Valorización de residuos agroalimentarios a través de extracción con agua subcrítica: análisis de composición química y actividad biológica

La aventura de la ciencia y la tecnología, 18 -19 de abril de 2024, Valladolid.La industria agroalimentaria genera una cantidad significativa de residuos que pueden causar problemas ambientales. Por ejemplo, el procesamiento industrial de la cebolla y la extracción de agar del alga roja Gelidium sesquipedale producen grandes cantidades de residuos que se acumulan o se utilizan como alimento para animales o fertilizantes [1,2]. Este estudio busca valorizar estos residuos mediante la tecnología de extracción con agua subcrítica para evaluar la composición química de los extractos y su actividad biológica, con el fin de desarrollar componentes con posibles efectos beneficiosos para la salud.
Utilizando agua subcrítica (145°C, 50 bar, 50 min), se obtuvo un extracto rico en compuestos fenólicos, además de azúcares, proteínas y aminoácidos a partir del residuo de piel de cebolla. Este extracto mostró una potente actividad antioxidante y capacidad para inhibir enzimas clave en el metabolismo de los carbohidratos, como la α-glucosidasa y la aldosa-reductasa, demostrando su potencial anti-diabético en enzimas puras y en células humanas [1]. Del mismo modo, utilizando agua subcrítica (175°C, 50 bar, 130 min) se obtuvo un extracto rico en compuestos bioactivos a partir del residuo del alga G. sesquipedale generado tras la extracción industrial del agar [3]. Este extracto también mostró una fuerte actividad antioxidante y anti-inflamatoria y, aunque en menor medida, fue capaz de inhibir la actividad de enzimas asociadas con trastornos como la hiperuricemia, hiperpigmentación, y enfermedades neurodegenerativas. Estos resultados destacan el potencial de estos residuos, hasta ahora poco aprovechados a nivel industrial, para la formulación de alimentos funcionales o nutracéuticos dirigidos a diversas patologías

No full textEn la Tesis Doctoral Síntesis de heterociclos nitrogenados complejos mediante secuencias Ugi/reacciones de post-condensación radicalarias y/o polares, se describe la síntesis de compuestos heterocíclicos nitrogenados que poseen estructuras complejas, muchas de ellas estructuras privilegiadas, ampliamente utilizadas en la industria farmacéutica, como son las lactamas o las hidantoínas. Habitualmente, la síntesis de muchos de estos compuestos requiere de numerosas etapas, lo que las hace poco atractivas para la industria. En este trabajo, mediante el empleo de reacciones multicomponente como la reacción de Ugi, seguidas de reacciones de post-condensación radicalarias o polares se ha logrado obtener estos heterociclos complejos en tan solo dos etapas de reacción, con elevado rendimiento y utilizando condiciones de reacción suaves. Además, en algunos casos, se ha logrado la síntesis enantioselectiva de estos productos mediante este procedimiento sintético.In the Phd thesis Synthesis of complex nitrogenous heterocycles by Ugi sequences/ radical and/or polar post-condensation reactions, the synthesis of heterocyclic nitrogenous compounds with complex structures, many of them privileged structures, widely used in the pharmaceutical industry, such as lactams or hydantoins, is described. Usually, the synthesis of many of these compounds requires numerous steps, which makes them unattractive for the industry. In this work, by using multicomponent reactions such as the Ugi reaction, followed by radical or polar post-condensation reactions, it has been possible to obtain these complex heterocycles in only two reaction steps, with high yields and using mild reaction conditions. Moreover, in some cases, enantioselective synthesis of these products has been achieved employing this synthetic procedure
Model inversion and three-way decompositions in the analytical quality by design strategy for the determination of phthalates BY HS-SPME-GC-MS
Get PDFIn this work, strategies within Analytical Quality by Design (AQbD) with tools of the Process Analytical Technology (PAT) were used in the development of a head space-solid phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS) procedure for the multiresidue analysis of four phthalic acid esters, benzyl butyl phthalate, bis(2-ethylhexyl) phthalate, dibutyl phthalate and diethyl phthalate (regulated by Commission Regulation (EU) No 10/2011). The approach is based on the fact that the intended quality of the resulting chromatograms is defined in terms of the loadings on the sample mode of a Parallel Factor Analysis (PARAFAC2) decomposition. These loadings are the ones used for the inversion of a Partial Least Squares (PLS2) prediction model that has been previously fitted. The inversion gives the experimental conditions that represent a compromise solution in terms of the desired or target values of the responses (Critical Quality Attributes, CQAs), while guaranteeing that these experimental conditions are inside the experimental domain of the Control Method Parameters (CMPs).
