    No full text
The incorporation of natural ingredients to food products as a source of bioactive compounds is currently an increasing trend for food companies. The purposes of this work were to study the physicochemical properties of microencapsulated propolis powder, and to research the potential beneficial effect of it on texture and sensory quality of sugar-free chewing gums. Propolis ethanolic extract was microencapsulated by spray-drying technology, using maltodextrin as carrier, protecting conceivable bioactivity. Morphology of propolis microparticles was evaluated using Scanning Electron Microscope (SEM) and showed homogeneous microparticles with different sizes and no cracks. Propolis powder showed low water activity, moisture and hygroscopicity, high amounts of Ca, P, and high values for antioxidant-related parameters. Propolis powder phenolics were analysed by HPLC-UV and HPLC-ESI-MS. Apigenin, gallic acid, CAPE, and galangin demonstrated the highest degree of encapsulation, providing antiradical activities. Propolis powder was incorporated in chewing gums at 5%, improving their texture and sensory properties

Dioxomolybdenum(VI)-catalyzed direct one-pot transformations of nitro compounds

    No full text

Rhamnogalacturonan–I pectin and derived oligosaccharides obtained from sugar beet pulp and discarded red beetroot: Characterization and comparative study of their antioxidant and prebiotic properties

    No full text
Rhamnogalacturonan–I (RG–I) pectin recovered from sugar beet pulp (SBP) and discarded red beetroot (DRB) were subjected to enzymatic hydrolysis to obtain pectooligosaccharides (POS). The hydrolysates with the highest amount of oligomer with a degree of polymerization from 2 to 6 were selected for a detailed characterization of the composition and the structure by MALDI-TOF MS and 1H NMR. The yields of pectin and POS products ranged from 32.7% (g DRB POS/g DRB) to 37.0% (g SBP Pectin/g SBP) with the POS content from 64.4% (DRB products) to 68.7% (SBP POS). A comparative study was conducted between SBP Pectin, SBP POS, DRB Pectin, DRB POS, and commercial prebiotics (inulin and fructooligosaccharides) for their antioxidant capacity and prebiotic potential. The results revealed the much higher antioxidant capacity of DRB products (DPPH: 176.8 μmol Trolox equivalent/g pectin and 162.5 μmol Trolox equivalent/g POS) over the other products. Both bacteria strains evaluated grew with all substrate products. DRB POS and inulin exhibited the highest maximum growth rate for Lactobacillus rhamnosus (0.25 and 0.26 h−1, respectively), whereas Bifidobacteria longum grew faster on DRB Pectin (0.89 h−1). The short chain fatty acids and lactate production were also measured. Highest concentrations arose using SBP products as substrates (125.3 mM for pectin and 115.7 mM for POS with Lactobacillus rhamnosus and 87.8 mM for pectin and 95.0 mM for POS with Bifidobacterium longum). The results demonstrated the potential applications of SBP and especially DRB products in the food industry due to their high antioxidant and prebiotic properties. The authors acknowledge the financial support from the Spanish Ministry of Science and Innovation (project PID 2020-115110RB-I00/AEI/10.13039/501100011033). Fractionation and refining of pectic oligosaccharides derived from onion skins through continuous feed diafiltration

    Get PDF
In this work, a diafiltration-based process was investigated for the recovery of pectic oligosaccharides produced by subcritical water hydrolysis from onion skin waste. Four tubular ceramic membranes from 100 to 1 kDa were selected based on the molecular weight of the different galacturonic acid species present in the onion skin hydrolysate. All these membranes showed high selectivity towards pectic oligosaccharides, with low retention for free galacturonic acid, monosaccharides, organic acids, and other impurities. The 50 and 100 kDa membranes completely retained pectic oligosaccharides with a molecular weight exceeding 80 kDa, accounting for approximately 30 % of the initial pectic oligosaccharides in the hydrolysate. However, the purification rate was significantly slower using the 50 kDa membrane due to the increased cake layer resistance. Furthermore, it was examined a fractionation/purification cascade involving sequential diafiltration stages using 100, 10, and 1 kDa membranes at 25 °C, TMP = 1 bar, and a crossflow velocity of 1.5 m s−1. Approximately 87 % of the initial pectic oligosaccharides were successfully recovered and purified in the retentates, highlighting their potential for diverse applications due to their narrow molecular weight distribution, while phenolic compounds and other valuable low molecular weight molecules were recovered in the final permeate. This work was supported by the Agencia Estatal de Investigación [grant numbers PID2020-116716RJ-I00 , PDC2022-133443-I00 , PID2022-136385OB-I00 ] and the Junta de Castilla y León (JCyL) and the European Regional Development Fund (ERDF) [grant number BU027P23 ].
