    Get PDF
Fermented dairy products such as yogurt and cultured milk make up a large and growing share of dairy products sold today. At the same time, there is interest in products with low fat content, high protein, and minimal additives—so-called 'clean label' products. Tettemelk is a traditional Norwegian cultured milk from the Røros region with a characteristic ropy texture due to an exopolysaccharide (EPS)-producing variant of the lactic acid bacterium Lactococcus lactis subsp. cremoris. In this study, it was investigated whether the growth of L. lactis subsp. cremoris together with a yogurt culture could impart properties to improve the texture of a yogurt-like product. Nine different yogurt products were made from milk with 3% fat. Six of these were supplemented with ropy tettemelk culture along with the yogurt culture, three each with two different tettemelk cultures. The remaining three were fermented only with yogurt culture as control samples. One of the products was enriched with skim milk powder, another with whey powder, and the last one was without powder enrichment. Since yogurt culture is thermophilic while tettemelk culture is mesophilic, a two-step fermentation process was developed. First, all samples were inoculated with yogurt culture and incubated at 42°C. When the pH reached approximately 5.6, tettemelk culture was added to the designated samples and moved to 25°C to complete fermentation. Incubation was stopped at pH 4.5, and the samples were stored at 4°C. They were analyzed after 24 hours, 2 weeks, and 4 weeks for measurements of pH, microbiological, chemical, rheological, and sensory properties. Yogurt production was carried out three times. Significant differences were found in pH development, concentration of various metabolites, and sensory and rheological properties between products made with different cultures and powder enrichments. Products with only yogurt culture showed faster pH development and more post-acidification. Gel strength and viscosity were lower in most products with tettemelk culture. Products with tettemelk culture and skim milk powder had higher water-holding capacity (WHC) than regular yogurt, and one of the tettemelk culture products exhibited some possible shear-thickening behaviour. In sensory analysis, clear differences in taste and texture were observed, but no conclusion was reached on whether any of the products were liked less or more than a commercial plain yogurt

Denne oppgaven omhandler miljømessig bærekraft i rehabiliteringsprosjekter i eiendomssektoren. This thesis addresses environmental sustainability in building rehabilitation projects within the real estate sector. The aim has been to examine how different types of actors prioritize sustainability in their projects, which measures are perceived as effective, and what mechanisms facilitate or hinder the implementation of green solutions. The ambition has been to enhance understanding of the structural and practical factors influencing sustainable choices in the industry, as well as to identify barriers to knowledge sharing and systematic learning. The study is structured around the following four research questions: How do real estate actors’ financial structures and investment horizons influence the prioritization of sustainability? Which specific measures have achieved a good balance between environmental impact and economic profitability? How is experience exchanged within the industry, and what are the obstacles to such sharing? And how do external factors, such as regulation and market conditions, affect decision-making among real estate stakeholders? The theoretical framework draws on the real estate system and theories of investment behavior and the triple bottom line, among others. In addition, the concepts of green premium, sustainable finance, and regulatory frameworks such as the EU Taxonomy and the CSRD are explored. The study applies a qualitative methodological approach based on semi-structured interviews with representatives from various real estate stakeholders, including funds, family-owned companies, contractors, environmental consultants, and financial institutions. The findings show that actors’ financial structure and investment horizon significantly influence their prioritization of sustainability. Funds and family-owned companies with long-term objectives have greater capacity to invest in green measures, whereas syndicates and more short-term owners are generally more focused on quick returns and are more reluctant to pursue reuse and certifications. Sustainability measures that combine cost-effectiveness and environmental benefits, such as energy efficiency and technical upgrades, appear to be the most attractive. More resource-intensive efforts, such as extensive reuse of structural materials, are implemented to a lesser extent but are emphasized by some actors with strong strategic ambitions

Circular valorisation of cocoa by-products: Increasing sustainability for smallholder farmers in Côte d'Ivoire

