Techno-functional, textural and sensorial properties of frankfurters as affected by the addition of bee pollen powder
The objective of this study was to determine whether the addition of different pollen powder concentrations (0.5; 1.0 and 1.5 g/100 g) had an influence on techno-functional, textural and sensorial traits of frankfurters. Examining the techno-functional characteristics of pollen, a conclusion was reached that the higher the concentration, the higher the emulsification and better techno-functional properties. Also, FTIR-ATR analysis has shown that specific pollen molecules provided good emulsifying properties of sausages. On the other hand, sensory analysis showed that sausages with the addition of 1.0% and 1.5% of pollen powder have a more pronounced floral odor. Warner-Bratzler shear force test has shown that the incorporation of pollen caused a more stable product throughout sixty days of storage than the control sample. It could be explained by the formation of more protein-protein interactions due to the addition of non-meat proteins in the formulation of frankfurters and obtaining a more stable product than the control one. All things considered, it can be concluded that pollen exhibits good techno-functional properties and could be utilized in the formulation of frankfurters with improved and steady techno-functional properties during two months of refrigerated storage
Optimization of protein-lipid comlex by its fatty acid and vitamin composition
The polycomponent protein-lipid compositions are traditionally used in minced meat products to regulate nutritional value, functional, technological and organoleptic characteristics of the finished product. The present article presents the results of research aimed to creation of antioxidant-enriched protein-lipid complex (PLC) with the optimal ratio ω3: ω6 of PUFA. The ratio of lipid component was optimized by linear programming method, where the recommended ratio of ω-6: ω-3 of PUFA as 10: 1 was used as term of limitation. In result of calculations the fatty component was obtained by blending of rendered beef fat with soybean oil and sunflower oil in the following ratio: rendered beef fat — 73%, sunflower oil — 15%, soybean oil — 12%. After that the PLC formulation was optimized by research of influence of the introduced protein complex in amount from 4% to 10% and the fatty component in amount from 40% to 43% on index of shear stress of the PLC. The introduced amount of protein, fat and water is taken in ratio 1:(4–7):(4–7) commonly used in the meat processing industry to form the functional and technological characteristics of the minced meat. In result of experiments the following PLC formulation was adopted, which provides the necessary stable consistency of the mixture: protein complex — 9%, fatty component — 42%, water — 49%. To enrich meat products with vitamins and antioxidants it is proposed to include into PLC an extract obtained with microwave field 800 W from the Daurian rosehips which grows in the Far East region. The obtained PLC has a high water-retaining capacity; it remains stable while heating and it can be stored for five days without any visible signs of deterioration, as the peroxide value remains within the permissible limits. PLC features optimal ratio of ω-6: ω-3 of PUFA, equal to 10:1, and a high value of the total antioxidants equal to 5.4 mg/g.
Ways of improvement of technological equipment performance
Increasing of production performance of production systems and equipment in the meat-processing industry is integrally linked to maintenance activities. The article analyzes the influence of technological effectiveness, level of hygiene, reliability and simplicity of equipment design on the main parameters of meat products quality. Here it is shown that the strategy of Total Productive Maintenance (TRM) and Lean production is important tool for assessment of parameter of the Overall Equipment Effectiveness (OEE), which is used to assess the main types of losses that reduce the equipment productivity. The link of influence between the structural and mechanical properties of food masses, the moisture content of the initial food raw material, the temperature and viscosity, the processing pressure, and the density for the optimal operating terms of the equipment are analyzed in this research. With the help of OEE concept, the time losses related to the features of the equipment functioning are determined. The types of losses are classified as follows: downtime and readjustment (availability or readiness for operation) of equipment, short-term shutdown of equipment and a decrease in processing speed (productivity or performance rate of the equipment), product rejects and product losses (quality losses) during startup of equipment. While analyzing of the operation of vacuum filler for sausages production, the values of parameters of equipment availability, it productivity and product quality are calculated. The availability index is 0.79, the productivity index is 0.76, and the product quality index is 0.95. Taking into account the obtained data on equipment availability, productivity and product quality, it is determined that the overall equipment effectiveness (OEE) accounts for 57%. The application of this method for studying the overall equipment effectiveness operation can be applied to any technological equipment used in the meat-processing industry and allows eliminating many problems that arise during the operation of technological equipment, improving its technical and economic parameters, and developing a system of measures for improvement of its maintenance and repair
Polymorphism of the gene GDF9 in sheep of Prikatun type of Altai Mountains breedand its correlation with indices of meat rate productivity
