    Donkey meat and milk as part of human diet – quality, nutritional characteristics and obstacles

    Donkeys have long been recognised for their significant contribution as working animals throughout history. Their strength, endurance, and adaptability have made them indispensable in agricultural and transport settings across various cultures. In recent years, there has been a notable shift in how donkeys are perceived, with increasing attention being paid to their roles in the production of both milk and meat. This change reflects a growing awareness of the nutritional and economic benefits associated with donkey-derived food products. Donkey meat is characterized by a low content of fat and cholesterol, and a high content of protein and iron, as well as a favourable fatty acid profile, which makes it a good alternative to conventional types of meat. Donkey milk is characterized by high digestibility, low fat content, high lactose content, a favourable ratio of saturated and unsaturated fatty acids, as well as the presence of bioactive substances or compounds with an antimicrobial effect. The quality of donkey meat and milk can be affected by many factors such as breed, age, diet, season and stage of lactation. Although numerous positive effects on the health of consumers have been established, the production and consumption of donkey meat and milk is still much smaller compared to the meat and milk of other animal species. One of the primary obstacles hindering the broader adoption of donkey meat and milk as part of human diet is the current level of consumer awareness. Many consumers lack sufficient knowledge regarding the benefits and qualities of donkey products, which in turn limits both demand and acceptance in the market. By actively increasing public awareness about the nutritional value and potential advantages of donkey meat and milk, it is possible to stimulate greater interest among consumers. Despite the growing interest of the scientific public, the need for further research still exists, as well as the need for the promotion of sustainable donkey breeding and the adoption of legal regulations aimed at quality control of donkey meat and milk.Book of abstract

    Primena biotehnoloških rešenja u proizvodnji mesa obogaćenog selenom

    Hrana se u novije vreme ne posmatra samo sa stanovišta potrebnog unosa za pravilan rast, razvoj i regeneraciju organizma, već ima vodeću ulogu u kvalitetu života čoveka. Zbog toga se ishrana fokusira na optimizaciju dnevnog unosa, kako nutrijenata tako i nenutrutivnih sastojaka hrane, a sve u cilju očuvanja zdravlja i, pre svega, smanjenju rizika od pojave hroničnih nezaraznih bolesti. U ishranu ljudi uvedeni su proizvodi animalnog porekla, pre svega meso i mleko, koji su usled specifičnog načina ishrane životinja obogaćeni n-3 masnim kiselinama, vitaminima, karotenoidima ili mikroelementima. Brojnim istraživanjima je pokazano da se ishranom brojlera povećanim količinama organskog selena može uticati na povećanje sadržaja selena u mesu brojlera. Selenom obogaćeno meso, može da utiče na optimizaciju ishrane ljudi unošenjem preporučenih količina ovog mikronutrijenta, naročito u selen-deficitarnim područjima. U cilju ispitivanja uticaja različitih izvora selena i različitih količina vitamina E u ishrani brojlera na kvalitet mesa i prinos mesa, organizovan je ogled po grupno-kontrolnom sistemu u eksperimentalnom odeljenju Fakulteta veterinarske medicine u Beogradu. Za ogled je korišćeno 240 jednodnevne piladi Cobb 500 provenijencije podeljenih u četiri jednake grupe, a ogled je trajao 42 dana. Svaka grupa je dobijala različite količine organskog i neorganskog selena i vitamina E. Cilj ogleda bio je povećanje sadržaja selena u krvi i tkivima brojlera putem hrane što se direktno odražava na kvalitet života potrošača. Na kraju tova, 42. dana, sadržaj selena u mesu grudi brojlera kretao se od 0.34 mg/kg do 0.43 mg/kg. Koncentracija selena je kod O-III grupe bila značajno (p<0.01) viša u odnosu na grupu koja je dobijala neorganski oblik selena, odnosno kontrolu. Koncentracija selena u jetri brojlera iznosila je na kraju ogleda (42. dan) od 0.50 do 0.63 mg/kg i bila značajno (p<0.01) viša u odnosu na kontrolnu grupu.Zbornik radov

