samples was from 69.32±0.42 mg% to 70.76±0.72 mg% and the concentration of non-saturated fatty acids was from 29.24±0.55 mg% to 30.68±0.67 mg%). The concentration of free fatty acids in examined cheese samples was statistically significant at level p<0.05

    CHALLENGES AND PRIORITIES OF COOPERATION BETWEEN HIGHER EDUCATION AND BUSINESS COMMUNITY

    The aim of this paper is to contribute to a better perception of the need for cooperation of the Business community with the academy, i.e. Higher education. Considering the results of this type of cooperation at European level, compared to the situation in Macedonia, we can see a significantly lower fluctuation of activities in relation to this type of cooperation which is realized compared to EU countries. However, despite this situation, the Macedonian academic community still shows a very strong interest in the cooperation that should be achieved between Higher education and the Business community, which is reflected in the growing interest of companies to be part of this process. Thus, the positive attitude towards the cooperation of Higher education with the Business community, as well as the intention that exists to increase and improve this type of cooperation, can be strengthened by introducing tools and mechanisms supported by local and central government for greater involvement of Academia in Business community. The vision of the University "St. Kliment Ohridski”- Bitola, is to be exactly such a university, which with its work confirms the same. University St. Kliment Ohridski”- Bitola, has already imposed itself as a serious partner, offering cooperation with the Business community, which enables acceleration of development processes in both the University and Society.In that sense, the cooperation with the business community has wider dimensions and goals, due to which it will incorporate a range of issues that mean a more comprehensive approach to this issue, i.e. its connection with complementary and interdependent issues and problems related to it and synergistic effects from its implementation

The main focus will be to depict the position of the fundamental rights in the peculiar legal system of the EU and do so by listing the relevant legal acts and following the evolution of the EU. It will include the Treaties, the Charter of Fundamental Rights in the European Union and secondary legislation. This paper will also analyse the role of the Charter and its prominence on the protection of fundamental rights in the EU. Also, the paper will look at the potential implications that may arise in the future of the EU or in relation with the Member States of the Union