In recent decades in many countries of the world the development of sheep farming is determined by the efficiency of mutton production. One of the promising areas of selection improvement of sheep breeds of meat and meat & wool productivity is an application of molecular-genetic methods. To obtain high-quality mutton it is advisable to use the Altai Mountains sheep breed, which features by high energy of growth of young animals and their adaptability to all-year-round pasture management. One of the candidate genes responsible for sheep meat productivity is the gene of growth differentiation factor -GDF9 (growth differentiation factor 9). The article presents the results of research of polymorphism of the gene GDF9 and its relation with the parameters of meat productivity in young sheep of Altai Mountains breed. It was found that the rams-carriers of AA genotype outperformed their peers of AG and GG genotypes in terms of pre-slaughter weight, carcass weight, meat yield and meat content ratio by 1.62 and 7.01 kg, 1.34 and 3.98 kg (P<0.05), 1.21 and 1.86 abs. percent, 0.16 and 0.39 units (P<0.05) accordingly. The muscle tissue of rams of the desired genotype featured the highest content of protein, fat and, accordingly, energy value in comparison with AG and GG genotypes. The animals of AA genotype had the largest area of a rib eye and diameter of muscle fibers. The superiority over other genotypes achieved 1.55 cm2 and 1.98 microns in average. In addition the higher number of inter-fiber and inter-bundle inclusions of fat and lower content of connective tissue stipulated higher marbling score (MB)-higher by 3.32 points. The obtained data indicate that it is promising methods to increase the number of homozygotic animals in term of gene GDF9 by intended selection of parent animals whose genotype contains a desirable element for further improvement of quantitative and qualitative parameters of meat rate productivity in sheep of Altai Mountains breed
Research of the overall chemical and amino acid composition of meat from young animals of new sheep genotypes
The paper presents the results of the investigation of the overall chemical composition (mass fraction of moisture, fat, protein and ash) and the amino acid composition of mutton from the experimental animals of new genotypes: Sovetsky Merino x Dzhalginsky Merino and Sovetsky Merino x Stavropolsky breed. As a control, meat of purebred Sovetsky Merino was studied. The experimental and control rams were slaughtered at the age of 8 months by the conventional technology. Meat samples for laboratory examination were taken a day after slaughter. The results of the analysis of the overall chemical composition showed that lamb meat of new genotypes had lower moisture content and higher content of fat and protein compared to the control. Analysis of the amino acid composition of meat proteins of genotypes Sovetsky Merino x Dzhalginsky Merino and Sovetsky Merino x Stavropolsky breed revealed lower content of essential amino acids compared to the control. Comparison of amino acid scores showed that the amino acid composition of meat proteins from the experimental animals was limited by valine and lysine, respectively. It was concluded by the results of the investigations of the amino acid composition of proteins that the biological full value of proteins of mutton from new genotypes was 22.9% and 30.3% lower than that of the control
The effect of herbal supplements on development of internal organs and chemical composition of broilers muscles
The present article presents data on effectiveness of adding a phytobiotic feed additive into the diet of broiler chickens, either additionally or replacing the feed antibiotic in the chicken fodder. It has been established that the introduction of a phytobiotic feed additive into the broilers’ diet, both additionally and by replacing the feed antibiotic, provided positive effect on poultry meat quality and gave no negative effect on development of internal organs. By the end of fattening the relative weight of heart, lungs, kidneys, gizzard and intestines in broilers, which consumed the antibiotics-free diet with addition of researched preparation, was higher than in the control group and in the 1st experimental group. At the same time the length of the intestine in researched group significantly exceeded the control group parameters. These changes ranged within the physiological norm, which may indicate the best detoxification capabilities of the chicken body and the activation of enhanced intestinal absorption function. Additional use of the experimental feed additive in formulation of feed for broiler chickens was accompanied by a decrease in total amount of amino acids in broilers’ pectoral and leg muscles within acceptable physiological limits. At the same time, a significant decrease, compared with the control parameters, was noted in relation to content of histidine and isoleucine in pectoral muscles, and content of proline in leg muscles. The use of the researched additive as a substitute for a feed antibiotic in composition of mixed feed for broilers decreased the total amount of amino acids in broilers’ breast muscle, compared with the control group, and increased level of amino acids in leg muscles. The significant decrease in content of histidine and arginine in the pectoral muscles and proline in the leg muscles was noted. The observed changes varied within acceptable physiological norm. In the experimental groups the energy value of meat was increased
The effect of essential oils on quality and safety parameters of meat during its storage
This article researches the basic principles of mechanism for finding the concentrations of essential oils (EO) which are efficient for antimicrobial action, when used as a natural alternative to synthetic analogues. The effect of EO of rosemary, sage, garlic, laurel, cloves, basil and thyme on the structural components of meat, its physical and chemical, organoleptic and microbiological quality indices was studied. The effect of EO on duration of microorganisms’ growth phases is analyzed. It is shown that the reasonable concentration of the essential-oil mixture (EOM) is equal to 0.1%, since at this concentration the optimal inhibition of saprophytic microflora was provided with satisfactory organoleptic quality indices (“taste peculiar for this type of product”, “pleasant fragrance”, “spicy aroma”). The analysis of histological structural changes in muscle tissue showed that application of EOM slows down autolytic processes, which correlates with the data obtained in research of the specific electrical conductivity in water extracts from the muscle tissue. The autolysis process