    Get PDF
Côte d’Ivoire supplies approximately 40% of the world’s cocoa, yet around 78% of each fruit, including pod husk, mucilage, and shell, is usually discarded as waste. Smallholder farmers, who account for the majority of cocoa production, face persistently low incomes, soil degradation, and pressures from deforestation. This study investigates how the circular valorisation of cocoa by-products can offer environmental, economic, and social benefits to Ivorian smallholders. An exploratory-sequential mixed-methods approach was applied across three phases. Phase 1 consisted of a systematic literature review to assess the chemical composition of cocoa by-products, suitable valorisation technologies and end-products. It revealed numerous technical solutions, though not all feasible at farm scale. The review also highlighted declining yields and degrading soils as key constraints for smallholders. Phase 2 uncovered large potassium deficits in Ivorian cocoa plots, and a low use of inputs. The model proves impacts yield positively, underlining the agronomic relevance of nutrient-recycling solutions. The model proves that fertiliser impact yields positively, underlining the necessity of nutrient recycling. Phase 3 assessed the economic feasibility of three on-farm valorisation strategies using cocoa pod husk: (1) microwave-assisted extraction of pectin (high-tech), (2) pyrolysis to produce biochar (medium-tech), and (3) vermicomposting to produce organic fertiliser (low-tech). Monte Carlo simulations and net present value (NPV) scenarios showed that vermicomposting consistently achieved the highest median returns, required the lowest capital investment, and remained robust under adverse conditions. Biochar also yielded positive outcomes, though with narrower margins. High-tech pectin extraction was only profitable under more optimistic assumptions and showed substantial downside risk. This study finds that circular valorisation of cocoa by-products holds strong potential to address key sustainability challenges for smallholder farmers in Côte d’Ivoire. Low-tech vermicomposting emerges as the most feasible and robust strategy, improving soil fertility and income. Medium-tech biochar also offers environmental and economic benefits, though with higher requirements. High-tech pectin extraction is less viable on-farm but could succeed through cooperative models. If awareness, training, and institutional support are ensured, circular economy strategies can transform waste into a foundation for sustainable rural development

    Get PDF
Bacteria capable of growing in raw milk during cold storage (< 7 °C) are referred to as psychrotrophic bacteria, and these can produce heat-stable lipolytic and proteolytic enzymes. Lipases and proteases can reduce the quality of milk and dairy products by degrading fat and protein, respectively. Investigation of the effects of cold storage on cream and how psychrotrophic bacteria develop is therefore important for understanding the extent to which this impacts the final dairy products. Due to the closure of dairy plants, cream is transported over longer distances, and it is therefore important to map the extent to which this cold storage affects dairy products, as well as how the psychrotrophic bacteria develop. This study investigated the effect of cold storage of cream on the quality of butter. Butter was churned from fresh cream and cream that had been stored for eight days at 4 °C. Rheological, chemical and microbiological analyses were conducted on the cream, with a primary focus on proteolytic and lipolytic activity. The butter was analysed chemically and microbiologically, both freshly made and after four weeks of a cold storage. During the study, unsatisfactory microbiological quality was discovered in the butter, due to a contamination in the butter churn used. This issue was further investigated, and a new disinfection method for the butter churn was established before continuing with production of butter. The results of the study showed that natural cold storage of cream for eight days led to little increase in psychrotrophic bacteria. In contrast, cold storage of the butter for four weeks resulted in an increase in psychrotrophic bacteria, particularly in butter produced from stored cream. It remains unclear whether this increase was due to possible recontamination from biofilm in the butter churn or slow growth of psychrotrophic bacteria. Pseudomonas spp. was not detected in either the cream or the butter in this study. An improvement in the cleaning routine of the butter churn (disinfection) had an impact on the microbiological quality of the butter. Furthermore, it was shown that the newest milk processing line in the Pilot Plant at the Faculty of Chemistry, Biotechnology and Food Science (KBM) affected the viscosity and the content of free fatty acids in the cream, likely due to a higher separator speed than what is recommended in the literature

A Knowledge Provider and Agenda-Setter in the Arctic: A Qualitative Study of the Arctic Council’s Environmental Mandate and Institutional Effectiveness

    Get PDF
This thesis presents a qualitative study of the evolving focus of the Arctic Council and the key drivers and barriers affecting the Council’s institutional effectiveness, particularly in addressing its core mandates of environmental protection and sustainable development. As the Arctic region experiences accelerating climate change – leading to both emerging opportunities and significant ecological and socio-cultural challenges – questions arise about the Arctic Council’s capacity to respond effectively. The study analyses Arctic Council Ministerial Declarations and Chairmanship Programs, two key instruments of its soft-law, consensus-based governance model, to evaluate whether the Council fulfils its stated mandates. In turn, the thesis seeks to assess drivers and barriers of the Arctic Council by applying theoretical frameworks of institutionalism, environmental governance, and regime effectiveness. The research applies a mixed-methods approach combining document analysis and semi-structured interviews with four expert interviewees affiliated with or knowledgeable about the Arctic Council. Findings suggest a notable shift in the Council’s agenda from regionally focused environmental monitoring and pollution control to a more integrating engagement with global climate governance – reflecting the rise of climate change on the global agenda over the past few decades. While the Council has strengthened its role as a knowledge provider and agenda-setter, its capacity to influence national implementation remains limited by structural constraints, funding challenges, and geopolitical tensions. The research identifies both enabling and constraining factors shaping the Council’s effectiveness, including scientific legitimacy, soft security dynamics, institutional design, and the absence of binding authority. While the Arctic Council is likely to persist as a key regional forum, its future effectiveness will depend on its ability to adapt structurally and assert greater influence in a complex and increasingly contested geopolitical landscape

