Analisis Kadar Asam Sianida Pada Ubi Kayu Yang Direndam Dalam Larutan NAHCO3 20% Dengan Variasi Waktu
Abstract: Cassava observed from nutrition side, it is highly contain of carbohydrate as calory source and the third major source of food after rice and corn. Containing useful compounds for body, however cassava also has cyanogenic glucose that is toxic or it is more familiar called blue toxic. To reduce cyanide level in cassava, it can be done by soaked into water that has been added NaHCO3 or baking soda. The purpose of this study was to identify the influence of immersion into 20% NaHCO3 solution with different time variation to the cyanide acid level in cassava. This sudy was a quasi experimental design. Cyanide acid level was determined by ion selective electrode with 28 samples taken by purposive sampling method. Simple regression linier anaylisis obtained significance value p=0,000 (p<0,05) thus Ha accepted, meaning that there was an influence of immersion into 20% NaHCO3 solution with different time variation to cyanide acid level in cassava. It is observed that immersion treatment into 20% NaHCO3 solution can decrease cyanide acid in cassava, the highest decline was in immersion for 12 hours. Cyanide acid before soakes was 61,8356 mg/kg and reduce to 9,76 mg/kg , or it was decrease about 84,22%.Abstrak: Ubi kayu ditinjau dari segi gizi kaya akan karbohidrat sebagai sumber kalori dan merupakan sumber bahan makanan ketiga di Indonesia setelah padi dan jagung. Selain mengandung senyawa yang berguna bagi tubuh ubi kayu juga mengandung senyawa glukosida sianogenik yang bersifat racun atau yang lebih dikenal dengan nama racun biru. Untuk menurunkan kadar sianida pada ubi kayu bisa dilakukan dengan cara perendaman didalam air dengan menambahkan NaHCO3 atau yang lebih dikenal dengan nama soda kue. Tujuan penelitian ini adalah untuk mengetahui pengaruh perendaman dalam larutan NaHCO3 20% dengan variasi waktu terhadap kadar asam sianida pada ubi kayu. Metode penelitian yang digunakan dalam penelitian ini adalah eksperimental semu. Penetapan kadar asam sianida menggunakan elektroda selektif ion dengan jumlah sampel sebanyak 28 buah yang ditentukan secara purposive sampling. Hasil uji statistic regresi linier sedehana diperoleh nilai signifikan p = 0,000 (p <0,05) sehingga Ha diterima artinya ada pengaruh perendaman dalam larutan NaHCO3 20% dengan variasi waktu terhadap kadar asam sianida pada ubi kayu. Perlakuan perendaman dengan larutan NaHCO3 20% dapat menurunkan kadar asam sianida pada ubi kayu, penurunan terbanyak pada perendaman selama 12 jam. Asam sianida sebelum direndam sebesar 61,8356 mg/kg turun menjadi 9,76 mg/kg terjadi penurunan sebesar 84,22%
Efektivitas Kotoran Sapi, Serbuk Gergaji Dan Bioaktivator Em4 (Effective Microorganisme) Dalam Pembuatan Kompos Pada Rumput Kumpai
Abstrak: Efektivitas Kotoran Sapi, Serbuk Gergaji dan Bioaktivator EM4 (Effective Microorganisme) dalam Pembuatan Kompos Pada Rumput Kumpai. Rumput Kumpai selain sebagai tanaman air yang biasa dimanfaatkan menjadi makanan ternak terdapat faktor pembatas yaitu nilai nutrisinya yang rendah akibat tingginya serat kasar yang akan mempengaruhi ternak juga bisa dijadikan bahan baku pengomposan. Adapun faktor lainnya yaitu kurang pemahaman masyarakat dalam memanfaatkan Rumput Kumpai ini dan dapat menghambat aliran/air sungai tersebut yang akan berdampak buruk bagi lingkungan sekitarnya. Hasil penelitian ini menunjukkan bahwa Rumput Kumpai dengan perlakuan variasi Kotoran Sapi, Serbuk Gergaji dan Bioaktivator mengalami kematangan yang lebih cepat yaitu 14 hari dibandingkan dengan perlakuan Kontrol, perlakuan Kotoran Sapi, perlakuan Serbuk Gergaji dan perlakuan Bioaktivator EM4 yang mengalami kematangan selama 21 hari.Abstract: Effectiveness of Cow Dung, Sawdust And Bio-Activator EM4 (Effective Microorganisme) in The Manufacture of Compost on The Lawn Kumpai. The Grass Kumpai that as an aquatic plant commonly utilized as fodder are the limiting factor is the low nutrional value due to high crude fiber will affect livestock can also be used as raw material composting. The other factor that is less understanding of the pulic in using this Kumpai Grass and the can impede the course of the rubbish in the trench that will be bad for the environment. This study aims to determine the effectiveness of cow dung, sawdust and bio-activator EM4 in the manufacture of compost on the lawn Kumpai. The result of this study indicate that treatment with variations Kumpai Grass cow dung, sawdust and bio-activator EM4 are maturing faster is 14 days compared to the control treatment, treatment of cow dung, sawdust and treatment of bio-activator treatment EM4 that are maturing for 21 days
FAKTOR-FAKTOR YANG MEMPENGARUHI IBU DALAM PEMBERIAN ASI EKSKLUSIF KEPADA BAYI DI PUSKESMAS SEBANGKAU KECAMATAN PEMANGKAT KABUPATEN SAMBAS