This strategy results in experimental conditions of extraction time and temperature that lead to a chromatogram of predefined quality for the four analytes together, with the subsquent saving of time and energy. The experimental conditions achieved have been experimentally verified and figures of merit of the analytical method have been determined. The method has been applied to a case study, bottled natural and flavoured mineral water. UBUMonitor: Desktop application for visual e-learning student clustering with Moodle
No full textUBUMonitor is an open-source Java desktop tool designed to analyse student interactions and grades within courses in the Moodle learning management system. Its primary goal is to assist educational researchers in making informed decisions. The application offers flexible configuration of educational datasets, enabling educational researchers to customize features of their analyses based on filters such as time, participants, e-resources, e-forums and teaching e-activities. With a modular architecture developed iteratively in Github with 35 releases, UBUMonitor has demonstrated its usability in teaching through several published use cases. This paper focuses specifically on the student clustering module, which allows customization of course activity access and grading, supports multiple clustering algorithms, and incorporates techniques for validating both the optimal number of clusters and the quality of cluster result.A. Puesta en marcha de un complejo rural bajo la denominación "Rincón del Chopo"
No full textEl presente Trabajo de Fin de Máster tiene como objeto la creación y gestión de “Rincón del Chopo”,
un complejo rural situado en La Revilla y Ahedo.
El actual posicionamiento del turismo rural como un fenómeno de crecimiento exponencial, la
concienciación de la población por las prácticas sostenibles y la preocupación por la España vaciada se
posicionan como las razones que impulsan esta decisión. Rincón del Chopo busca convertirse en un
referente del turismo rural sostenible, ofreciendo experiencias auténticas y respetuosas con el medio
ambiente.
Para ello se procederá al análisis interno y del entorno competitivo, a la elaboración de un plan de
marketing y operaciones para el complejo, así como un análisis financiero su viabilidad.
Finalmente se tendrá en cuenta aspectos como la creación de un plan de implantación en el que se
recogerán las diferentes fases para la puesta en marcha del complejo y un plan de contingencia con el
que hacer frente a las adversidades que se puedan dar en el ejercicio de la actividad.The objective of this Final Master Project is the creation and management of "Rincón del Chopo", a
rural resort located in La Revilla y Ahedo. The current growth of rural tourism, the population's
awareness of sustainable practices, and the concern for depopulated are the reasons driving this decision.
Rincón del Chopo aims to become a benchmark in sustainable rural tourism, offering authentic and
environmentally respectful experiences.
To achieve this, an internal and competitive environment analysis will be conducted, followed by the
development of a marketing and operations plan for the resort, as well as a financial analysis of its
viability.
Finally, aspects such as the creation of an implementation plan outlining the different phases for the
resort's launch and a contingency plan to address potential challenges in the operation of the activity
will be considered
Abordando la educación afectivo-sexual en el contexto escolar: experiencias y perspectivas desde la educación primaria
No full textEste trabajo de investigación se enfoca en la educación afectivo-sexual en el
contexto de la Educación Primaria, explorando las percepciones y experiencias de los y las
docentes. La justificación de este estudio radica en la importancia de la educación afectivosexual como componente fundamental del desarrollo social y personal de los y las
estudiantes. Los hallazgos revelan que los y las maestras enfrentan numerosos desafíos
para integrar estos contenidos en su práctica diaria debido a la falta de formación específica
y recursos, la resistencia de las familias y los tabúes culturales, entre otros. Para alcanzar
los objetivos del estudio, se empleó una metodología cualitativa. Así, se realizaron
entrevistas en profundidad con docentes de Educación Primaria para obtener una
comprensión detallada de las vivencias, creencias y desafíos enfrentados por los y las
profesoras al abordar la educación afectivo-sexual en el aula, así como identificar posibles
estrategias para fortalecer esta enseñanza en el ámbito escolar. Los resultados de la
investigación se alinean con estudios previos que enfatizan la importancia de una educación
afectivo-sexual bien estructurada y respaldada institucionalmente, la cual puede contribuir
significativamente al bienestar social, emocional y personal, y al desarrollo integral de los
y las estudiantes. Por último, las entrevistas realizadas ofrecen una visión profunda sobre
la complejidad y relevancia de este tema en el contexto actual, evidenciando la necesidad
de continuar investigando y promoviendo la educación afectivo-sexual en los ámbitos
académico, político y social para garantizar el bienestar y desarrollo pleno de todas las
personas.This research focuses on affective-sexual education in the context of primary
education, exploring the perceptions and experiences of teachers. The rationale for this
study lies in the importance of affective-sexual education as a fundamental component of
students' social and personal development. The findings reveal that teachers face numerous
challenges in integrating this content into their daily practice due to lack of specific training,
family resistance and cultural taboos, among others. In order to achieve the objectives of
the study, a qualitative methodology was used. Thus, in-depth interviews were conducted
with elementary school teachers to obtain a detailed understanding of the experiences,
beliefs and challenges faced by teachers when addressing affective-sexual education in the
classroom, as well as to identify possible strategies to strengthen this teaching in the school
environment. The results of the research are in line with previous studies that emphasize
the importance of a well-structured and institutionally supported affective-sexual
education, which can contribute significantly to the social, emotional and personal wellbeing and integral development of students. Finally, the interviews conducted offer a deep
insight into the complexity and relevance of this topic in the current context, evidencing
the need to continue researching and promoting affective-sexual education in the academic,
political and social spheres in order to guarantee the well-being and full development of all
people
Diseño y desarrollo de Barajeta: un juego tipo party
No full textLos juegos de mesa son una de las partes fundamentales de la sociabilización y el
entretenimiento en la historia de la humanidad. Para realizar este trabajo, cuyo principal objetivo
es realizar un juego de mesa desde la concepción de la idea hasta la creación de un prototipo
final, se llevará a cabo una investigación exhaustiva acerca de diversos aspectos que puedan
comprender este tipo de productos. Con todo ello, se pretende conocer en profundidad el
trabajo de elaborar un juego de mesa desde cero, comprendiendo su funcionamiento general y
la forma particular de crear su diseño con el objetivo de atraer al público y realizar un proyecto
exitoso.
