Ready-to-eat foods are required immediately in disaster situations. Asam Keumamah is a ready-to-eat product that is not durable. Irradiation with asam keumamah extends the shelf life of the product,  reduces microbial load, and maintains nutrition. This study aimed to determine the microbiological quality and food safety of Asam Keumamah irradiated at different doses. The experimental research used a Factorial Completely Randomized Design (CRD) on Asam Keumamah samples that had been irradiated at doses of 0, 20, 30, 40, and 50 kGy and stored for 0, 1, 3, and 6 months at room temperature. The irradiation of Asam Keumamah was carried out at the Merah Putih Gamma Irradiator Merah Putih in the Puspitek area, Serpong, South Tangerang.  The total bacterial test on all samples using TPC was conducted at the Balai Perikanan Budidaya Air Payau Ujung Bate (BPBAP-UB) Aceh Besar Laboratory. Data were analyzed using factorial Anova test and Duncan’s test at 95% CI. The results showed that the irradiation dose had a significant effect on the number of bacteria (p0,05), and the interaction between irradiation dose and storage period had a significant effect on the number of Asam Keumamah bacteria (p=0,0001). This study concluded that the higher the irradiation dose, the lower the number of bacteria and durability

Groundnut (Arachis hypogaea L), an important food in the Indonesian diet, has been reported to be contaminated with the carcinogenic Aflatoxin B1. However, research on consumer knowledge of and exposure to AfB1 from peanuts in Indonesia is limited. This study aimed to assess the exposure to aflatoxin B1 (AfB1) in peanuts consumed by urban Jakarta and their knowledge of aflatoxin risk. This observational study had a cross-sectional design and involved 192 randomly selected respondents. Peanut intake frequency was measured using a semi-quantitative FFQ instrument. Questionnaires were used to collect data regarding knowledge and income. The AfB1 content was analyzed using HPLC. Pearson Chi-Square test was used for analysis. The results showed that AfB1 contaminants were present in all the samples. Respondents who frequently consumed high amounts of peanuts and processed products were exposed to AfB1, with a median of 22,55 ppb bb/day.  There were no significant relationships between knowledge and AfB1 exposure (p= 0,874), age (p= 0,884), or income (p= 0,355). In conclusion, aflatoxin B1 exposure was high in urban areas. No relationship was found between knowledge of and exposure to AfB1 peanuts. Inter-sectoral strengthening of the empowerment and control of aflatoxin exposure is needed, as are economic and health impact studies on AfB1 exposure

Background: Mortality in COVID-19 patients is related to several factors, including comorbidities, age, gender, increased D-dimer levels, elevated CRP levels, lymphopenia, leukocytosis, and hypoalbuminemia. Nevertheless, there is a scarcity of research on the impact of hypoalbuminemia on COVID-19 mortality, particularly in Indonesia. Objective: This study aimed to determine the effect of hypoalbuminemia, age, gender, and comorbid status on the mortality rate of COVID-19 patients at Prof. Dr. Margono Soekarjo Hospital. Methods: This research employed an observational analytic method, utilising a cohort design and survival analysis approach. The study was conducted at Prof. Dr. Margono Soekarjo Purwokerto Hospital in December 2023. The study utilised September 2021 medical records as secondary data. The data was analysed using Cox regression to determine the hazard ratio value. The results were deemed statistically significant if the p-value was < 0,05.Results: In September 2021, 217 individuals were hospitalised due to COVID-19. Out of all the patients, only 119 satisfied the specific criteria to be considered as study samples. A total of 49,6% of patients suffered from hypoalbuminemia. The mortality rate was 27,73%, with a higher incidence observed in patients with hypoalbuminemia (25 cases) compared to those without hypoalbuminemia (8 cases). The multivariate analysis revealed that patients with hypoalbuminemia had a 1,8-fold increased risk of mortality compared to patients without hypoalbuminemia (p = 0,007). The age (p = 0,08), gender (p = 0,38), and comorbid status (p = 0,22) of COVID-19 patients did not significantly affect mortality. Conclusion: COVID-19 patients with hypoalbuminemia had a 1,8-fold increased risk of mortality compared to those without hypoalbuminemia. Therefore, it can be inferred that hypoalbuminemia may serve as a prognostic indicator of mortality in COVID-19 patients. KeywordsAlbumin, COVID-19, death, hypoalbuminemi
