    The purpose of the implementation of this study is to find out the characteristics of nata de soya which is made from the whey of soybean cake and substrate irrigate coconut water  in terms of physical, chemical and organoleptic (consumer acceptance studies) and to know the effect of the addition of glacial acetic acid and sucrose on the quality of nata de soya.     Aplikasi Just-In-Time pada Perencanaan dan Pengendalian Persediaan Kentang (Studi kasus di Perusahaan Agronas Gizi Food Batu)

    Permasalahan yang timbul terkait dengan persediaan pada Perusahaan Agronas Gizi Food Batu adalah tingginya jumlah bahan baku (kentang) yang disimpan dalam gudang bahan baku dan tingginya keripik krecek dalam gudang WIP (Work in process). Selama ini perusahaan belum memiliki dan belum pernah menggunakan metode tertentu dalam melakukan perencanaan dan pengendalian persediaan bahan baku kentang, sehingga tingkat persediaan bahan baku kentang di gudang tinggi. Tujuan yang ingin dicapai dalam penelitian ini adalah menentukan perencanaan dan pengendalian persediaan bahan baku berdasarkan pendekatan JIT, menentukan dan membandingkan dengan metode tradisonal besar biaya persediaan yang dikeluarkan perusahaan dan menentukan jumlah optimum kanban. Berdasarkan hasil analisa data yang dilakukan, jumlah bahan baku yang harus dibeli sebesar 84.476,67 Kg sedangkan jumlah bahan baku yang diproduksi menjadi keripik kentang 84.178,21 Kg. Biaya pengendalian persediaan bahan baku berdasarkan pendekatan JIT sebesar Rp506.952.447,16 sedangkan biaya pengendalian persediaan WIP sebesar Rp2.361.933,34. Perbandingan biaya persediaan bahan baku berdasarkan pendekatan JIT dan sebelum menggunakan JIT sebesar Rp313.543.680,84 atau terjadi penghematan sebesar 38,21% sedangkan pada WIP sebesar Rp10.453.047,85 atau terjadi penghematan sebesar 81,57%. Jumlah kanban optimum untuk vendor kanban sebanyak satu dimana jumlah optimum kanban produksi memiliki nilai yang berbeda untuk setiap harinya.Kata Kunci : Just-In-Time, Kanban, Pengendalian persediaan

    Penambahan Tepung Kecambah Kacang Hijau Untuk Meningkatkan Kualitas Bahan Makanan Campuran Beserta Analisa Tekno-Ekonominya

    Tujuan dari penelitian ini adalah untuk mendapatkan perlakuan terbaik pada proporsi penambahan tepung kecambah kacang hijau pada bahan makanan basal sebagai bahan makanan campuran yang ditandai dengan peningkatan kadar protein, serta kadar air, daya serap air, kadar abu, kadar lemak, dan kadar karbohidrat yang rendah. Rancangan percobaan yang digunakan pada penelitian ini adalah rancangan acak kelompok dengan faktor tunggal, yaitu proporsi penambahan tepung kecambah kacang hijau pada bahan makanan basal. Proporsi tepung ecambah yang ditambahkan dalam bahan makanan basal antara 0% sampai 50%. Hasil penelitian menunjukkan bahwa penambahan tepung kecambah kacang hijau pada bahan makanan basal mampu meningkatkan kualitas bahan makanan campuran. Perlakuan terbaik didapat pada penambahan tepung kecambah kacang hijau sebesar 10% dan nilainya lebih tinggi dibanding produk “S” dengan biaya produksi sebesar Rp. 9.737 per 100 gram.Kata kunci : tepung kecambah kacang hijau, kualitas nutrisi, bahan makanan campuran

    ANALISIS KELAYAKAN TEKNIS DAN FINANSIAL PRODUKSI SOSIS JAMUR TIRAM PADA SKALA INDUSTRI KECIL (STUDI KASUS DI BUDIDAYA JAMUR TIRAM ‘WAHYU’ KOTA MOJOKERTO)

