    Study of the process of the frozen raw beef defrosting with its simultaneous massaging in industrial conditions

    Many meat processing enterprises use the frozen raw meat. Its defrosting and thawing is a crucial technological operation that fundamentally affects the quality of food products. The experience and knowledge obtained directly in the workshop in the process of thawing the raw materials and their using to obtain a specific finished product are of great importance. Defrosting and thawing of the frozen beef meat, as one of the stages of raw meat processing, still remains a challenging process in industrial food production. The importance of this process is constantly increasing due to the growing volumes of frozen raw materials processed in food enterprises. Scientific research shows that one of the most efficient methods of defrosting and thawing is the process of meat thawing with saturated water steam under vacuum. When applying the steam the raw materials is heated at its least and minimal losses are observed, while the duration of the process is significantly reduced. This work examines the process of beef meat defrosting and thawing with simultaneous shaking and crumpling the frozen mass, which can be called as massaging of raw materials. As studies have shown, this method of thawing makes it possible to reduce losses down to almost zero and obtain raw materials with good structural characteristics for the production of a finished product with a wide range of consumer properties. The obtained experimental curves of changes in the mass and temperature of raw materials make it possible to analyze the kinetics of heat transfer and mass transfer processes at the macro- and micro levels of the food system, which serve as the basis for modeling and controlling the technological process. This study presents the results of conventional defrosting and thawing of the raw meat but combined with massaging. Studies of the parameters of processing modes have shown that the proposed program makes it possible to use efficiently the design and technological features of the defroster-massager in order to obtain the raw beef for the production of high-quality food products. The results of experimental studies and their analysis allow making conclusion about the prospects of applying this process for the other types of raw meat materials before the main technological processing of raw materials

    The effect of long skin soaking in the calcium solution on the quality of rambak crackers from buffalo skin

    Buffalo skin is an underutilized by-product of buffalo slaughter. It is perishable and if it is not processed immediately, it will rot. One of the applications of buffalo skin is processing into skin crackers. The present research was aimed at determining the best duration of buffalo skin soaking in the lime solution with regard to its effect on quality of rambak from buffalo skin. The study used a completely randomized design (CRD) with a factor of treatment time, which consisted of four levels, i.e. A=76 hours, B=86 hours, C=96 hours, D=106 hours. Each treatment was performed with five replicates, so that 20 samples were obtained. The data were analyzed using the statistical analysis of variance (ANOVA). Parameters observed were the water content, yield, volume expansion, and organoleptic characteristics such as taste, aroma, color, and texture. The results show that different soaking duration (76 hours, 86 hours, 96 hours, and 106 hours) did not have a significant effect on yield, taste, aroma, color, and texture, but significantly affected the volume expansion and water content in rambak from buffalo skin. The best result was achieved with soaking duration of 106 hours; the rambak was characterized by the following parameters: water content 10.83%, yield 57.87%, volume expansion 76.66%, color score 3.51, taste score 3.61, aroma score 3.63 and texture score 3.30.Buffalo skin is an underutilized by-product of buffalo slaughter.     Mechanically deboned poultry meat and its role in rational and efficient use of raw materials

    The growth in poultry meat production is a worldwide trend. Industrial poultry meat processing is also developing with production of a wide range of products. The technology of mechanical deboning of poultry meat and carcass parts is widely used in complex non-waste production. Mechanically deboned poultry meat (MDPM) is believed to be of inferior quality and its use is restricted by certain rules in different countries of the world. At the same time, hand separated meat is accepted as conventional meat and is not subjected to any restrictions. Over the last decades, the technology and equipment have been created that allow approximating MDPM to the category “meat” in terms of quality characteristics and reducing risks in its use upon reduction of pressure in the process of its production. However, costs of new equipment that enables producing a product with higher quality do not provide the expected efficiency, and a positive effect will be achieved only in the case of clear legal solutions regarding separation of MDPM types and methods of their classification and identification. The volume of scientific publications concerning a solution to this problematic theme is significant and scientists from many countries search for approaches to its realization differently. The difficulty in finding a solution is caused by the multifaceted nature of the problem, the character of non-standardized raw materials, a type of equipment being used to obtain different MDPM types, and various methods of investigations. Nevertheless, the performed studies create conditions for improvement of the approach to classification of different MDPM types by the production method and maximum allowable threshold values of the main standardized parameters, assessment methods, detection of their characteristics and substantiation of terminology

    Optical-spectroscopic analysis of colorimetric changes in meat during its storage