Barajeta es un juego de mesa tipo party que ofrece diversión a través de diversas pruebas
presentadas por cuatro cerditos: Veloz, Fiestas, Sabio y Creativo. Los jugadores, por equipos,
deben acumular una cantidad de fichas de colores llamadas “jetas”, indicada en sus “barajetas”,
superando estos desafíos. El juego destaca por su diseño gráfico atractivo que combina
funcionalidad y diversión, creando una experiencia interactiva y entretenida ideal para compartir
con familiares y amigos.
Este Trabajo Fin de Máster se centra en el proceso de aprendizaje y creación de un juego de
mesa desde cero, abordando aspectos como la temática, mecánicas, reglas y diseño gráfico
de sus componentes. A lo largo del proyecto, se pretenden alcanzar diversos objetivos que
pasan por la creatividad, la recopilación de ideas y la aplicación de habilidades adquiridas
durante el Máster. Para ello, el diseño gráfico también será una parte esencial, buscando que
“Barajeta”, sea un juego de entretenimiento atractivo para el público, coherente y funcional.Boardgames are one of the fundamental parts of socialization and entertainment in the history
of humanity. To carry out this labour, whose main objective is to create a board game from the
conception of the idea to the creation of a final prototype, an exhaustive investigation will be
implemented on various aspects related to board games such as the history, the mechanics or
the different elements that may comprise this type of produces. With all this, the aim is to know
in depth the work of creating a board game from scratch, understanding its general operation
and the particular way of creating its design with the aim of attracting the public and carrying out
a successful project.
Barajeta is a party-style board game that offers fun through various challenges presented by
four main characters: Veloz, Fiestas, Sabio and Creativo (Speedy, Parties, Wise and Creative),
who are depicted as pigs. Players, in teams, aim to collect a specific number of colored tokens
called “jetas”, as indicated on their “barajetas” by successfully overcoming these challenges.
The game is distinguished by its attractive graphic design that seamlessly combines functionality
and entertainment, providing an interactive and enjoyable experience ideal for sharing with
family and friends.
This Master's Thesis focuses on the learning process and creation of a board game from scratch,
addressing aspects such as theme, mechanics, rules, and graphic design of its components.
Throughout the project, various objectives are aimed to be achieved, including fostering
creativity, gathering ideas, and applying skills acquired during the Master's program. Therefore,
graphic design will also be an essential part, aiming for "Barajeta" to be an attractive, coherent,

Smart polymers and smartphones for Betalain measurement in cooked beetroots
No full textBetalains in beetroots offer notable colouring properties and health benefits, including antioxidant, anti-inflammatory, hepatoprotective, and antitumorous activities. However, they degrade due to processing and storage conditions like temperature, pH, oxygen, and light-exposure. Traditional betalain determination methods are resource-intensive solid-liquid extractions. This study proposes a novel approach using a smart polymer to rapidly quantify betalains in processed beetroots. The polymer, containing N,N-dimethylaminoethyl methacrylate, selectively interacts with compounds like betalains. Characterization shows thermal stability over 250 °C and suitable mechanical properties. The film changes to colour upon interaction with betalains, allowing quantification via smartphone. The sensory polymer's efficacy was validated across 27 beetroot samples, showing no significant differences compared to traditional methods. Combining the smart polymer with a colour analysis app, “Colorimetric Titration,” provides a robust and efficient means of quantifying total betalains in beetroot puree, reducing the quantification time from 180 to 90 min, promising implications for routine food industry quality assessments.We gratefully acknowledge the financial support provided by all funders.