Exclusive breastfeeding is only breastfeeding without additional food and drinks in infants aged 0-6 months. Even water is not given in this exclusive breastfeeding stage. Breast milk is a fat emulsion in a solution of protein, lactose, and organic salt secreted by the two halves of the mother’s breast gland, as the main food for the baby. The composition of breast milk is not the same from time to time, this is based on lactation stage (Setiowati, 2010). This study aims to determine the relationship between knowledge, attitudes, maternal work and promotional media for formula milk with exclusive breastfeeding at the Puskesmas in the District of Pemangkat, Sambas Regency. The type of research used is the survey method with a cross sectional study approach. Sampling was done by purposive sampling with a sample of 57 mothers. Data analysis was performed using the chi-square test. The results showed that there was no relationship between the knowledge of mothers with exclusive breastfeeding (p = 0.054), there was no relationship between the attitudes of mothers with exclusive breastfeeding (p = 0.933), there was no correlation between the work of mothers with exclusive breastfeeding (p = 0.962) , and there is no relationship between the promotion media of formula milk with exclusive breastfeeding (p = 0.985). It was concluded that of all the variables tested there was no relationship with exclusive breastfeeding in infants in the Puskesmas that was as far as Pemangkat District, Sambas Regency. It is recommended that mothers give exclusive breastfeeding to their babies until they are 6 months old
HUBUNGAN POLA MAKAN DAN AKTIFITAS FISIK TERHADAP STATUS GIZI DI SISWA SMP AL-AZHAR PONTIANAK
Nutritional problem is one public health problem that has not been fully addressed in the world. Combating the problem of malnutrition is not resolved nutritional problems arise, namely the rise in the incidence of obesity and chronic disease so that nutritional problems become more complex. Results RISKESDAS (Riset Kesehatan Dasar) in 2013 showed the prevalence of underweight 12.7% and 21.5% overweight for West Kalimantan, Pontianak prevalence at 5.2% fat and very wasted 4.8%.The purpose of this study to determine the relationship of diet and physical activity on the nutritional status of junior high school students of Al-Azhar Pontianak.This study was an observational study with cross sectional approach. The data collection being done with anthropometric measure to determine the nutritional status of students and using dietary questionnaires to determine the students’ diets and physical activity questionnaires to determine physical activity in students.The results showed by nutritional status category with greater fat found in students with sufficient diet that is equal (19.4%). While students with greater nutritional status wasted contained in students with eating less is equal (20.8%). From the findings, it seemed that students with greater nutritional status found in students with mild activity (35.0%). While students with less nutritional status is also greater in students with mild activity (10.0%). Research shows there is a relationship between diet (p = 0.016), physical activity  (p = 0.021) on nutritional status in junior high school students of Al-Azhar Pontianak. The need for attention from parents to help control food intake of children so that children are not consuming excessive amounts of food can affect the nutritional status and Encourage students to undertake enough physical activity to prevent obesity
HUBUNGAN PENDIDIKAN, PEKERJAAN DAN SIKAP IBU MENYUSUI TERHADAP PRAKTIK MENYUSUI BAYI USIA 0-6 BULAN DI WILAYAH KERJA UPK PUSKESMAS TELAGA BIRU SIANTAN HULU PONTIANAK UTARA
In the practice of nursing one factor that plays an important role in the success of breastfeeding is feeding techniques. When the breastfeeding technique is incorrect, it can cause a variety of problems. No maximum breastfeeding will result in less good, because the baby’s sucking is very influential on subsequent milk production stimulation. Based on data obtained from UPK Siantan Hulu Health Center Blue Lake District of North Pontianak, the prevalence of exclusive breastfeeding in 2014 is still low, as much as 61.88% with a target of 80%. This study aims to determine the relationship of education, employment and attitude towards the practice of breastfeeding mothers of infants aged 0-6 months in the working area of  Puskesmas UPK Siantan Upper Blue Lake District of North Pontianak. This type of research is analytic survey with cross sectional approach. Sampling was done by purposive sampling with a sample of 59 people. Data were analyzed by chi square test. The results showed no association between maternal education with the practice of breastfeeding. There is a relationship between the work and the attitude towards the practice of breast-feeding mothers. Suggested to the local health authorities to continue to provide information on the practice of breastfeeding in the right way, through the distribution of posters, leaflets and other education media, and routinely perform counseling and individual and group counseling at health centers or at Posyandu activities
