Consumer attitudes and perceptions towards chilled ready-to-eat foods: a multi-national study
Understanding consumers’ behavior and their handling of high-risk foods at home is essential for reducing the number of foodborne illnesses. This study shows the results of a cross-national analysis of consumers’ perception from nine countries, and the identification of customers’ clusters and its characteristics in order to understand customers’ behavior, and to build safe chilled ready-to-eat (RTE) foods prevention strategies. The cluster analysis resulted in two clusters: (1) “Precautious consumers” characterized by the orientation towards pre-packed RTE foods, with consumers mainly coming from Bosnia and Herzegovina, India, Poland, Portugal, Spain, and Turkey. Their attitudes and self-reported practices may be categorized as less risky in terms of food-borne illnesses connected with the consumption of RTE foods; (2) “Unconcerned consumers” preferred cutting and slicing RTE foods freshly at the point of purchase, usually sold at the delicatessen department in a supermarket or at open markets. Those consumers mostly came from Croatia, Serbia and Slovenia and their attitudes and self-reported practices were riskier. These results allow a better understating of what characterizes consumers of RTE foods in different countries
Optimization of Enzymatic Extraction of Melanoidins from Bread by-Products: Bioactivity and Microbiota Modulation

However, these by-products contain valuable bioactive compounds, such as melanoidins, which are brown pigmented compounds with significant antioxidant, antimicrobial and anti-inflammatory properties, making them ideal functional ingredient. This study aimed to evaluate the optimal enzymatic extraction of melanoidins from bread crust using different proteolytic enzymes: pronase E, serine-endo-protease (SP), metalloenzyme protease (MP) and endoprotease papain enzyme (EP). While the yield of melanoidins from MP and EP was lower than that of pronase E, SP yield was significantly higher. No cytotoxicity of bioaccessible, gastrointestinal and colonic fractions was observed in the cell lines Caco-2, HUVEC and SHSY5Y. The antioxidant properties and ability to stabilize the hydroxyl radical were characterized in bioaccessible fractions of the four melanoidins extracts. Moreover, melanoidins positively influenced the intestinal microbiota by increasing beneficial bacteria like Bifidobacterium and Lactobacillus, while reducing non-beneficial bacteria such as Bacteroides spp. and Clostridium leptum, with particularly significant results for SP and EP enzyme extracts. In conclusion, SP and EP enzymes appear to be viable alternatives to pronase E for obtaining melanoidin extracts as functional ingredients. These enzymes offer potential cost advantages and contribute to the sustainable utilization of bakery by-product melanoidins in various food applications. Mechanical strength and environmental sustainability of EAF concrete

In this context, the possibility of including metallurgical slags in concrete has been explored by several research works, among them it is worth citing the ones carried out in the last 15 years by the research groups of the University of Padova, University of Burgos and University of Basque Country. In this contribution, a review of the main features of Electric Arc Furnace slag (EAF) concrete is made, focusing on the improvements observed in the properties of this concrete compared to the reference realized with natural aggregates only. Furthermore, two examples of real-scale applications in reinforced concrete (RC) structures are shown. Análisis estratégico, seguimiento e implementación de un sistema de mejora de los objetivos de la empresa mediante OKR
En el siguiente trabajo se va a llevar a cabo un seguimiento de las penalizaciones por
falta de calidad a los proveedores, la cual trata de comprobar, solicitar y tener en cuenta
el estado en el que se encuentran estos avisos por falta de calidad. Esta acción se llevará
a cabo en una hoja de cálculo de Excel en la trabajaremos con los datos obtenidos en
ERP de la empresa. En esta se obtendrá el estado actual de la penalización frente al
aviso al proveedor que ha cometido dicho fallo, y nos permitirá obtener la información
abreviada para la elaboración de informes o la revisión de una forma rápida y eficaz.
Una vez elaborada esta hoja de cálculo haremos una revisión de los distintos meses en
los que hemos hecho este seguimiento y lo compararemos finalmente con el episodio
anterior. Previamente se tratarán temas teóricos como la alineación de objetivos del
departamento y la forma de llevar a cabo el seguimiento mediante OKR.In the following work, a follow-up of the penalties for lack of quality to suppliers will

