Determinant factors of stunting in children 2-5 years in West Aceh District, Indonesia
The prevalence of stunting in children under five years of age in Indonesia, and Aceh in particular, is still very high. This condition affects the quality of human resources and future economic growth. This study examined the determinants of stunting among children under five years of age 24-59 months in West Aceh District, Aceh Province, Indonesia. The research method was a cross-sectional study design, using secondary data from the EPPGBM and PIS-PK data from the Health Center in 2020. The sample comprised 386 families with children under five. Data were collected through documentation studies from PIS-PK data and stunting data from the E-PPGBM data. Family data matching was performed using the National Identity Number (NIN). Statistical analysis was performed using a Multiple Logistic Regression test with 95% confidence interval (CI). The results showed a significant association between exclusive breastfeeding (OR= 2,81; p= 0,010), latrine use (OR=1,73; p= 0,043), and smoking (OR= 1,62; p= 0,022) with the prevalence of stunting. Furthermore, exclusive breastfeeding was a determining factor for the incidence of stunting in toddlers (OR= 2,36; p= 0,010). In conclusion, exclusive breastfeeding practices are a determinant factor of stunting in children under five in West Aceh, so structured efforts need to be made to increase exclusive breastfeeding coverage by strengthening nutrition counseling and breastfeeding preparation for pregnant women up to two years
Asuhan gizi pada pasien malignant neoplasma di RSD dr. Soebandi Jember
Background: tumor disease is a deadly disease in the world. It is estimated that around 1,300 people die each year from bone tumors. Bone tumors occur due to abnormal growth of mesenchymal cells in bones, which can be malignant/cancerous. Malignant soft tissue tumors can affect anyone, especially the elderly. In developing bone tumor malignancy, it is necessary to have nutritional service assistance that can support the nutritional adequacy of sufferers.Purpose: to determine the effect of nutritional care process on the development of the malignant neoplasma patient's condition.Methods: this study used the case study design. Management of nutrition care which was carried out for three consecutive days from 17 to 19 November 2022 to a patients with malignant neoplasma at RSD dr. Soebandi. The data collection process was carried out by interviews, anthropometric measurements, observe the medical records and survey consumption using 24-hour food recall method.Results: during monitoring the patient is included in a normal nutritional state and does not experience changes; physical and clinical evaluation showed that there were still complaints of weakness after the chemotherapy process; monitoring and analysis of intake show that the average intake of energy, protein and carbohydrates meets the target requirement of 89.13%, 81.93%, 89.2% (80-110% of requirement) and fat intake exceeds the target requirement of 126 .6% (80-110% of requirement); as well as the results of diet education and counseling show that patients understand the diet that must be followed and apply it to the recommended food ingredients, but are less compliant with the heavy food given.Conclusion: overall the NCP (Nutrition Care Process) carried out a positive impact to patient with malignant neoplasma patien’s developmet.
Preferensi makanan online dan timbulan sampah plastik delivery masa pandemi Covid-19
Background: the COVID-19 pandemic has affected people's preferences, namely the tendency to shop online. This change in people's tastes is supported by advances in digital technology, as a culinary delivery service. This progress allegedly has the potential to increase the use of plastic as packaging. This increase will pose a risk of packaging waste in the environment.Objectives: this study aims to describe the level of public knowledge about online food preferences and waste generation during the Covid-19 pandemic.Methods: this study used a cross-sectional design, with a purposive sampling technique of 30 respondents with inclusion criteria being online drivers who are located around the location of Jl. Daud Beureuh, Banda Aceh, and has worked for at least 1 month. Data collection was carried out by direct observation and interviews which were carried out in May 2022. The data obtained was then analyzed descriptively and the chi square correlation test.Results: the results of the descriptive study showed that online food preferences during the Covid-19 pandemic were in the increasing category by 19 people (63.3%). While knowledge about waste generation during the Covid-19 pandemic was in the positive category as many as 16 people (53.3%). The p-value = 0.44 The results of this study indicate that there is no relationship between knowledge of online food preferences and the generation of packaging waste during the Covid-19 pandemic.Conclusion: the description of the level of online food preference knowledge is increasing, while the knowledge of waste generation during the Covid-19 pandemic is positive. However, there is no correlation between online food preferences and packaging waste generation
Difference in organoleptic test results and antioxidant activity in variations of the method of making Emprit Ginger and Secang Wood powdered drink
Antioxidants in ginger (Zingiber officinale) and sappan wood play roles in health benefits, including dilating blood vessels and inhibiting cancer cells. The study analyzes the differences in organoleptic characteristics and antioxidant activity of powdered ginger and sappan wood, comparing Crystallization (MK) and conventional drying (MP) methods. In the crystallization method, 100 grams of Emprit Ginger and 5 grams of sappan wood sticks were blended, followed by adding 500 ml of water and 50 grams of sugar, then stirred in a hot pan for 2 hours until crystals formed. In the conventional drying method, an equal amount of ginger was dried for 5 days, and then, together with sappan wood and sugar, it was ground using a food processor. The data from the organoleptic test were normal, and the T-test result showed that powdered drinks from the drying method significantly exhibited better hedonic quality (p<0,05). For every 100 grams, this powder contains 386 kcal of energy, 1,62% ash content, 2,18% moisture content, 91,88% carbohydrates, 1,0% fat, 2,32% protein, and 2040,86 mg/kg of antioxidant activity (IC50 method). In conclusion, different methods affect the characteristics of ginger powder, which has implications for product development and medicinal uses.Keywords:
Substitution of chayote, dragon fruit peel, and kepok banana peel on nutrient content and sensory of Vegetable Leather as high fiber snack
Consumption of vegetables and fruit in school-age children, which is still less than the recommended five servings/day in 2018, can increase the risk of nutritional problems in children due to low fiber consumption, leading to obesity. High-fiber snacks made from local food can be a solution. However, the availability is still limited. This research aims to develop snack products from chayote, dragon fruit peel, and Kepok banana peel. This quasi-experimental study was conducted from April 2021 to August 2022 at Saraswanti Indo Genetech Chemistry Laboratorium in Bogor. The sample consists of moderately trained panelists, as many as 30 people. There were four concentration formulations of chayote, dragon fruit peel, and Kepok banana peel. Data were analyzed using One Way Anova and followed by Duncan Multiple Range Test (DMRT). The result shows significant differences in color (p= 0,000), taste (p= 0,000), texture (p= 0,000), and overall preference level between formulations (p= 0,002). The selected F2 contains a water content of 18,25%, ash content of 3,12%, protein of 2,82%, fat of 0,28%, carbohydrates of 75,53%, dietary fiber of 10,48 %, and a total plate count of 30 colonies/g. In conclusion, the F2 tends to be more liked by the panelists and can be considered high in fiber
Determinants of household food security during the COVID-19 pandemic in Tulungagung, East Java
Food insecurity remains a significant problem in Indonesia, with severe levels of hunger, due to inadequate food consumption and poor quality. Since the COVID-19 pandemic, changes in the food system and possible income losses have threatened household food security in Indonesia. This study aims to assess the determinants of household food security during the COVID-19 pandemic. This descriptive-analytic research method with a cross-sectional study was conducted from May to July 2021. The sampling technique used random sampling to obtain two villages with 187 parents in Tulungagung, East Java. Data collection on sociodemographic characteristics, social assistance, the impact of COVID-19, coping strategies, and household food security used interview techniques via WhatsApp and telephone. Testing in this study used chi-square for bivariate analysis and multiple logistic Regression for multivariate analysis. The results showed that the prevalence of food insecurity in Tulungagung was 56,1%. After adjusting for several potential confounding factors, such as income (p= 0,021; OR= 2,388), type of social assistance (NGO) (p= 0,002; OR= 3,945), change in employment status (p= 0,044; OR= 2,026), and food compromise coping strategy (p= 0,008; OR= 10,134) are determinants of household food security. In conclusion, the determinants of household food security are income, change in employment status, type of social assistance (NGO), and food compromise coping strategies
Pengaruh suhu dan tempat penyimpanan terhadap kadar air dan mutu organoleptik biskuit subtitusi tepung belut (Monopterus albus zuieuw)
Biscuits with eel flour substitution contained high energy and protein. Food spoilage during storage is caused by water absorption from food storage. This study examines the effect of storage on the water content of biscuits and organoleptic quality. This research was a quasi-experiment conducted by laboratory analysis of the moisture content of biscuits with the addition of eel flour (Monoptherus albus zuieuw). The experiment was conducted at Jayapura Health Polytechnic Laboratory, consisting of 3 formulas (10, 20 and 30 grams) of eel flour substitution. They were packaged using PP plastic and glass jars. The observations were conducted for seven days at temperatures of -18°C and 45°C. Organoleptic test using 17 somewhat trained panellists. Analysis using Independent T-Test. The results showed that biscuits stored at -18°C experienced an increase in water content on the seventh day. Biscuits stored in plastic packaging have a higher water content than glass jars. There was no significant difference in the water content of biscuits stored in jars and plastics (p=0,631). Organoleptic analysis showed that on the sixth day, there was a change in the preference for taste and texture stored in plastic at temperatures of 45°C. In conclusion, there was no significant difference in the moisture content of the biscuits stored in glass or plastic jars. However, there was a decrease in preference on the sixth day of plastic packaging
Sorghum flour's effect on improving plasma lipid profile and atherogenic index in diabetic rats
Dyslipidemia increases the risk of coronary heart disease in people with diabetes. Increased consumption of foods substantial in fiber and antioxidants, such as sorghum, can help people with diabetes manage their lipid profiles and improve insulin sensitivity. The study aimed to evaluate how sorghum flour affected diabetic rats' plasma atherosclerosis index (IAP) score and blood lipid profile. A randomized control design was used for the research's experimental methodology. In 2019, the study was carried out at P3G Laboratory UGM. 18 male Wistar rats served as the subjects and were separated into three groups: treatment (P) (5 g/mouse/day for 28 days), positive control (K+), and negative control of sorghum flour (K-). By administering nicotinamide and streptozotocin (STZ), the DM rat model was created (NA). The GPO-PAP method was used to measure TG levels. Total cholesterol, low-density lipoprotein, and high-density lipoprotein were all measured using CHOD-PAP. The log (TG/HDL) ratio (IAP) calculated the plasma atherosclerosis index. Paired T-tests, Wilcoxon, Anova, and Kruskal-Wallis, were used to evaluate the data. According to the findings, there were significant changes in the groups' baseline and post-intervention levels of total cholesterol (p=0,003), triglycerides (p=0,002), low-density lipoprotein (p=0,003), high-density lipoprotein (p=0,002), and IAP (p=0,001). In conclusion, feeding DM rats sorghum flour altered their blood lipid levels and plasma atherosclerosis index (IAP). Their LDL, triglycerides, and total cholesterol can all be reduced with a daily intake of 5 g per person
The effect of gymnastics on changes in nutritional status and physical fitness levels in overweight and obese adolescents
Gymnastics is a sport that affects the BMI and physical fitness of overweight and obese adolescents. Overweight and obesity occur due to an imbalance in energy intake and expenditure and a decrease in physical activity, which can cause adolescent health problems. This study aims to analyze the effect of physical fitness gymnastics on changes in BMI and physical fitness of overweight and obese adolescents. The research design is a quasi-experimental pre-post intervention study. The research was conducted at the 2nd and 3rd State Junior High Schools in Samarinda City, from November 2020 to January 2021. A sample of 38 people was selected using purposive sampling. Data collection was collected by weighing, measuring height, and measuring nutritional status using BMI for age. Fitness data obtained from IPFT measurement results. Statistical analysis using T-tests. The results showed that there was no difference in body weight and fitness before and after exercise intervention in the two groups (overweight and obese) (p>0,05), but BMI for age showed a difference before and after (p<0,05). With the difference in changes in body weight (2,35 ± 0,85 kg), BMI for age (0,52 ± 18,43), and increased fitness (2,86 ± 2,50). In conclusion, the physical fitness exercise intervention affected changes in body weight, BMI for age, and physical fitness of overweight and obese adolescents, which was carried out for 12 weeks with a frequency of 5 times per week for 30 minutes
Optimasi penggunaan air perasan bunga asoka merah (Ixora coccinea) sebagai pengganti eosin pada pemeriksaan telur cacing Soil Transmitted Helminth
Background: Soil Transmitted Helminth is an intestinal nematode whose reagent for microscopic examination is one of them using 2% Eosin solution. 2% eosin gives a red background against yellowish eggs and sells feces with feces. Eosin besides its many needs is also a reagent which is expensive compared to natural ingredients. The high price of eosin reagent paved the way for using local raw materials as an alternative to eosin staining. One of the local raw materials that can be used is red asoka flower (Ixora coccinea). Red asoka flowers contain anthocyanins which give color to flowers and fruit. Anthocyanin can be used as a natural red dye.Objective: to determine the use of red juice Ixora coccinea in microscopic examination of Soil Transmitted Helminths.Method: this type of quasi-experimental research with a completely randomized design (CRD). The data was obtained by recording the results of the treatment of red asoka flower juice (Ixora coccinea) on worm egg preparations. To see a comparison of the drying time of the reagents on worm egg preparations using red asoka flower juice (Ixora coccinea) with eosin control, three replications were carried out. Data were analyzed by T test.Results: the morphology of the eggshell and egg contents of the Soil Transmitted Helminth worm (Ascaris lumbricoides, Trichuris trichiura, Hookworm) was clearly visible. The results of the t test obtained a p value of 0.000 which is smaller than 0.05.Conclusion: Asoka flower juice can be used as an alternative to examining Soil Transmitted Helminth worm eggs (Ascaris lumbricoidea, Trichuris trichiura, Hookworm). the difference in drying time between asoka and eosin was significant
