No full textInternational audienceAuberges, bouillons, cafés, brasseries, bistrots, « étoilés »… Plongez au cœur de dix siècles d’une histoire savoureuse : celle du Paris culinaire.Paris est incontestablement la capitale de la gastronomie. Mais qui sait comment cette réputation s’est construite année après année ? Comment se sont progressivement créés les restaurants et les meilleures tables ? Pourquoi les plus grands chefs ont-ils été attirés par cette ville ? Dès le Moyen Âge, la ville est un grand centre de consommation et un important marché alimentaire. Alors que les halles centrales symbolisent le « ventre de Paris », un artisanat de bouche raffiné s’y développe progressivement. À l’orée de la Renaissance, la capitale est perçue comme une cité de cocagne et donne le ton du bien manger et du bien boire. Elle devient vite le lieu des débats et des révolutions culinaires : on y intellectualise la cuisine, on y crée une nouvelle littérature gourmande, on y invente le restaurant. Petit à petit, l’art de la « bonne chère » est érigé en dogme et Paris devient la capitale mondiale des gourmets. Désormais cosmopolite et dotée d’un rayonnement international, la Ville Lumière est à la pointe de l’innovation : après avoir fait émerger la « nouvelle cuisine » dans les années 1970 et la bistronomie au cours des années 2000, elle réinvente et modernise la gastronomie (grâce aux food trucks et autres « prêts à manger ») depuis les années 2010. Des premiers « petits pâtés » à la parisienne achetés à des marchands ambulants à la création d’institutions iconiques (Le Dôme, La Coupole, La Closerie des Lilas, etc.) en passant par l’invention des célèbres « bouillons parisiens », cet ouvrage basé sur une recherche approfondie et inédite nous offre l’histoire riche et méconnue d’un Paris gourmand