    Welfare assessment of farm animals in Serbia

    In 2009, Animal Welfare Act has been passed in Serbia. Since then, people who raise animals have become more aware of the importance of animal welfare and the need to meet their mental and physical welfare. However, field research shows that many factors still influence the welfare of farm animals. The aim of this study was retrospective analysis of welfare assessment of farm animals in recent years in Serbia. Farm animal welfare was evaluated using the Welfare Quality® protocol for poultry and cows, and AWIN protocol for sheep, goats and donkeys. In the research conducted during the winter season 2019/2020, on four rearing systems of 400 Lohman Brown laying hens was determined that hens in cage systems had the significantly (p<0.001) higher prevalence of poor plumage condition, and skin lesions than hens in other systems. Keel bone deformation was the most present in the aviary system. Laying hens in cage systems have a higher expression of negative emotions in relation to the aviary and free-range system. In the research of 131 native goat breads in 2019 was determined that the main welfare issues identified were poor hair coat condition, dirty and light soiling hindquarters, thin body condition score (BCS), abscesses, and udder asymmetry. In addition, an important and prevalent welfare problem identified across all farms was parasite infection and weak significant (p<0.001) correlation between Strongylidae, Moniezia spp., Buxtonella sulcate, and Protostrongylidae, and poor hair coat condition and nasal discharge. Results from assessed welfare of 82 native sheep breed Vlašićka zackel in 2022 showed that the main welfare issues identified were fleece cleanliness, nasal discharge, ocular discharge, respiratory problems, thin BCS, fleece quality, borderline anemia, and parasitological infections. Weakly significant (p<0.05) correlation were found between Buxtonella sulcata, Protostrongylidae, and nasal discharge and borderline anemia. In the research conducted in 2024 on 45 Holstein-Friesian cows was determined that cows in the pasture-based system had significantly higher scores for dirtiness (p<0.001), while those in tie stalls showed more integument alterations and lameness (p<0.001, p<0.05). Loose-housed cows had higher nasal discharge scores (p<0.001). Significant correlations (p<0.001) were found between certain welfare indicators and parasite infections, such as a low body condition score with Eimeria oocysts and nasal discharge and hairless patches with Buxtonella sulcata and Dicrocoelium dendriticum. Research from assessed welfare of 160 Balkan donkeys in 2025 showed that main welfare problems were thin BCS, hair loss, skin lesions, poor hair coat condition, ocular and nasal discharge, respiratory problems and fecal soiling. A significant correlation (p<0.001) was found between the presence of Parascaris equorum and fecal soiling, and strongylids and thin body condition score, nasal discharge, and hair loss. It is clear from these results that in Serbia, farm animal welfare is still compromised, especially for animals kept in conventional cages or tie-stall systems. Animal welfare should be an important aspect of farming, and veterinarians need to disseminate knowledge to animal handlers and farmers to minimize the occurrence of impaired welfare and infections

    Structural and pigmentary characteristics of the skin in hairless dog breeds

    The skin of hairless dog breeds exhibits distinct structural and pigmentary adaptations that compensate for the absence of a protective hair coat. Despite lacking hair, their body surface and core temperatures remain comparable to those of coated dogs. The epidermis of hairless breeds is notably thicker, serving as a compensatory barrier that protects against overheating and excessive cooling. Melanin plays a crucial role not only in pigmentation but also in thermoregulation and antioxidant defense. Genetic mechanisms governing pigmentation involve complex interactions between multiple loci (E, A, B, C, and K), which regulate the production and type of melanin. Hairlessness itself is a dominant genetic trait associated with specific mutations—particularly in the FOXI3 gene—which affect the development of hair, teeth, and other ectodermal structures. However, in the American Hairless Terrier, hairlessness is governed by a different, non-lethal genetic mechanism that does not affect dentition. These findings underscore the intricate interplay between structural adaptation, pigment synthesis, and genetic control that enables hairless dog breeds to maintain physiological balance and effective protection despite the absence of coat

    Specifičnosti primene lekova kod preživara

    Poznato je da kod različitih vrsta životinja, lek primenjen u istoj dozi, izaziva različit intenzitet delovanja, a nekada čak i potpuno (u kvalitativnom smislu) drugačiji efekat. Prilikom lečenja životinja, glavni izazov za doktore veterinarske medicine, nije izbor samog leka, već određivanje racionalnog režima doziranja za izabrani lek koji uključuje veličinu doze, interval doziranja, trajanje lečenja i način primene leka. Utvrđeno je da na režim doziranja nekog leka, kod određene životinjske vrste, može uticati, ne samo priroda i intenzitet bolesti, već i niz drugih faktora, kao što su: anatomske, biohemijske i fiziološke karakteristike, kao i ponašanje životinje. Primena lekova kod preživara (u odnosu na monogastrične životinje), ima svoje specifičnosti, naročito kada je u pitanju peroralni način aplikacije u cilju postizanja sistemskog efekta. Osim toga, cilj ovog rada je da ukaže i na neke specifičnosti (pre svega drugačiji i brži metabolizam) kod koza, koje uslovljavaju drugačije doze i doziranje lekova kod ovih životinja. Ovo je važno zbog toga što većina proizvođača lekova, u svojim uputstvima preporučuje iste doze lekova za ovce i koze. Brojni autori smatraju da se doze lekova preporučene za ovce ili goveda ne mogu prosto ekstrapolirati, odnosno primeniti kod koza.Zbornik predavanj