in the control samples was more intensive in comparison with the experimental samples stored in the EOM. Thus, by 84th hour of storage in the control sample the basophilic staining of the samples slices was observed, as well as almost complete disappearance of the striation of muscle fibers. In the muscle tissue slices the disintegration of individual fragments into myofibrils, and myofibrils into sarcomeres, was observed in form of a granular mass, sometimes enclosed in endomysium. The meat fibers were deformed and their separation was observed. The same changes with the studied samples stored in the EOM occurred only after 204 hours of storage. The above studies of changes in the specific electrical conductivity of water extract from meat during storage showed the presence of complexes of EOM components formed with proteins and lipids of muscle tissue. The obtained data are confirmed by histological studies. Thus, the use of EOM allowed elongation of the cold storage period of semi-finished natural lump products by 2.6 times, which proves the practical benefits of its use in the meat-processing industry
Methodical approach for determination of the heterocyclic aromatic amines in meat products using HPLC–MS/MS
Heterocyclic aromatic amines (HAA) are formed in foods of animal origin during the Maillard reaction due to the high creatine and creatinine contents. HAA have carcinogenic and mutagenic effects. HAA content is not standardized in the Russian Federation and the Customs Union territory. However, in the EU countries, comprehensive monitoring studies are carried out on the HAA contents and effect on the human body. Due to constant expansion of the list of controlled contaminants in food products, analytical laboratories need to develop methods for determining HAA in food items. As a result of the research, a method for HAA determination was developed using high-performance liquid chromatography with mass spectrometry in the mode of specified reaction monitoring. Comparative tests of the two methods for sample preparation were carried out. The advantages and disadvantages of sample preparation approaches were substantiated. The existing SPE conditions were optimized, which made it possible to concentrate trace amounts of MeIQx and PhIP and to dispose of substances suppressing analyte ionization. The estimation of method accuracy and specificity was carried out. The degree of ionization suppression by the matrix for MeIQx and PhIP analytes was determined. The degree of HAA extraction was empirically established. For biological samples of animal origin, it was up to 90.9% for MeIQx and up to 89.4% for PhIP. It is shown that, in accordance with the developed methodology, HAA may be determined with an accuracy of 96.15 to 98.4% at the levels of 5 to 20 ng/g. The limit of quantification of the target substances was 3 ng/g
Assessment of quality and safety of pork treated with low-temperature atmospheric-pressure plasma
It is known that processing methods ensuring partial or full microbial inactivation are quite limited. Therefore, it is of great interest to develop technique and technologies allowing the effective action on microorganisms without a significant influence on product properties. The use of cold plasma can be one of the promising methods of meat product treatment by cold sterilization. The present work examines a possibility of chilled meat treatment with low-temperature atmospheric-pressure plasma to increase its stability to microbial spoilage and extend shelf life. To obtain low temperature plasma, the equipment developed by the designing department “Plasmamed” was used. Chilled meat was treated with low-temperature atmospheric-pressure argon plasma for 5, 10, 20 and 30 min. Samples were stored at a temperature of 2–4 °C for 10 days. Organoleptic indices, moisture weight fraction, changes in pH and water activity were analyzed before treatment and during storage. Sanitary microbiological analyses were carried out by the following indicators: quantity of mesophilic aerobic and facultative anaerobic microorganisms (QMAFAnM), the presence and quantity of coliforms, Salmonella, Escherichia coli, Listeria monocytogenes, Proteus. It was shown that meat cold treatment with argon plasma inhibited the development of mesophilic microorganisms. The colony forming units detected in the samples after ten days of storage were determined by the duration of exposure to plasma. It was proved that meat treatment for 15 and 30 min had the bactericidal effect and facilitated an improvement in meat color during storage. The organoleptic indices of the samples treated with plasma corresponded to the requirements of standards and approved consumer characteristics
Development of regression model of proteins attackability process in meat food (in vitro)
In the presented article the authors consider the issues of development of regression model for process of food digestion by proteolytic enzymes in human body. The authors use correlation analysis. They analyze the main nutritional values and physical and chemical properties of meat products, the modes of heat treatment of semi-finished lamb products. The essential parameters and features are determined to find the dependence between the factor values and efficient values of the basic raw material, which affect the quality of the technological processes and, in general, the finished product. The regression model equation is mathematically calculated by methods of solving K. Gauss linear equations. The standard deviations of parameters are calculated, the initial data are normalized; the matrices of the pair correlation coefficients, lower and upper limits of their values are compiled. Equations of the mathematical regression model of meat proteins attackability by proteolytic enzymes — in vitro (pepsin, trypsin) are developed. It is proved that the obtained equation represents a regression model of the process of meat food proteins attackability by enzymes (pepsin, trypsin and chymotrypsin), depending on the determined 3 essential factors (weight of a meat piece, duration of frying, collagen content in lamb meat). Also this equation reflects the process of lamb digestibility in a digestive tract of a human body
