    Get PDF
It is clearly understood that the economic disruption during the COVID-19 outbreak is causing people to lose their income and access to healthy food. Our study aims to investigate people's spending on food and how their daily expenses on cigarettes impact diet quality. We conducted a cross-sectional online survey in April, 2020 and interviews through social media. There were 180 subjects followed in this study. Analysis was conducted using chi-square. It is found that even though our subjects able to access food but their diet quality to have whole food of four food group daily is not adequate. There is significant association between food expenses on whole food and processed food to diet quality (p<0,001). While there is no significant association between smoking behaviours to diet quality (p=0,684) but the percentage of those who smoke 1 to 3 cigarettes and more than 3 cigarettes daily is larger to have poor diet quality rather than people who do not smoke at all. This study concluded household's expenses for cigarettes and food during the COVID-19 pandemic were able to explain whether diet quality is poor or good. The study suggests the government needs to impose smoking restrictions as part of COVID-19 prevention and reassure people's accessibility to nutritious food during this pandemic

Background: Disasters can cause emergencies that have the potential to impact food and nutrition crises, especially in the first five days (first phase of emergency response); therefore, assistance is needed in the form of providing food immediately. Pregnant women are vulnerable groups that can become victims of disasters. Insufficient intake by pregnant women during a disaster can lead to a potential incidence of infection, stunting, and malnutrition in infants. Additionally, disaster conditions can cause pregnant women to experience stress. Objectives: This study aimed to analyze the formulation of disaster emergency food biscuits in an effort to relieve stress in pregnant women victims of disasters. Methods: This type of research was purely experimental on the biscuit formula and had a completely randomized design with five formulas. The nutritional content was calculated using DKBM. The acceptability test at the organoleptic stage was quasi-experimental. The organoleptic quality tested on 3 limited panelists and 25 somewhat trained panelists was analyzed using the Kruskal Wallis test (α ≤ 0,05). Results: The results showed that the formula with the best acceptability was F1 (purple sweet potato flour 30 g; skim milk powder 10 g; soy protein isolate 5 g; nutmeg powder 7 g) with total energy per serving  247,4 kcal, which fulfills 11% of the energy needs of pregnant women. Giving 7 grams of nutmeg powder can potentially relieve stress in pregnant women if consumed one serving per day for 15 days. Conclusion:  An increasing number of substitutions resulted in lower acceptability and higher energy, protein, and fiber contents in biscuits. In addition, biscuits are produced with high nutritional content and can relieve stress. The formula with the best acceptability was obtained using F1 (7,5% purple sweet potato flour, 2,5% skim milk powder, 1,3% soy protein isolate, and 1,8% nutmeg) and had the potential to relieve the stress of pregnant female victims of the disaster.

    No full text
Treatment of Diabetes Mellitus (DM) is generally through optimizing a balanced diet. Soybeans and sweet potatoes have good antioxidants and can be developed as healthy foods for people with diabetes. Soybeans and sweet potatoes are processed into Soy-yoghurt. This study aims to determine the potential of soy yogurt as an antidiabetic in experimental animals, Rattus norvegicus induced by hyperglycemia, using Streptozotocin. This study used a experiment design with a total of 40 experimental animals. The research was conducted at the Medica Farma Husada Polytechnic Laboratory, Mataram, in 2022. The experimental animals that Streptozotocin (STZ) induced were then given Soy-yogurt orally at 3 ml and 3.5 ml doses. Experimental animals' Fasting Blood Glucose (FBG) levels were measured weekly using a Glucometer, while body weight (BW) was measured every three days. The results obtained were then analyzed statistically using the ANOVA test. The test results showed that there was a significant difference in blood sugar levels (p0,05). This study concludes that the provision of soybeans can affect the level of FBG  of the experimental animals but does not affect the BW of the experimental animals

“Just give her a banana”: An ethnographic exploration of causes of stunting in Aceh, Indonesia

    Get PDF
Thirty-seven percent of children in Aceh suffer from stunting. This number is concerning. Several programs offering supplementary nutrition for children in hot areas have been conducted. However, the percentage is decreasing too slowly. It is unclear why those programs were ineffective. The study aims to explore the cause of stunting in children aged 25-59 months in the Kota Sigli Sub-district, Pidie Regency, Aceh, Indonesia. Qualitative research was conducted on January 2022 using ethnographic tools. Data were collected through participant observation, semi-structured interviews with eight (8) mothers of stunted children, and informal interviews with midwives. Result, the findings show that there are various factors that may influence the incidence of stunting in children: failure to provide exclusive breastfeeding, inappropriate complementary feeding, and problems with hygiene and sanitation that affect children’s health. In conclusion, this calls for an integrated approach to engaging the Indonesian government, parents, and communities in overcoming the root of the stunting problem: poverty. Keywords:
