Milkfish nugget formulation with carrot and sweet corn modification towards nutritional status enhancement for underweight
Milkfish nugget is one of nutritionally dense processed with a practical presentation and generally liked by children. To enrich the nutritional content, the manufacture of nuggets is modified with the addition of vegetables including carrots and sweet corn. The modification of milkfish nuggets with carrots and sweet corn can be used as additional food for underweight toddlers This study aims to determine the effect of milkfish nuggets formulation with carrots and sweet corn modification. This research was a quasi-experiment with one group pre and post-test design. The sample was 37 with the total sampling method. The data was collected by observing the enhancement of toddlers’ nutritional status during 10 days. Data were analyzed by using a paired T-test with a 95% confidence interval. The results showed the bodyweight average increase after giving milkfish nuggets was 800 grams with an enhancement in nutritional from the average Z-score value of -1,95 through the bodyweight for age indicator. The milkfish nuggets formulation had a significant effect in enhancing the nutritional status of underweight toddlers (p-value 0,002). It is necessary to improve the quality of health programs especially regarding food intake for underweight toddlers to achieve the quality of the human development index
Efek tepung ulat sagu (Rhynchophorus ferrugineus) terhadap penurunan kadar malondialdehyde (MDA) pada tikus Wistar dengan diet rendah protein
Kwashiorkor is protein-energy malnutrition (PEM) caused by protein deficiency. Sago worm flour (Rhynchophorus ferrugineus) can reduce malondialdehyde (MDA) caused by the high content of the amino acids glycine, lysine, and phenylalanine. The study aimed to prove the effect of sago worm flour on MDA levels in Wistar rats with a low protein diet. A true experimental-pre-post control group. The intervention was given for 28 days to 28 Wistar rats, divided into four groups with each group of seven rats. The dose of sago starch was 0,36 g/100 g rat body weight/day (P1), and a dose of 1,36 g/100 g rat body weight/day (P2) for rats fed a low diet protein. The treatment group was compared with a group of mice given a low diet protein (K +) and a group of healthy mice (K-). Serum MDA levels were measured by the TBARs method. Statistical analysis used paired t-test or Wilcoxon test and one-way ANOVA/Kruskal Wallis test. The results of decreasing MDA levels were in the P1 and P2 groups (p= 0,000). There was a difference in MDA levels in the P1 and P2 groups compared to the K + group (P= 0,000). There was a difference that decreased MDA levels between P1 and P2 (p= 0,000). In conclusion, sago worm flour at a dose of 0,36 g/100 g of rats/day and a dose of 1,36 g/100 g of body weight of rats/day can reduce MDA level
Analisis faktor kejadian wasting pada anak balita 12-59 bulan di Puskesmas Bulili Kota Palu: Studi cross sectional
Wasting on children is an important public health problem because of its considerable impact on their health and growth. This problem could lead to iron deficiency which could induce infection disease and probably lower a child’s intelligence as a long-term effect. This study aimed to analyze factors related to wasting on 12-59 months children in Bulili Public Health Center (PHC), Palu City. The analytical descriptive study designed with a cross-sectional approach was applied in this study. One hundred and twenty-one subject was selected from 283 children with purposive sampling technique. Data were analyzed with chi-square and Fisher exact test with significant (p < 0,05). The result showed that most children with low birth weight experienced wasting with a p-value = 0,000. Most of the children from higher-income families did not experience wasting with a p-value = 0,004. Most children who didn’t receive breastfeeding milk did not experience wasting with a p-value = 0,958. This study concluded a correlation between low birth weight and income to wasting, but breastfeeding practice was not related
Perilaku makan sebelum dan selama pandemi covid-19 pada kelompok remaja dan dewasa di Indonesia