    Biosigurnosne mere kao faktor prevencije slinavke i šapa u farmskom uzgoju životinja

    Slinavka i šap (FMD) predstavlja visokokontagioznu virusnu bolest papkara koja izaziva velike ekonomske gubitke u farmskoj proizvodnji. Zbog brzog širenja virusa, naročito u uslovima intenzivne proizvodnje, primena biosigurnosnih mera postaje ključna u prevenciji širenja i kontroli ove bolesti. Ovaj rad razmatra ulogu eksternih i internih biosigurnosnih mera, sa posebnim akcentom na sanitaciju objekata i opreme, uključujući mehaničko čišćenje, sanitarno pranje i dezinfekciju proverenim dezinficijensima u odgovarajućim koncentracijama i uz propisano vreme ekspoziije. U svrhu dezinfekcije, pored hipohlorita, natrijum-hidroksida i organskih kiselina, naglašava se i važnost primene savremenih dezinficijenasa nove generacije. Pored toga, analiziraju se zakonski okviri, uloga edukacije farmera i značaj kontrole kretanja ljudi i životinja. Takođe, akcenat je stavljen i na važnost postojanja pisane evidencije i nadzora u cilju provere efikasnosti, čime se značajno doprinosi sprečavanju širenja FMD virusa u farmskom uzgoju stoke.Zbornik radova i kratkih sadržaj

    Povrede oka i urgentna oftalmološka stanja

    Urgentna oftalmološka stanja kod pasa i mačaka predstavljaju izazov u veterinarskoj medicini zbog potrebe za brzom dijagnostikom i intervencijom (terapijom – hirurškom i/ili medikametoznom) radi očuvanja vida i kvaliteta života pacijenata. Ova stanja obuhvataju traume oka, proptozu, ulceracije i povrede rožnjače, akutni glaukom, uveitis, hifemu, patologije sočiva, prisustvo stranog tela i pojavu iznenadnog slepila. Klinički znaci variraju u intenzitetu i uključuju proptozu bulbusa, blefarospazam, otok, crvenilo i rane kapaka, hiperemiju konjunktiva, epiforu, edem, ulkus i rane rožnjače, zamućenje prednje očne komore – tyndall efekat, prisustvo krvi i/ili gnoja u prednjoj očnoj komori (Hyphema, Hypopyon), miozu i midriazu, luksacije i povrede sočiva, vitrealna krvarenja, lezije, krvarenja i ablacije retine, slabljenje i gubitak vida. Detaljan oftalmološki pregled je neophodan, a pored standardnih metoda trebalo bi da uključuje i merenje intraokularnog pritiska (različitim metodama), uzimanje brisa konjunktive, rožnjače i rane (eventualno) za mikrobiologiju i/ili citologiju, kao i dodatne - dopunske metode kao što su ultrazvuk, rendgen, CT i MRI u složenijim slučajevima. Terapijski pristup može biti konzervativan (topikalna i sistemska terapija) ili hirurški, u zavisnosti od prirode i težine stanja. Na primer, proptoza zahteva hitnu repoziciju oka, dok ulceracije rožnjače zahtevaju antibiotsku, antiinflamatornu i ponekad hiruršku terapiju. Glaukom i uveitis zahtevaju brzu stabilizaciju intraokularnog pritiska i kontrolu inflamacije. Prognoza zavisi od pravovremenosti reakcije i etiologije stanja. Pravovremena dijagnoza, adekvatna terapija i razumevanje patofiziologije ključni su faktori za očuvanje vida i kvaliteta života kod malih životinja. Ovaj rad pruža pregled najčešćih urgentnih stanja oka, njihovih kliničkih manifestacija i dijagnostičko-terapijskih pristupa u savremenoj veterinarskoj oftalmologiji.Zbornik radova i kratkih sadržaj

    Maksimumi specifične aktivnosti cezijuma-137 u vazduhu: Region Bivše Jugoslavije 2008–2023.