More trees in established parking areas : a possible measure in response to the climate change

This thesis explores the potential of large, established and asphalted parking areas can have as a positive influence on the climate and nature. Norway, with the rest of the world, is experiencing more frequent extreme weather events because of the climate and nature crisis. Therefore, Norway has had to consider numerous measures to reduce these consequences. Using methods like literature, case study, i-Tree Eco analysis and a feasibility study, this thesis can evaluate the effects trees on parking areas can have on selected ecosystem services: carbon storage, oxygen production, carbon sequestration and avoided runoff. The results indicates that uncomplicated and achievable interventions can significantly increase ecosystem services, which is beneficial for the climate and nature. The thesis also indicates that parking areas may have potential to integrate nature-based solutions. The correlation between the case study and feasibility study reveals an increase in positive ecosystem services. Therefore, parking areas can also be considered as relevant measures to reduce the effects of the climate and nature crisis. However, different challenges related to maintenance and safety must be considered.B-L

Pedestrian Classification in Traffic Scenes: Assessing Deep Learning Models on Imbalanced, Augmented, and Synthetic Data

    Get PDF
Recent advancements in pedestrian detection have primarily focused on object detection frameworks. However, this thesis investigates a classification-based approach. Specifically, it addresses two tasks: (1) predicting the presence of zero, one, or multiple pedestrians in an image, and (2) classifying whether an image was taken during the day or night. A subset of the EuroCity Persons dataset was used, covering diverse lighting conditions and urban scenes. Five deep learning models were evaluated: four convolutional neural networks (MobileNetV2, EfficientNetV2, ConvNeXt, and NASNetMobile) and one transformer-based model (Vision Transformer). Transfer learning was applied, and techniques such as data augmentation and Variational Autoencoder-based synthetic data generation were used to address dataset imbalance and improve model performance. All models achieved high accuracy on the day/night classification task. In contrast, their performance on pedestrian classification was weaker, likely due to task complexity and dataset characteristics. No clear difference was observed between the convolutional neural networks and Vision Transformer models, suggesting that dataset limitations were the main factor affecting performance. These findings indicate that datasets designed for pedestrian detection are not always suitable for classification, as the two tasks place different requirements on the data

The design provides oportunities for social interaction and relaxation. This is achieved through inviting meeting places, varied seating options, and exploratory pathways, combined with blue-green solutions, native and bird-friendly vegetation, and sensory elements. The thesis demonstrates how ecological and health-promoting qualities can be integrated in a public hospital environment, and highlights related challenges and opportunities. The design aims to foster sensory and restorative experiences, offering users a sense of closeness and connection to nature within the everyday context of the hostpial environment

Warming without warning? Significant thermophilization amidst seemingly stable alpine plant communities in Filefjell, Norway

    Get PDF
Global warming is driving rapid climatic changes, with profound effects on Arctic and alpine ecosystems. Climate-driven shifts in alpine plant communities have already been observed, including upward movements in species distributions and increased species richness in some areas. These changes vary across habitat types, making ecological responses to climate change in alpine environments inherently complex. In this study, I resurveyed the highest altitudinal occurrences of vascular plant species on 12 mountain summits in Filefjell, Norway. The aim was to assess changes in species richness, altitudinal distribution, and climatic indicator values, and to identify which habitat types are most frequently colonized by new species over a 14-year period. Additionally, polygons and estimations of habitat types were recorded and unsupervised classification was conducted to explore its potential for systematic and effective classification of alpine habitat types. No significant changes were found in species richness, composition, or altitudinal distribution on the summits over the study period, possibly due to time lags in species' responses to climate change. In contrast, a significant increase in Dahl-R climatic indicator values was observed, indicating ongoing thermophilization of summit vegetation. This discrepancy suggests that thermophilic species are becoming more frequent on the summits, but not yet to a degree that results in substantial species turnover or noticeable shifts in overall diversity patterns. Boulderfields had a tendency of having the highest proportion of new species on the summits, while ridges had the lowest. Furthermore, habitat types and environmental variables explained only a small portion of the variation in species composition. While the unsupervised classification approach did not produce meaningful results for habitat mapping, remote sensing remains a promising tool for future alpine habitat classification. This study highlights the importance of incorporating detailed abundance data and full altitudinal and cardinal range information for plant species, as such data can help detect subtle ecological shifts that may otherwise go unnoticed. Given the potential for delayed responses to climate change, long-term ecological monitoring remains essential