No full textInternational audienceLe vélo émancipe, mais peut-être pas automatiquement ou pas dans n’importe quelles conditions.Alors, pour mieux comprendre comment il pourrait le faire, nous l'avons placé, avec tout son écosystème, dans un champ plus large, dans un système où il est sans doute un maillon fort mais peut-être pas le maillon essentiel.Après avoir interrogé le sens des mots, à savoir émancipation, mobilité, inclusion et durabilité, nous avons vu que le vélo pouvait nous émanciper de l’omniprésence de la voiture et plus largement de l’automobile. Et si cela ne suffisait pas, et si le vélo pouvait ou devait avoir d’autres ambitions : A-t-il les moyens de transformer, d’amener une autre manière de considérer la mobilité, l’inclusion, l’environnement et peut-être même la qualité de vie ? Dans cette perspective, quelle place est laissée à un processus essentiel mais souvent dénaturé ou oublié, à savoir l’éducation
The Role of Political Stability in the Context of ESG Models at World Level
No full textIn this article, we estimate the role of Political Stability and Absence of Violence and Terrorism-PS in the context of Environmental, Social and Governance-ESG data at world level. We analyse data from 193 countries in the period 2011-2020. We apply Panel Data with Fixed Effects, Panel Data with Random Effects and Pooled Ordinary Least Square-OLS. We found that PS is positively associated, among others, to Population Density and Government Effectiveness, and negatively associated, among others, to Research and Development Expenditure and Maximum 5-day Rainfall. Furthermore, we apply the k-Means algorithm optimized with the application of the Elbow Method and we find the presence of four clusters. Finally, we propose a confrontation among eight different machine-learning algorithms for the prediction of PS and we find that the Polynomial Regression shows the higher performance. The Polynomial Regression predicts an increase in the level of PS of 0.25% on average for the analysed countries
La Protection judiciaire de la jeunesse face à la scolarité des mineur·e·s sous main de justice: Un travail intermittent sur une question marginalisée
No full textInternational audienceWhat does the involvement of Youth Protection and Juvenile Justice (Protection judiciaire de la jeunesse [PJJ]) mean for the education of the young people it oversees ? Drawing on qualitative research based in two open educational centres of the PJJ, 42 days of observation and 20 semi-directive interviews with professionals, along with the analysis of 380 situations with minors, this article shows that education and training are only taken into account when they raise problems. They require work that is particularly difficult for educators who are confronted with timeframes of education and training that are different from their own and from those of the justice system. These discordances and the working environments in these open education centres do nothing to reduce the distance that most of these young people already have with the school system.Qu’implique le suivi de la Protection judiciaire de la jeunesse (PJJ) sur la scolarité ? À partir d’une recherche qualitative située dans deux unités éducatives de milieu ouvert de la PJJ et composée de 42 journées d’observation, de 20 entretiens semi-directifs de professionnel·le·s et de l’analyse de 380 situations de mineur·e·s, cet article montre que la scolarité et la formation sont prises en compte lorsqu’elles posent problème. Le travail qu’elles requièrent est particulièrement difficile pour les éducateur·trice·s confronté·e·s aux temporalités de l’école et à des processus de formation différents de la leur et du temps judiciaire. Ces discordances et le contexte du travail en milieu ouvert ne permettent pas d’atténuer les distances scolaires déjà fortement marquées pour une majorité des jeunes suivi·e·s
Impact of the Divine Word College of Vigan MBA Program in Region 1 and Cordillera Autonomous Region (CAR), Philippines
No full textInternational audienceJob security and high salary are some of the most important reasons why MBA programs are so popular nowadays. This study identified the impact of the Divine Word College of Vigan's MBA program in Region 1 and Cordillera Autonomous Region (CAR) Philippines for the School Year 2021-2022. Factors included the assessment of the respondent's age, sex, civil status, nature of employment, and residence. Graduates' assessment of the level of performance of the DWCV graduate program was expressed in terms of program relevance, faculty qualification, research facilities, classrooms, laboratory, library facilities, and achievable goals. The level of impact of training in the MBA program was measured using four (4) indicators: training and productivity, training on professional development and advancement, training on professional recognition, lifelong skills (socio-economic development). A descriptive survey with a correlational method was employed in the study. A questionnaire was utilized extensively to survey the impact of the Divine Word College of Vigan MBA Program on Region 1 and CAR students. Respondents of the study were the 68 graduates of the MBA program in the school years 2018-2019; 2019-2020; and 2020-2021. The socio-demographic profile of the respondents was statistically treated with the use of frequency count and percentage. Weighted mean and t-tests were used to determine the level of assessment on the performance of the MBA program, the impact of its training, and their correlations respectively. between the respondent's profile, the MBA program's performance, and its training program's impact, respectively. t-test was used for the correlation of the relationship between the profile of respondents and the assessment of the performance of the MBA program and its impact on training in the MBA program. Based on the problems raised in this study, the hypotheses show that there is a significant relationship between age and the assessment of MBA programs in terms of program relevance, faculty qualification, research facilities, and the achieved goals of MBA programs. On the other hand, the table shows that program relevance has also a significant relationship with sex. Further, a significant relationship was identified between training on productivity. The training on professional development and professional recognition are significantly related to sex. The impact of training in an MBA program is significantly related to the assessment of the respondents in the MBA program of DWCV except on the lifelong skills and achieved goals of the MBA program
Le cochon de compagnie : enquête auprès des propriétaires et des vétérinaires et réalisation d’un guide pratique à destination des vétérinaires
No full textLe cochon fait partie des nouveaux animaux de compagnie « de ferme ». Dans ce travail de thèse, deux questionnaires ont été créés dans l’objectif d’avoir une idée plus détaillée de la population des cochons de compagnie en France pour la réalisation d’un guide à l’intention des vétérinaires. Différents éléments sont demandés aux propriétaires de cochons de compagnie afin (i) de récolter des informations concernant les caractéristiques de ces cochons, (ii) de connaître ce qui est fait par les propriétaires en terme de prévention médicale et de recenser les problèmes de santé les plus fréquemment rencontrés, (iii) d’évaluer la perception de la douleur ou du mal-être de leurs animaux par les propriétaires, et enfin (iv), de connaître la relation que ces propriétaires entretiennent avec leurs vétérinaires et leurs attentes. Le questionnaire à destination des vétérinaires permet de collecter des informations sur les motifs de consultation et les principales pathologies rencontrées, mais également de comprendre les pratiques actuelles, le niveau de connaissances des vétérinaires praticiens dans la prise en charge des cochons de compagnie ainsi que leurs attentes en termes de formation dans ce domaine. La première partie de la thèse analyse les 255 réponses des propriétaires de cochons de compagnie et les 55 réponses des vétérinaires. La deuxième partie consiste en le guide à destination des vétérinaires. Il se base sur une analyse de la bibliographie tout en tenant compte des éléments fournis par les résultats aux questionnaires. Il présente les connaissances de base concernant l’espèce porcine, la réalisation d’une consultation et les dominantes pathologiques
Biomechanical evaluation of Back injuries during typical snowboarding backward falls
No full textInternational audienceTo prevent spinal and back injuries in snowboarding, back protector devices (BPDs) have been increasingly used. The biomechanical knowledge for the BPD design and evaluation remains to be explored in snowboarding accident conditions. This study aims to evaluate back-to-snow impact conditions and the associated back injury mechanisms in typical snowboarding backward falls. A previously validated snowboarder multi-body model was first used to evaluate the impact zones on the back and the corresponding impact velocities in a total of 324 snowboarding backward falls. The biomechanical responses during back-to-snow impacts were then evaluated by applying the back-to-snow impact velocity to a full human body finite element model to fall on the snow ground of three levels of stiffness (soft, hard, and icy snow). The mean values of back-to-snow normal and tangential impact velocities were 2.4 m/s and 7.3 m/s with maximum values up to 4.8 m/s and 18.5 m/s. The lower spine had the highest normal impact velocity during snowboarding backward falls. The thoracic spine was found more likely to exceed the limits of flexion-extension range of motions than the lumbar spine during back-to-snow impacts, indicating a higher injury risk. On the hard and icy snow, rib cage and vertebral fractures were predicted at the costal cartilage and the posterior elements of the vertebrae. Despite the possible back injuries, the back-to-snow impact force was always lower than the force thresholds of the current BPD testing standard. The current work provides additional biomechanical knowledge for the future design of back protections for snowboarders

Si elle transmet la force esthétique et politique de son travail, elle pose frontalement la question de la capacité du musée à exposer des artistes minoritaires, à prendre réellement en charge et à défendre leur travail artistique eu égard aux rapports de domination qu’ils ont dû et doivent affronter. Peut-on exposer des artistes minoritaires, sans les trahir ni les dominer une seconde fois, en occultant les processus sociaux qui les ont assujettis ? En tout cas, l’exposition réussit un singulier exploit : être muette sur les batailles menées par Ringgold, ne rien dire du racisme et du sexisme dans l’art lui-même
Comparative Analysis of Service Mesh Platforms in Microservices-Based Benchmark Applications

To mitigate this problem, there is currently a trend in developing systems to use the composition of microservices. The application is divided into independently deployable services, which can quickly implement on any infrastructure resource, and each service runs in an isolated process. Furthermore, the development of technology for microservices also increases the operational complexity associated with modern applications. The service mesh is a promising approach to mitigate this situation, introducing a dedicated infrastructure layer over microservices without imposing modifications to the service implementations. The proposed work aims to present a survey about service mesh platforms and application benchmarks based on microservices and performance tests performed. As a result, tests show that despite the benefits of the service mesh, it impacts application latency