    Sausage is a type of food which is popular in the market and often consumed by people, especially children and teenagers. Therefore, oyster mushroom can be turned into sausage and becomes a solution for the vegetarians to substitute the meat. The method used to analyze the technical aspects is an approach to the raw material availability. However, the method used to analyze the financial aspects is the calculation of HPP, BEP, and R/C Ratio. The production of oyster mushroom sausage will be done in UKM Wahyu Mojokerto with the capacity of 10 kg oyster mushroom per day which will produce 110 oyster mushroom sausages and the need of 11 vacuum packaging and 2 labors. The work hours start from 08.00 am to 1.40 pm for 5 days. The production process is carried out every one cycle per day by using the main machine that is sausage filler. The result of the oyster mushroom sausage production in UKM Wahyu is calculated from the financial aspects (HPP) Rp 1.666,75 with the selling price Rp 2.000,00. Therefore, the BEP is 13.308 units and Rp 26.617.544,51 while the R/C Ratio is 1,2. It means that the production of oyster mushroom sausage has met the standards of business efficiency that can be said to be profitable and viable. Key word: financial aspects, technical aspects oyster mushroom sausage

    Small and Medium Enterprises is one of the essential sectors for an economy in a state. The existence of centre can ease the occurrence of new businesses with the availability of productive resources in industry sector. Industry centre it self aims to cluster several businesses which have similar natures. Technology components (technoware, humanware, inforware, orgaware) are a way to assess to what extent an industry centre can develop. The aims of the research are the influence of technology components to the development industry centre and to get some additional values from production process. The respondents in this study are 33 industries in Kedungrejo industry centre. Partial Least Squares (PLS) is used as the data analysis method. PLS method can be used in every scale of data and the sample does not have to be in large amount. The result gained by analyzing with PLS is that among, technoware is the technology compenent which has highest influence to the development of industry centre. The score of this compenent is 0,520 ant the margin of product additional value is IDR 82,500.Keywords : Industrial districts, Technology components, PLS

    PENILAIAN KINERJA DEPARTEMEN PRODUKSI DALAM MENERAPKAN REVERSE LOGISTICS DENGAN PENDEKATAN ANALYTICAL HIERARCHY PROCESS DAN DATA ENVELOPMENT ANALYSIS (Studi Kasus Di Pt Sinar Sosro Kantor Pabrik Mojokerto)

    Reverse logistics is process of controlling the flow of raw materials, finished products and related information of the consumption activities to capture the value of product returns. PT Sinar Sosro Mojokerto Factory Office applies reverse logistics by producing tea-based beverages in returnable glass bottling (RGB). The research objectives was to determine the weight of each variable to assess performance of the Production Department in implementing reverse logistics with Analytical Hierarchy Process (AHP), to assess performance or efficiency of production processes for each product types with Data Envelopment Analysis (DEA) and made projections for the improvement of inefficiency production by using the input-oriented CCR projection. The method used was incorporation of AHP and DEA in production of six types of RGB products (Teh Botol Sosro, Joy Tea, Tebs, S-tee, Fruit Tea Apple and Fruit Tea Black Currant) for 20 months (January 2010-August 2011). Variables for assessment are input and output variable. The results showed weight of both, input and output variables were 0.5. Input variables subcriterias from the biggest until smallest weight namely inhibition of production, paid hour nonstandart bottles, broken bottles, fully nonstandart bottles and losses with successive weights of 0,185, 0,160, 0,055, 0,050, 0,030 dan 0,020. Output variable subcriterias from the biggest until smallest weight namely production,  mechanical efficiency, line utility, line efficiency and volume with successive weights of 0,265, 0,085, 0,070, 0,060, dan 0,020. The performance assessment showed, 18 production processes were inefficient. Inefficient production process could be improved with input-oriented CCR projection, by optimizing the value of the input and output variable subcriterias.Keywords: Performance Assessment, Reverse Logistics, AHP, DE
