    Estratégias de Redução e/ou Substituição do teor de NaCl/Na em Conservas de Atum

    A conserva de peixe é um produto muito produzido em Portugal para exportação, mas também para consumo dos portugueses. O leque de peixes produzidos em conserva é muito variado, mas o atum está entre os mais populares. Várias espécies são capturadas e processadas, sendo a Katsuwonus pelamis uma das mais comuns no mercado atual. Este tipo de processamento integra alguns ingredientes, entre os quais o sal comum (NaCl). Vários estudos indicam uma correlação entre o consumo excessivo de sal e o surgimento de doenças cardiovasculares, entre outras, levando, inclusive a que a sua redução em matrizes alimentares se tornasse um objetivo da Organização Mundial da Saúde. Neste sentido, o foco deste trabalho de investigação foi i) desenvolver conservas de atum em óleo com um teor reduzido de NaCl/Na utilizando duas estratégias diferentes (50% e 100% de substituição de NaCl por cloreto de potássio (KCl) e hidrolisado proteico comercial, 50 mg/mL; numa salmoura a 7%); ii) avaliar o efeito dessas substituições nas propriedades físico-químicas e sensoriais das conservas; bem como iii) analisar a sua estabilidade e esterilidade para a comercialização dos produtos. Observou-se que as substituições de 50% e 100% de NaCl por KCl e hidrolisado proteico aparentam ser soluções eficazes para reduzir o teor de sódio permitindo, em ambos os casos, uma redução de cerca de 30% e 48%, respetivamente. Adicionalmente, foi possível aumentar o teor de potássio 43% e 79%, respetivamente, no caso das formulações com 50% e 100% de KCl. As conservas estavam estáveis e estéreis. De uma forma geral, as outras propriedades químicas, físicas e sensoriais avaliadas, bem como a aceitabilidade global dos protótipos de atum não foram afetados pelas formulações testadas.Canned fish is a product widely produced in Portugal for export, but also for Portuguese consumption. The range of canned fish is very varied, but tuna is among the most popular. Several species are captured and processed, being Katsuwonus pelamis one of the most common on the current market. This type of processing integrates some ingredients including common salt (NaCl). Several studies indicate a correlation between excessive salt consumption and the diagnosis of cardiovascular diseases, among others, making its reduction in food matrices a goal of the World Health Organization. In this sense, the aim of this research work was i) to develop canned tuna in oil with a reduced NaCl/Na content using two different strategies (50% and 100% replacement of NaCl by potassium chloride (KCl) and commercial protein hydrolysate, 50 mg/mL; in a 7% brine; ii) evaluate the effect of these substitutions on the physicochemical and sensorial properties of the prototypes; as well as iii) analyse their stability and sterility for the commercialization of the products. It was observed that replacements of 50% and 100% of NaCl with KCl and protein hydrolysate appear to be effective solutions to reduce sodium content, allowing, in both cases, a reduction of around 30% and 48%, respectively. Additionally, it was possible to increase the potassium content by 43% and 79%, respectively in the case of formulations with 50% and 100% of KCl. The products were commercially stable and sterile. In general, the chemical, physical and sensory properties evaluated, as well as the overall acceptability of the tuna prototypes were not affected by the tested formulations.Este trabalho foi desenvolvido no âmbito do "Pacto da Bioeconomia Azul" (Projeto Nº.     A Meta-Analysis for AI in the Sector of Healthcare

    Dissertation presented as the partial requirement for obtaining a Master's degree in Data Science and Advanced Analytics, specialization in Data ScienceThe integration of Artificial Intelligence (AI) in healthcare has the potential to revolutionize patient care, but its adoption is influenced by different factors. This study aimed to analyze different studies related to how individuals felt about the use of AI in the healthcare sector. A meta-analysis combined with a weight analysis was performed between 21 studies published between 2020 and 2024. This study revealed that the strongest constructs were between trust in AI on openness, understanding of AI on readiness to embrace AI and trust in AI on advantages. Practical implications of this research suggest that healthcare organizations should focus on building trust, enhancing understanding, and highlighting the advantages of AI to promote its adoption. Promoting better training and educational programs based on demographic variables such as age, working experience, and education can increase awareness and comfort with AI technologies among healthcare professionals. Healthcare organizations can use the insights from this study to develop effective strategies for promoting AI adoption within their specific contexts. Further research is recommended to explore additional factors influencing AI adoption in diverse healthcare settings