these notices are found due to lack of quality. This action will be carried out in an Excel
spreadsheet in which we will work with the data obtained in the company's ERP. This
will obtain the current status of the penalty against the notice to the provider that has
committed said failure, and will allow us to obtain the abbreviated information for the
preparation of reports or the review in a fast and efficient way. Once this spreadsheet
has been prepared, we will review the different months in which we have carried out
this monitoring and finally compare it with the previous episode. Previously, theoretical
topics such as the alignment of the department's objectives and how to carry out the
follow-up through OKR will be discussed
Características sociodemográficas, clínicas, epidemiológicas, funcionales y de calidad de vida de pacientes con COVID-19 y COVID persistente
Se ha descrito una nueva afección con efectos a largo plazo, el COVID persistente, que incluye
una amplia variedad de problemas crónicos de salud con una duración indeterminada. Sin
embargo, aún falta evidencia científica de su influencia sobre la población general y sanitaria.
Además, en términos de funcionalidad, el COVID persistente está teniendo un impacto
importante en la capacidad de las personas para la realización de sus actividades diarias y
mantener un estilo de vida activo, experimentando limitaciones físicas que están repercutiendo
sobre su calidad de vida.
Esta investigación busca identificar las características sociodemográficas, clínicas,
epidemiológicas, el estado funcional y la calidad de vida de la población contagiada por COVID19 y la población con COVID persistente. Para ello se ha contado con un total de 2.349
participantes de toda España.
Como resultado de los análisis se ha encontrado que la hospitalización, el ingreso en UCI y los
antecedentes de neumonía son factores predictores positivos de algunos síntomas de COVID
persistente. Además ha demostrado un peor estado funcional, menor nivel de actividad física,
mayor severidad de fatiga y peor calidad de vida en pacientes con COVID persistente.
Esta tesis proporciona información útil acerca de las características sociodemográficas, clínicas,
epidemiológicas, del estado funcional, nivel de actividad física, fatiga y calidad de vida de
pacientes con COVID-19 y COVID persistente tanto en población general como en el personal
sanitario de AP.Four scientific articles make up the present doctoral thesis, titled “Sociodemographic, clinical, epidemiological, functional, and quality of life characteristics of patients with COVID-19 and persistent COVID", which follows the modality of compilation of publications. Derived from the acute illness caused by COVID-19, a new condition with long-term effects, known as persistent COVID, has been described. This condition includes a wide variety of chronic health problems of indeterminate duration that affect all bodily organs and systems. However, although new data on clinical and epidemiological characteristics have been incorporated, the majority of these have been on hospitalized cohorts, so there is still a lack of scientific evidence addressing how these may influence the onset of different symptoms in the general population. It should be added that healthcare professionals have been one of the groups most affected by this health condition, and it is necessary to further analyze their clinical and epidemiological profile in-depth. Additionally, in terms of functionality, persistent COVID is having a significant impact on people's ability to carry out their daily activities and maintain an active lifestyle, experiencing physical limitations that are affecting their quality of life. With the aim of identifying the sociodemographic, clinical, epidemiological characteristics, functional status, and quality of life of the population infected with COVID-19 and the population with persistent COVID, two cross-sectional studies were carried out. One focused on the analysis of the clinical and epidemiological profile of the general population and primary care health personnel, as well as the factors that predict persistent COVID. The other study examined the functional status, level of physical activity, fatigue, and quality of life in patients with COVID-19 compared to those with persistent COVID
Estudio de modificadores ambientales epigenéticos asociados a la progresión de la Enfermedad de Huntington, y su relación con la apatía. Aplicaciones socioeducativas prácticas para la terapia ocupacional
La presente tesis doctoral titulada “Estudio de modificadores ambientales epigenéticos asociados a la progresión de la Enfermedad de Huntington, y su relación con la apatía. Aplicaciones prácticas para la terapia ocupacional”, sigue la modalidad de compendio de publicaciones. La enfermedad de Huntington (EH) es una enfermedad neurodegenerativa autosómica dominante, caracterizada por la progresión de los síntomas motores, deterioro cognitivo y aparición de síntomas neuropsiquiátricos. El curso clínico de esta enfermedad presenta un comienzo insidioso en la edad adulta, generalmente en torno a los 40 años, con un diagnóstico curso de 15-20 años hasta la muerte. Cabe señalar que las personas no fallecen como consecuencia directa de la EH, sino por problemas médicos subyacentes. Se conoce que, diferentes factores como son la actividad física, el sueño o la dieta, influyen en la progresión de la enfermedad. Por esto, el objetivo principal es evaluar la influencia de los modificadores ambientales sobre factores intrínsecos en la progresión de la EH y su relación con la apatía.This PhD entitled "Study of epigenetic environmental modifiers associated with the progression of Huntington's disease, and its relationship with apathy. Huntington's disease (HD) is an autosomal dominant neurodegenerative disease, characterised by the progression of motor symptoms, cognitive impairment and the appearance of neuropsychiatric symptoms. The clinical course of this disease has an insidious onset in adulthood, usually around the age of 40, with a diagnostic course of 15-20 years until death. It should be pointed out that people do not die as a direct consequence of HD, but from underlying medical problems. Different factors, such as physical activity, sleep and diet, are known to influence the progression of the disease. Therefore, the main objective is to assess the influence of environmental modifiers on intrinsic factors in HD progression and their relationship with apathy