    Fisioni produkt cezijum-137 važan je pokazatelj radioaktivnog zagađenja životne sredine. U ovom radu, posmatrani su maksimumi u vremenskim serijama specifične aktivnosti ovog radionuklida od juna 2008. do decembra 2023. godine na sedam lokacija u regionu Bivše Jugoslavije: Beograd (Srbija), Zagreb (Hrvatska), Ljubljana i Krško (Slovenija), Podgorica (Crna Gora), Skoplje i Bitolj (Severna Makedonija). Na svakoj lokaciji, za merenja iznad minimalne detektibilne aktivnosti, određena je vrednost 90-og percentila, a potom i “maksimumi” kao vrednosti veće od tog percentila. Maksimumi specifične aktivnosti cezijuma-137 uglavnom se javljaju tokom hladnih meseci (novembar–februar) kao posledica zagađenja koje raste u sezoni grejanja i sa specifičnim meteorološkim uslovima. Ipak, na svim lokacijama osim Ljubljane, uočen je bar po jedan maksimum u periodu april–septembar. Takva dva maksimuma, u avgustu 2013. i avgustu 2022. godine, poklapaju se sa prisustvom pustinjskog peska u vazduhu nad ovim regionom.Zbornik radov

    The optimization of the real-time PCR protocol for the detection of Salmonella - Detection of Salmonella Enteritidis and Salmonella Typhimurium

    Salmonella Enteritidis and S. Typhimurium are epidemiologically significant serotypes, and their rapid detection is of great importance from a public health perspective. During this study, the real-time PCR protocol for detecting S. Enteritidis and S. Typhimurium was optimized, and the molecular characterization of 60 isolates of S. Enteritidis and 60 isolates of S. Typhimurium from food, animal feed, and poultry feces was performed. The optimization of the real-time PCR protocol for detecting the safA gene of Salmonella Enteritidis and the fliA-IS200 gene of S. Typhimurium in chicken meat and poultry neck skins was successfully completed. A 100% agreement was achieved between the alternative and standard methods, with a sensitivity of 1–10 cfu/25 g of sample. By comparing two different methods of DNA extraction for Salmonella spp., lower Cq values were obtained after the procedure using the commercial preparation "InstaTM Gene matrix (BioRad, USA)" than with the thermal lysis-based procedure. The typing of 60 Salmonella Enteritidis isolates and 60 S. Typhimurium isolates using the real-time PCR protocol for detecting the safA gene of S. Enteritidis and the fliA-IS200 gene of S. Typhimurium showed that the selected sequences are specific for the serotypes being examined

    Uticaj sezone na rezultate veštačkog osemenjavanja ovaca

    U ovom radu upoređeni su rezulati osemenjavanja Ile de France ovaca na farmi od 2 000 priplodnih jedinki (dominantno šilježica), u intenzivnom sistemu držanja. Izabrani su period bliski vrhuncu polne aktivnosti (od jula do septembra; ukupno 890 osemenjavanja ) u odnosu na period manje polne aktivnosti (od februara do marta; 714 osemenjavanja). Prvo osemenjavanje je bilo laparoskopsko (LVO), a zatim je ovan pripuštan nakon 5 dana, kao korektor, u trajanju od 20 dana, sa ciljem otkrivanja prvog narednog ciklusa. Ultrazvučna dijagnostika graviditeta je sprovođena 45-60 dana nakon osemenjavanja, kada se, na osnovu veličine ploda i pripadajućih struktura, nedvosmisleno mogu razlikovati graviditeti postignuti nakon LVO ili nakon pripusta ovna. Na vrhuncu polne aktivnosti postignuta je koncepcija kod 649 jedinki nakon osemenjavanja (72,92%), a 98 od ovna, pri sledećem polnom ciklusu (15,10%). Tako je postignuta ukupna sjagnjenost od 83,93% (747 sjagnjenih jedinki). U postupku osemenjavanja van polne aktivnosti, postignuta je koncepcija nakon osemenjavanja kod 483 jedinke (71,86%), a 27 ovaca je koncipiralo od ovna pri sledećem polnom ciklusu (4,04%). Postignuta je ukupna sjagnjenost od 77,17% (551 jedinki). Kao zaključak se nameće da u dobrim uslovima gajenja ovaca, tehnika LVO je prihvatljiva i poželjna mera, posebno u kategoriji šilježica gde je period ulaska u prve estruse nepredvidljiv, kao što je to u vansezonskom periodu.Zbornik predavanj