    The colorimetric and spectral characteristics of meat and their changes during the period of storage were researched. It was shown that spectral methods of analysis can potentially be used to assess the properties of meat during its storage in order to define the degree of autolytic changes which occur in the meat along with its histological-structural and proteomic changes. The work studies the quality characteristics of meat on the base of an array of its parameters and a correlation between them. Considerable attention is paid to the determination of colorimetric and spectral characteristics of autolytic and other changes in meat during its storage. The possibility of using the method of optical spectrometry for assessing the quality of meat is considered. The data obtained by processing the absorption spectra of aqueous extracts from muscle tissue confirm the promising prospects of using this method in a comprehensive study of the raw meat materials properties. The work proves possibility of classifying raw meat according to the degree of its autolysis for further assessment of its colorimetric characteristics, the value of extinction coefficients and the relative area of peaks at the wavelength λ415, λ525, λ542, λ555, and λ582

    Nile perch fish nuggets: Partial replacement of fish flesh with sesame hulls and sunroot — Quality assessment and storage stability

    This study aimed to produce Nile perch fish nuggets by replacing a part of fish flesh with different concentrations of sesame hulls and sunroot to reach the optimal recipe. Chemical, microbiological, and sensory characteristics of nuggets were evaluated during 3 months of frozen storage at –18 °C. According to the obtained data on the chemical composition of raw materials, Nile perch flesh had the highest content of protein (20.21%), sesame hulls contained the highest amount of fat (13.54%), fiber (17.24%) and ash (16.11%), while sunroot tubers had the highest amount of carbohydrates (15.76%). Based on the sensory score, the acceptable replacement ratio for fish nuggets prepared with sunroot (T1) and sesame hulls (T2) was 10% and 7.5%, respectively. Thiobarbituric acid (TBA) analysis at zero time shows that the T1 samples had the minimum value compared to the T2 and control samples. During storage, the TBA levels increased slightly in all samples, but after three months T1 also showed the lowest value. The total plate count (TPC) and psychrophilic bacterial (PSY) count in the samples were affected by the period of frozen storage at –18 °C. The initial TPC and PSY loads were 2.32 and 2.02 log cfu/g for control; 2.24 and 1.72 log cfu/g for T1; 2.30 and 1.47 log cfu/g for T2, respectively. During storage, the values of TPC and Psy slightly decreased.     Evaluating the effect of various types of disinfectants on bacterial biofilms

    Biofilm formation on equipment surfaces is a potential food safety hazard, providing increased resistance and persistence of pathogens and spoilage microorganisms in food production environments. The issue of preventing the biofilm formation is extremely important, since a wide range of disinfectants does not always provide the proper effect. The article discusses the antimicrobial effectiveness of disinfectants with various active ingredients (based on active chlorine, peracetic acid and quaternary ammonium compounds (QAC) with enzymatic substances) on binary biofilms. The objects of the study were the strains of pathogenic and opportunistic microorganisms isolated from abiotic surfaces of food production environments and food products. Different effects of disinfectants on biofilms formed by bacteria have been established. Disinfectant based on peracetic acid and chlorine had the greatest effect on binary biofilms of Brochothrix thermosphacta/Salmonella spp. and Staphylococcus equorum/Salmonella spp. The greatest antimicrobial effect on biofilm of Listeria monocytogenes 12/Pseudomonas azotoformans 6 was shown by a chlorine-based disinfectant. Disinfectants based on chlorine and QAC with enzymatic substances were most effective against the binary biofilm of L. monocytogenes 12/Salmonella spp. 14. However, none of the disinfectants had absolute antimicrobial effectiveness against the studied binary biofilms. Biofilm-forming microorganisms have shown resistance to the recommended concentrations of disinfectants. Therefore, currently, it is extremely important to revise approaches to hygiene at enterprises by finding working concentrations of new antimicrobial agents and new procedure that are effective for destroying biofilms

    Analysis of agriculture sustainable development in Russia

    The article is focused on determining the current situation in Russia on the way to achieving the goals of sustainable development in agriculture. When analyzing the literature, it was revealed that most of the goals and objectives of sustainable development are already, to a greater or lesser degree, incorporated into the main strategic and program documents in Russia. Achievements in the implementation of SDG 2 “End hunger, achieve food security and improved nutrition and promote sustainable agriculture” were considered. Statistical indicators of agriculture sustainable development in Russia are analyzed. The principles for development of the agrifood systems sustainability concept are formulated and presented. In the last century and a half, the main task of Russia in country’s food security has been to feed its population. At the present day, it can be stated that this problem has been mainly solved