The COVID-19 pandemic impacts lifestyle changes, one of which is the eating behavior of people. The research aims to examine changes in eating behavior before and during the COVID-19 pandemic among adolescents and adult groups in Indonesia. A cross-sectional study on 563 subjects, with the subject's inclusion criteria, namely living in Indonesia, aged 12-55 years, willing to participate in the research by filling in informed consent and filling out a questionnaire via an online google form. The data obtained were grouped based on variables before and after the pandemic, then tested the normality of the data. Bivariate analysis used the Wilcoxon text because the data were not normally distributed. As a result, there was an increase in the subject's breakfast habits and frequency of eating. Subjects experienced changes in eating habits, namely an increase in the frequency, variety, and portion of consumption of animal protein, vegetable protein, vegetables, and fruit between before and during the COVID-19 pandemic (p <0,001). In addition, the habit of consuming fluids, supplements, and spices also experienced a significant increase, while the pattern of snacking decreased between before and during the pandemic (p <0,001). Pengaruh lama maserasi daun ketapang merah (Terminalia Catappa L.) terhadap daya hambat Staphylococcus aureus dan Escherichia coli
Background: Bengal Almond leaves (Terminalia catappa L.) contain alkaloids, saponins, tannins, polyphenols, quinones, flavonoids and triterpenoids that can function as antibacterial.Objectives: This research was conducted to determine the effect of maceration time of red ketapang leaves (Terminalia catappa L.) on the growth of Staphylococcus aureus and Escherichia coli. Methods: This study was experimental using a completely randomized design (CRD) consisting of 6 treatments, that P0 (aquades), P1 (red ketapang leaf extract with 1 day maceration time), P2 (2 days maceration) P3 (3 days maceration) , P4 (4 days maceration) and P5 (5 days maceration) with 4 replications.Results: Anova test showed that macerated red ketapang leaf extract significantly affected the growth of Staphylococcus aureus and Escherichia coli (p= 0.000). Duncan's further test showed that the largest inhibition zone diameter in Staphylococcus aureus was formed by P2 (2 days maceration time) which was 18.62 mm and there was no significant difference between treatments. Meanwhile, the largest inhibition zone diameter against Escherichia coli was formed by P1 (1 day maceration time) which was 20.25 mm and there was a significant difference between treatments. Conclusion: Ketapang red leaf extract with different maceration times can inhibit the growth of Staphylococcus aureus and Escherichia coli
Karakteristik ibu dan pemberian ASI eksklusif dengan kejadian stunting di Kelurahan Padebuolo Kota Gorontalo
Children who do not get exclusive breastfeeding will be at risk of deficiency of nutrients needed in the growth process. This study aims to analyze the relationship between stunting and exclusive breastfeeding. The research method uses a cross-sectional research design with quantitative research, presented by means of descriptive-analytic with the number of respondents as many as 41 people. Data regarding the child's height was obtained by measuring the child's height using a digital weight scale with an accuracy of 0,1 kg. Data regarding children's age is obtained by birth certificate records or family cards. Mothers’ knowledge about exclusive breastfeeding and its giving was obtained using interview techniques. Data analysis using univariate analysis was carried out on each variable resulting from the study in the form of frequency distribution and percentage of each variable. Bivariate analysis to analyze the relationship between variables using Chi-square with 95% CI. The results showed that knowledge (p= 0,633) and education (p= 0,840) had no effect on exclusive breastfeeding (p > 0,05). Meanwhile, exclusive breastfeeding did not affect the incidence of stunting (p= 0,797). Analisis faktor keputusan ibu bersalin dalam pemilihan tempat pelayanan persalinan di wilayah kerja Puskesmas Ulee Kareng Kota Banda Aceh
