QUALITY PROPERTIES OF CHOCOLATE-COVERED DRIED PLUMS

    No full text
The demand for functional confectionery products is continuously increasing due to growing consumer awareness of their health benefits. The aim of this research was to evaluate the technological, nutritional and sensory properties of dried plums coated with dark, milk and white chocolate. Stanley variety plums, harvested at technological ripeness from the Berovo region, were analyzed as fresh fruit and then processed into dried plums and chocolate covered dried products. Standard laboratory methods were used to determine moisture content, total dry matter, total acids, total sugars, L-ascorbic acid, total ash and dietary fiber. Sensory evaluation was performed by assessing appearance, taste, aroma, and texture. Drying method significantly increased the concentration of nutritional ingredients and the shelf life of the product. Compared to fresh fruit, dried plums had higher total dry matter (73.40 %), sugars (43.35 %), total acids (1.33 %), vitamin C (20.29 mg/100 g), total ash (2.77 %) and dietary fiber (3.09 %). The average fruit mass was 28.27 g with a yield of 92.41 %. Sensory scores showed that all chocolate coated samples were well accepted, where the dark chocolate coated samples achieving the highest scores across most attributes, especially aroma, taste and texture. The results highlight that chocolate covered dried plums, particularly those coated in dark chocolate, offer a promising direction for developing nutritionally valuable, functional desert products. This combination meets consumer demands for food products that balance health benefits with sensory appeal.

BIOGRAFISTYKA W SŁUŻBIE ANTROPOLOGII. WIKTOR BURDA, MARCIN CZERMIŃSKI I JÓZEF OBRĘBSKI – OD DOKUMENTACJI LOKALNOŚCI DO KREOWANIA GLOBALNYCH NARRACJI

    No full text
The article analyzes the biographies of three figures – Wiktor Burda, Marcin Czermiński, and Józef Obrębski – from the perspective of cultural and regional anthropology. It demonstrates how their individual lives and scholarly or economic activities influenced the formation of local and global cultural narratives and identities. Using an interdisciplinary approach, the study explores the interplay between biography, locality, and globality, proposing biographical research as a tool not only for documentation but also for the interpretation of cultural transformation. Particular emphasis is placed on regional identity as a dynamic and negotiated process, as well as the contribution of Polish intellectuals and entrepreneurs to the development of the Balkans in the context of political and social changes at the turn of the 20th century.W artykule analizowane są biografie trzech postaci – Wiktora Burdy, Marcina Czermińskiego i Józefa Obrębskiego – z perspektywy antropologii kulturowej i regionalnej.

CONSTRUCTIVIST ASPECTS OF THE UN SECURITY COUNCIL’S PERMANENT MEMBERS’ CONDUCT: THE CASE OF FRANCE AND THE UNITED KINGDOM

    No full text
While all five permanent members (P5) of the UN Security Council (UNSC) have thesame statutory rights and privileges, not all of them use these rights and privileges in the sameway. These differences cannot be explained solely by the differences in material factors betweenthe P5 – the differences in power or wealth – as realist theories in IR would claim, but theexplanation should involve the ideational factors behind them as well, as constructivist theories inIR would argue. This paper deals with the main constructivist aspects – the ideas, identities, norms, beliefs – of the behavior in and around the UNSC of two permanent members – France and theUnited Kingdom (UK). These two countries have many similarities in their positions and behaviorin the Council, which are mainly expressed in these two countries being pro-active in the UNSCand in advocating for a proactive UNSC in accordance with its responsibilities; in their non-use oftheir veto in the UNSC; and in their pledges to reform the UNSC, especially the use of the veto bythe permanent members in cases of mass atrocities. There are also some differences betweenFrance and the UK, stemming mainly from the different identities they build and present forthemselves on the international scene and the role of their countries in international politics, relatedto the importance of Africa for France; to their different relationships with the USA; and theirdifferent relationships with the EU

SEMANALYSIS: DISCOURSE OF THE OTHER AS GENOTEXT IN THE SHORT STORY “POLE VAULT”

    No full text
This article deals with the final third part of the short story “Paul Vault”. The narrative voice belongs to the myrrh. Christo Karutza, the librarian, is trying to jump over the building that has blocked his view of the beautiful mountain peak in his small librarian cabinet. His name is associated with Christ. Christo is a polylogical subject with fluent multiple identities. Jumping over the building and transforming into myrrh after his death on the asphalt, Christo Karutza creates a modern hagiography. It undermines conventions, negating finite meanings while constantly producing new ones that turn through the genotext into signifiance

In this text we present three activities that started from the idea of promoting the Spanish Language and Literature studies at the Blaže Koneski Faculty of Philology in Skopje in different contexts, but this objective turned out to be only a pretext since the activities had a greater impact than expected, functioning at the same time as activities for psychosocial support, for immersion in the professional world or for remote collaboration. They were developed between 2021-2024 and a total of ten students of Hispanic Philology participated. The activities were not linked to any specific subject, but they did use theoretical and practical knowledge from various disciplines: didactics, translation, discourse analysis and cultural studies

Human Capital Components and Economic Development: The Relationship between Education and Health Expenditures and GDP in Selected Countries of Southeast Europe

    No full text
The modern theory of economic growth and development posits that human capital is one of the main  factor for economic growth as it enhances the productivity of two other classical growth factors: physical capital and labour. Also, investments in human capital accumulation are considered as important precondition for achieving higher levels of economic development. In this context, one line of emprical research is to assess the importance of the two components of human capital – education and health – in the process of economic development. In this paper, we investigate the impact of education and health on the level of economic development (measured as GDP per capita) in a sample of five Southeast European countries (Albania, Croatia, North Macedonia, Serbia and Slovenia, over the period 2000-2021.The empirical analysis relies on a cross-sectional regression using two panels (one for education - based human capital, and the other for health-based capital. Other variables in the models include lagged GDP per capita, gross fixed capital formation per capita and corruption perception index as a proxy for insitutional quality. The results from the two panel regressions indicate that spending on education and health has significant positive effects on GDP per capita. Such reserach results lend support to the policy prescription that public investments in education and health aimed at upgrading the quality of human capital may significantly contribute to the process of economic development
