Prolonged and repeated use of cooking oil during frying leads to a deterioration in its quality due to various chemical reactions. The rate of quality degradation is influenced by the type of food being fried, as different ingredients contain varying compounds that interact with the oil. This study aimed to determine the effects of heating time and food type on the physicochemical quality parameters of cooking oil during frying. A 3x2 Factorial Completely Randomized Design was employed, with heating times of 5, 10, and 15 minutes,  and two food types: shrimp crackers and salted fish. The parameters assessed included color, free fatty acids, iodine number, and moisture content. This study was conducted in duplicate with two replications per treatment. The results showed that both heating time and food type significantly affected oil degradation. Increased heating time and type of food being fried led to higher values of red and yellow coloration, moisture content, and free fatty acid levels, while the iodine value decreased, indicating increased oxidation.  Heating time did not significantly affect the red color of cooking oil used for frying, and food type did not significantly influence changes in the iodine value. Overall, extended heating and the use of salted fish accelerated the degradation of cooking oil quality more than shrimp crackers, except in terms of iodine value. These findings highlight the importance of monitoring frying duration and food type to maintain oil quality, and can guide consumers and food businesses in establishing safe reuse limits for cooking oil

Tofu dregs are a solid waste generated during the tofu production process, but they can be repurposed as food due to their rich nutritional content, including protein and minerals. One innovative use of tofu pulp is to process it into serundeng (a flaked coconut dish). To enhance the nutritional quality, particularly the protein content, dried shrimp (rebon), which is rich in protein, can be added. This study aims to determine the impact of adding dried shrimp on the moisture content, protein content, yield, and the processing method based on sensory evaluation, such as color, aroma, taste, and texture. The method used was a completely randomized design with four treatments and three replications: A (0% dried shrimp), B (5% dried shrimp), C (10% dried shrimp), and D (15% dried shrimp). Adding dried shrimp significantly affected the moisture and protein content but did not significantly affect the yield. The highest moisture content was found in treatment A (0%) at 18.63% and tended to decrease with the increase of dried shrimp due to its dry nature. Conversely, the protein content increased with the addition of dried shrimp, with the highest value in treatment D (15%) at 26.20%. The highest yield was recorded in treatment C (10%) at 22.77%, but the differences between treatments were not statistically significant. Each attribute showed a different best treatment based on the sensory evaluation results. Treatment A (0%) scored the highest for the color attribute at 4.20, indicating that the panelists preferred the panelists most preferred the product without dried shrimp addition. The best taste was found in treatment D (15%) with a score of 4.27, while the best aroma was found in treatment C (10%) with a score of 4.11. Treatment C (10%) scored the highest for the texture attribute at 4.23, indicating the most preferred texture. Treatment C (10%) was considered the most balanced regarding taste, aroma, and texture, making it the best formulation regarding panelist preference

From Zircon Sand to Advanced Functional Materials: Synthesis and Characterization of Zirconium-Based Metal Organic Frameworks

    No full text
This study presents an integrated approach for converting zircon sand into functional materials based on zirconium metal–organic frameworks (Zr-MOFs). Zirconium was extracted through three main steps: alkali fusion, water leaching, and nitric acid leaching, resulting in a precursor identified as Zr(OH)2(NO3)2·1.33H2O (ZON). Characterization using XRF, FTIR, XRD, and SEM-EDX revealed that ZON possesses a high zirconium content (94.87% relative to the total metal content) and distinct structural features. The ZON compound was subsequently utilized as a novel precursor in synthesizing of three types of Zr-MOFs: UiO-66, MOFs-801, and MOFs-808. Structural and morphological analyses indicated that all three MOFs were successfully formed with high crystallinity. These findings demonstrate that locally sourced zircon sand has strong potential as a sustainable and cost-effective raw material for MOF synthesis, while also bridging the knowledge gap between zirconium extraction and the development of sustainable materials chemistry based on local mineral resources

Keripik Cinta Mas Hendro is a micro, small, and medium enterprise (MSME) operating in the snack industry, specializing in the production of various types of chips. This MSME struggles to determine the optimal production quantity due to limited resources, inconsistent raw material supply, and fluctuating market demand. This study aims to optimize the production quantity for each product variant using the Mixed Integer Programming approach with the Branch and Bound method. The Branch and Bound method were specifically chosen as it effectively handles decision variables that must be integers, which was critical in real-world production settings where fractional outputs are not feasible. The results showed that after optimization, production becomes more efficient, with allocations including: 2,100 packages of 500g Balado chips, 836 of 500g Sweet Corn, 4,500 of 500g Sweet and Spicy, 350 of 500g Seaweed, 8,527 of 1000g Original, 158 of 1000g Balado, 125 of 1000g Sweet Corn, 215 of 1000g Sweet and Spicy, 150 of 1000g Seaweed, along with 185 kg of Balado chips and 176.38 kg of Sweet and Spicy. As a result, the optimization increases profit from IDR 249,840,000 to IDR 360,791,500, reflecting a gain of IDR 110,951,500 or approximately 44.42%

    Get PDF
Poverty is a complex and multidimensional issue that remains a major focus in Indonesia as a developing country. Data show that the poverty rate in March 2024 reached 9.03%, exceeding the government’s target of 6.5–7.5%. This study aims to analyze the factors that influence poverty levels in Indonesia by using secondary data obtained from the Central Statistics Agency (BPS) in 2023. The analytical method employed is Spline Nonparametric Regression, which is considered appropriate for processing social and economic data that tend to be sparse and non-stationary, such as Indonesia’s poverty data. The results of this study indicate that among the four variables analyzed, only the Mean Years of Schooling has a significant effect on the percentage of the poor population in Indonesia. Other variables, namely GDP growth at constant prices, the open unemployment rate, and life expectancy, were not proven to have a significant effect on provincial poverty levels. The best model obtained uses Spline Nonparametric Regression with two knot points, as it has the smallest GCV value compared to the one-knot and three-knot models. Therefore, the findings of this study are expected to provide input for the government in formulating more targeted poverty alleviation policies, particularly through improvements in education