Background: Choosing a place of birth is not an easy thing for a mother, because a safe and comfortable place has a positive impact in launching the birth process.Objective: This study analyzes the factors of choosing a delivery service in Ulee Kareng health center area Banda Aceh City.Methods: This research is an analytic type of research using a cross-sectional design. Population The population in this study were all mothers giving birth with normal delivery in the working area of the Ulee Kareng Health Center in 2016 as many as 389 people. Data were collected by interview using a questionnaire. Interviews were conducted directly on the respondents. Data analysis using Chi-square test.Result: The results have shown that the factors related to the choice of place of delivery service are education level (p= 0.007), occupation (p= 0.014), income level (p= 0.000), history of childbirth (p= 0.019), and family support factors. (p= 0.004) and support from health workers (p= 0.007).Conclusion: The choice of place of delivery is influenced by the level of education, occupation, income, birth history, as well as family support and health workers. Hubungan mekanisme koping orang tua dengan dampak hospitalisasi pasca operasi pada anak prasekolah di Ruang Rawat Inap Raudhah 2 BLUD RSU dr. Zainoel Abidin Banda Aceh
Background: Preschool is when children like to imagine and begin to build control of body systems. When preschool children experience hospitalization, activities will be limited so that children will lose their strength. When a child is hospitalized, parental support is very influential in minimizing the impact of hospitalization.Objectives: This study examines the relationship between parental coping mechanisms and the impact of postoperative hospitalization on preschool children in the Raudhah 2 inpatient room.Methods: This research method uses a correlational design with a cross-sectional study approach. The study was conducted at the Zainoel Abidin Hospital in Banda Aceh, 2018. The sample was taken by purposive sampling with a total of 38 respondents. Coping aspect data was collected using a questionnaire with a Gutman scale and the postoperative hospitalization impact variable using a Likert scale, and then interviews were conducted. Processing is done in stages, starting from editing, coding, tabulating, and cleaning. Data were analyzed using the Chi-Square test at 95% CI.Results: There was a relationship between parental coping focused on emotion (p= 0.005) and problem-focused coping (p= 0.028) with the impact of postoperative hospitalization on preschool children. In addition, parental coping mechanisms have a significant relationship (p < 0.05) with the effect of postoperative hospitalization on preschool children in the Raudhah 2 RSUZA inpatient ward, with p-value = 0.001.Conclusion: There is a significant relationship between parental coping mechanisms and the impact of postoperative hospitalization on preschool children in the Raudhah 2 inpatient room at RSU dr. Zainoel Abidin
Kualitas kimia dan organoleptik nugget ikan gabus melalui penambahan tepung kacang merah
Background: The addition of red bean flour is an alternative to increase protein content. Red bean nuggets also still have low protein content, it is necessary to add protein from animal sources. One of the high protein fish is snakehead fish which reaches 25.1% while 6.224% of the protein is in the form of albumin in synergy with the mineral Zn.Objective: The research objective was to measure the effect of adding red bean flour to the organoleptic test (color, texture, aroma, taste) of snakehead fish nuggets.Methods: Experimental research with a completely randomized design (CRD). Organoleptic tests at the Food Technology Laboratory of the Aceh Health Polytechnic Nutrition Department and chemical tests at the Food Analysis Laboratory of the Faculty of Agriculture, Syiah Kuala University and the Syah Kuala University Integrated Laboratory in March 2019, descriptive univariate analysis including frequency and percentage distribution, bivariate test with ANOVA test and Duncan's continued test.Results: The results of the analysis of variance (ANOVA) showed that the addition of red bean flour had a significant effect on organoleptic snakehead fish nuggets (p <0.05). Chemical test results, the highest protein content in treatment 50 grams (FA) = 11.93, the highest crude fiber content in treatment 50 grams (FA) = 2.52, the highest crude fat content in treatment 75 grams (FB) = 15.63, the highest ash content in treatment 100 grams (FC) = 2.04, the highest water content in treatment 50 grams (FA) = 45.63 and the highest carbohydrate content in treatment 50 grams (FC) = 32.05.Conclusion: The addition of red bean flour had a significant effect on the organoleptic snakehead fish nuggets. The highest levels of protein and carbohydrates and fiber content in snakehead fish nuggets was higher in the 50 gram (FA)