HUBUNGAN DAYA TERIMA MAKANAN TERHADAP ASUPAN ENERGI DAN PROTEIN PADA SISWA DI ASRAMA MAN MODEL SINGKAWANG
Implementation of the food is a series of activities that constitute a system includes activities or sub-system of budgeting food, planning menus, making estimates of foodstuffs, provision or purchase groceries, reception, storage and distribution of food ingredients, preparation and cooking of food, assessment and distribution food, recording and reporting and evaluation carried out in the framework of the provision of food for the population in the institution. This study aims to determine the relationship of the acceptability of food energy and protein intake in students in the dormitory MAN Model Singkawang. This type of research is observational with cross sectional approach. Sampling using simple random sampling technique to obtain a sample of 48 students. Primary data collected included the acceptability of food, intake of energy and protein intake. While the secondary data includes a general overview of the research and the number of students that will be investigated. The analysis used include univariate and bivariate analysis using chi square test. Based on statistical analysis using chi square test, shows that there is a relationship between the received power of food to energy and protein intake in students in a dormitory MAN Model Singkawang (p <0.05)
Faktor Yang Berhubungan dengan Kejadian Stunting Pada Balita Usia 24-59 Bulan
Abstract: Factors Related To Stunting Incident At Toddler 24-59 Months. The objective of this study was to analyze the predictors of stunting among children age 24-59 months in sub-district Matan hilir Selatan, Ketapang Regency. This research was designed with a case-control study on 51 stunting children and 51 normal children. The independent variables were mother nutrition knowledge, family nutrition awareness behaviour, clean and healthy life behaviour, infectious diseases history and nutrition intake. The dependent variable in this study was stunting status. Data collected through an interview by using structured questionnaires, food recall, height measurement with microtoise, then data analyzed by path analyze. The result of the research showed that stunting influenced directly by intake nutrition variable, infectious diseases history, mother nutrition knowledge and family nutrition awareness behaviour, while clean and healthy life behaviour influence indirect of infectious diseases history. The most related direct and indirect factors to stunting based on path coefficient as many as 0,31 or 9,61% were mother knowledge nutrition. The coefficient of determinant independent variable influencing dependent was 39,7%, while other factors were 60,3% influenced by another variable.Absrak: Faktor Yang Berhubungan Dengan Kejadian Stunting Pada Balita Usia 24-59 Bulan. Penelitian ini bertujuan untuk menganalisis pola hubungan langsung maupun tidak langsung terhadap kejadian stunting pada balita usia 24-59 bulan di kecamatan Matan hilir selatan, kabupaten Ketapang. Penelitian ini dilakukan dengan rancangan kasus kontrol pada 51 stunting dan 51 normal. Variabel independen meliputi pengetahuan gizi ibu, perilaku keluarga sadar gizi, perilaku hidup bersih dan sehat (PHBS), riwayat penyakit infeksi dan asupan gizi, sedangkan variabel dependen adalah kejadian stunting. Data diperoleh melalui wawancara menggunakan kuesioner terstruktur, food recall, pengukuran tinggi badan menggunakan microtoise. Data diolah dengan analisis statistik menggunakan analisis jalur. Hasil penelitian menunjukkan bahwa kejadian stunting secara langsung dipengaruhi oleh variabel asupan gizi, riwayat penyakit infeksi, pengetahuan gizi ibu dan kadarzi, sedangkan PHBS mempengaruhi secara tidak langsung melalui riwayat penyakit infeksi. Faktor pengaruh langsung dan tidak langsung yang paling dominan berdasarkan koefisien jalur yaitu pengetahuan gizi Ibu yaitu 0,31. Koefisien determinan variabel independen mempengaruhi variabel dependen sebesar 39,7%, sedangkan pengaruh lainnya sebesar 60,3% dipengaruhi oleh variabel lain diluar model yang diteliti
Pengaruh Variasi Waktu Simpan terhadap Kadar Protein pada Ikan Tongkol