Recently, when we faced less and less of an increase in IT productivity, chats with generative artificial intelligence have become increasingly popular, gaining prominence and democratizing access to machine learning systems. This technological revolution can change the market and bring fairer conditions of competition and working conditions for classes of professionals such as self-employed professionals, who grow more in times of economic vulnerability. This study proposes a theoretical model based on the extended unified theory of acceptance and use of technology (UTAUT2), to examine which factors influence the adoption of generative artificial intelligence (GAI) chats in the work routine by independent professionals. The objective is to understand the intentions to adopt GAI by self-employed professionals and recommend it to peers, considering the constructs from the Information Systems Success Model (ISSM), Data collected from 79 individuals were used to test the research model. The findings showed that individuals, despite the professional context of the research, are motivated by facilitating conditions and hedonic motivation for the adoption and use of artificial intelligence in their work context, followed by a strong relationship of habit with use behavior. This study provides insights for researchers, marketing professionals and public policy professionals interested in the relationship between technological advances and fairer working conditions

It marks a contrast to the stagnation observed in the Western luxury market. This trend underscores the growing importance of the Chinese luxury market, driven by a high demand for Western luxury brands. These brands are celebrated for their rich heritage, craftsmanship, and quality. This paper examines the success factors for Western luxury brands in China. Incorporating evidence from a mix of literature reviews, interviews, surveys, and statistics, the study explores the current dynamics of the Chinese luxury market. It highlights the critical need for Western luxury brands to deeply understand and adapt to the diverse and rapidly evolving Chinese luxury market and local consumer preferences. This study aims to analyze the impact of social media influencers on the decision-making process when choosing a tourist destination. This research aims to assess the impact of credibility, namely characteristics such as expertise, trustworthiness, and attractiveness, and their influence on the consumer concerning the tourism sector. A quantitative analysis was carried out using a questionnaire, which included a sample of 112 respondents from different age groups. The results show that despite the growing power of SMIs, the likelihood of visiting a tourist destination based on the content they post on social media is still a reticent trend for some consumers. However, a feeling of similarity to an SMI can more easily influence the consumer, as can the credibility of the SMI, which is the factor consumers seek. The results presented have relevant implications for the study and the impact of SMIs on choosing a travel destination

Live sports broadcasts have become increasingly popular and offer a unique opportunity for companies to reach their audience in a unique environment, which allows the automatic processing of brand messages. These types of broadcasts possess an exceptional emotional intensity, as the unpredictability of the final results can incite strong emotional reactions in viewers. However, it has become increasingly challenging for broadcasters and media owners to accurately gauge the level of emotional involvement of a viewer. To address this issue, the present study aims to monitor continuous viewer data through psychophysiological data points, such as galvanic skin response (GSR) and declarative post-event answers. The goal is to determine the correlation between game outcome uncertainty, viewers' emotions, and their attention to transmission highlights during live sports viewership. This will help to gain insights into the emotional responses of viewers during major sports events, particularly concerning GSR, which is an effective indicator of emotional arousal. Moreover, this study will explore viewers' interactions with ads and brand recall after the broadcast. By measuring GSR using third-party data, the research will provide a more in-depth understanding of consumer emotions during the airtime of each program. Additionally, it aims to assess the effectiveness of sponsorships and determine the return on advertising investment for brands. Overall, the study will provide valuable insights into the emotional experiences of viewers during live sports broadcasts, and how advertisers can effectively connect with their audience. The findings will be useful for broadcasters and media owners, as well as for brands looking to create more effective and engaging advertising strategies