    Effect of organically bound iodine in cattle feed on health indicators

    Currently, the problem of iodine deficiency is actual in the world, which may cause a large number of diseases and disorders. The problem of iodine deficiency for humans may be partly solved by enriching agricultural products with iodine, i.e. by providing animals with an increased intake of iodine during their growth. Theoretically, the most effective way to use iodine is the form bound to tyrosine, since diiodotyrosine has been proven to be a thyroxine precursor. Taking it into account, a supplement was developed containing iodine organically bound to tyrosine and histidine. In this work, we studied the effect of this supplement introduced into the diets of cattle on biochemical parameters of animal blood. In the test group, which received the supplement with organically bound iodine, an improvement in nitrogen metabolism was noted compared to the control group. This was most clearly demonstrated by the content of urea, since in the test group, its content decreased by ≈15 percentage points, and by the content of creatinine, since its increase in the test group was more than 20 percentage points. Differences in the parameters of carbohydrate and lipid metabolism between treatments were also noted, as in the blood of animals from the test group, the content of cholesterol, triglycerides, phospholipids, glucose and malondialdehyde was lower than in the control group. In mineral metabolism and morphological parameters, there was no significant difference between treatments. Among the indicators of pigment and hormone metabolism, it is important to note the reduced content of cortisol in the blood of animals from the test group. Its level was lower by ≈17.23 percentage points compared to the control group. A decrease in cortisol levels indicated a lower stress load in the test group.     Methodology of adipose tissue type detection in mammals

    Nowadays, an interest in studying the composition, properties and functions of adipose tissue (AT) is growing among researchers, which is conditioned by its important role in the normal functioning of the body. Due to different types of adipose tissue (AT) in mammals (white, beige, brown and pink) and different physiological tasks performed by each type of AT, rapid, correct and effective detection of an AT type is highly topical. Methods used today are labor consuming and in the case of NMR and CT expensive, which limits possibilities of scientists. In this connection, the aim of this research was to develop a methodological approach allowing rapid and effective detection of an adipose tissue type. A methodology was formed based on the concept, formalized requirements for the method, step-wise structure of investigations and interpretation of results. The concept is based on differences in the structure of the adipose cell (adipocyte) of different AT types. The method is based on extraction of heme containing proteins. To this end, solvents and parameters of extraction that facilitate their better extraction have been chosen. An AT type has been determined by the total content of iron contained in the cytochrome fragment. Our own modification was selected. This modification includes preliminary mincing of a sample with the ice-cold TES buffer (pH 8.5) in a ratio of 1:5 (g: mL), homogenization at 9,000 rpm for 2 min with the following centrifugation at 10,000 g and 4 °C for 15 min. Effectiveness of the proposed method was confirmed by the histological and electrophoretic analyses.     Nonparametric statistics. Part 3. Correlation coefficients

    A measure of correlation or strength of association between random variables is the correlation coefficient. In scientific research, correlation analysis is most often carried out using various correlation coefficients without explaining why this particular coefficient was chosen and what the resulting value of this coefficient means. The article discusses Spearman correlation coefficient, Kendall correlation coefficient, phi (Yule) correlation coefficient, Cramér’s correlation coefficient, Matthews correlation coefficient, Fechner correlation coefficient, Tschuprow correlation coefficient, rank-biserial correlation coefficient, point-biserial correlation coefficient, as well as association coefficient and contingency coefficient. The criteria for applying each of the coefficients are given. It is shown how to establish the significance (insignificance) of the resulting correlation coefficient. The scales in which the correlated variables should be located for the coefficients under consideration are presented. Spearman rank correlation coefficient and other nonparametric indicators are independent of the distribution law, and that is why they are very useful. They make it possible to measure the contingency between such attributes that cannot be directly measured, but can be expressed by points or other conventional units that allow ranking the sample. The benefit of rank correlation coefficient also lies in the fact that it allows to quickly assess the relationship between attributes regardless of the distribution law. Examples are given and step-by-step application of each coefficient is described. When analyzing scientific research and evaluating the results obtained, the strength of association is most commonly assessed by the correlation coefficient. In this regard, a number of scales are given (Chaddock scale, Cohen scale, Rosenthal scale, Hinkle scale, Evans scale) grading the strength of association for correlation coefficient, both widely recognized and not so well known