Abstract: Fish is one of the sources of animal protein with the nutrients such as protein, lipid and other minerals. People generally save fish in the freezer so that it won’t decay. This research was aimed to analyze the effect of storage time variation with protein level in mackerel tuna. This research was an quasi-experiment research where the results had been analyzed by using regression test. Samples used in this research were fresh mackerel tuna based on visual criteria and their weight about ± 1000 grams. The chosen samples with purposive sampling technic and 4 times replication so total samples were 24. The method using for protein testing was Kjeldahl Method. Results of the research obtained the average of protein level in fresh mackerel tuna amount as 24,52%, 2-day-froze mackerel tuna fish amount as 22,05%, 4-day-froze mackerel tuna 20,29%, 6-day-froze mackerel tuna 18,45% and 8-day froze mackerel tuna 16,03%. The result of regression test showed that there were no significant effect between 2 days storage time variation (p=0,290), 4 days (p=0,242), 6 days (p=0,485) and 8 days (p=0,059) with the protein level of mackerel tuna. Abstrak: Ikan merupakan salah satu sumber protein hewani dengan kandungan gizi seperti protein, lemak, dan mineral lainnya. Masyarakat umumnya menyimpan ikan dalam freezer agar tidak mengalami pembusukan. Penelitian ini bertujuan untuk menganalisis pengaruh variasi waktu simpan dengan kadar protein pada ikan tongkol. Penelitian ini merupakan penelitian eksperimental semu dimana hasil penelitian dianalisis dengan menggunakan uji regresi. Sampel yang digunakan adalah ikan tongkol yang segar secara visual dan memiliki berat ±1000 gr. Sampel diperoleh dengan teknik purposive sampling dan dilakukan replikasi sebanyak 4 kali sehingga diperoleh 24 sampel. Metode yang digunakan untuk pemeriksaan protein adalah metode Kjeldahl. Hasil penelitian menunjukkan diperoleh rata-rata kadar protein pada ikan tongkol segar sebesar 24,52%, ikan tongkol beku hari ke-2 sebesar 22,05%, ikan tongkol beku hari ke-4 20,29%, ikan tongkol beku hari ke-6 18,45% dan ikan tongkol beku hari ke-8 16,03%. Hasi uji regresi menunjukkan tidak ada pengaruh yang nyata antara variasi waktu simpan 2 hari (p=0,290), 4 hari (p=0,242), 6 hari (p=0,485) dan 8 hari (p=0,059) terhadap kadar protein ikan tongkol
Perbedaan Konsentrasi Ekstrak Jahe Merah dan Jahe Putih terhadap Daya Hambat Pertumbuhan Candida Albicans
Abstract: Ginger is a plant that can be used as an antifungal drug because it contains active substances such as limonene, caprylic-acid and gingerol. The famous those varieties are red and white ginger. This study was aimed to determine the difference of concentration between red rhizome-ginger extract and white ginger to the inhibitory potency of C.albicans fungus by looking at the number of growth colonies on PDA media. This research method was quasi-experimental, sampling technique by purposive sampling. Each red and white ginger ethanol extract was performed with 10 treatments using DMSO (Dimethyl Sulfoxide) as a solvent in concentrations of 2, 4%, 6%, 8%, 10%, 12%, 14%, 16%, 18 % and 20%. The inhibitory test of red and white ginger ethanol extracts was carried out by using dilution method, with a mushroom suspension of Candida albicans isolate adapted to Mc Farland’s turbidity standard of 0.5. Based on the result, it was determined that value of KMB (Minimum Kill Content) red ginger extract start at 4% concentration and white ginger extract start at 6%. Independent t-Test test results obtained p = 0,025. From this research, it can be concluded that there were different concentrations of red and white ginger extract in inhibiting the growth of Candida albicans fungus. Abstrak: Jahe adalah tumbuhan yang dapat digunakan sebagai obat antijamur karena mengandung zat aktif limonene, caprilic-acid dan gingerol. Varietas yang terkenal yaitu jahe merah dan jahe putih. Penelitian ini bertujuan mengetahui perbedaan konsentrasi ekstrak rimpang jahe merah dan jahe putih terhadap daya hambat jamur C.albicans dengan melihat jumlah koloni yang tumbuh pada media PDA. Metode penelitian ini adalah eksperimental semu, teknik pengambilan sampel dengan cara purposive sampling. Masing-masing ekstrak etanol jahe merah dan jahe putih dilakukan dengan 10 perlakuan dengan menggunakan DMSO (Dimethyl Sulfoxide) sebagai pelarut pada konsentrasi 2%, 4%, 6%, 8%, 10%, 12%, 14%, 16%, 18% dan 20%. Uji daya hambat ekstrak etanol jahe merah dan jahe putih dilakukan menggunakan metode dilusi, dengan suspensi jamur dari isolat Candida albicans yang disesuaikan dengan standar kekeruhan Mc Farland 0,5. Berdasarkan hasil penelitian diketahui nilai KMB (Kadar Bunuh Minimum) ekstrak jahe merah mulai pada konsentrasi 4% dan ekstrak jahe putih mulai pada 6%. Hasil uji Independent t-Test didapatkan hasil p = 0,025. Dari penelitian ini dapat disimpulkan bahwa terdapat perbedaan konsentrasi ekstrak jahe merah dan jahe putih dalam menghambat pertumbuhan jamur Candida albicans
