Study of the thrombosis prevention function of the fermented rice amazake made from useful fungus.
Get PDF米麹から作られた甘酒には健康効果が報告されている。米麹甘酒の元となる米麹は主にAspergillus oryzaeから調製されているが、その他にも種々の機能性が期待できる有用真菌が多く存在する。そこで、血栓症予防に役立つ機能性食品の開発を目的として、5種類の有用真菌から調製した甘酒について保温時間ごとに線溶活性、抗トロンビン活性、抗酸化活性を測定すると共に、肉軟化剤としてプロテアーゼを用いる方法があり、料理への応用としてプロテアーゼ活性を測定した。線溶活性ではA. oryzaeとA. sojae、抗トロンビン活性ではA. kawachii、抗酸化活性ではA. oryzae、A. sojae、A. kawachii、A. luchuensisが高い活性を示したが、線溶活性、抗トロンビン活性、抗酸化活性の３つの活性を全て示した真菌は認められなかった。よって、甘酒を調製する際、米の糖化に関与するA. oryzae は線溶活性と抗酸化活性を有するため、抗トロンビン活性を示すA. kawachiiと併用することで、機能性を向上させられる可能性が示唆された。また、甘酒保温開始時（保温０時間）の甘酒はいずれの活性も高かったことから、米麹と水を合わせた状態のものを料理に加えることで効果が期待できることが示された。A. oryzae、A. sojaeが高いプロテアーゼ活性を示したことから、A. oryzae、A. kawachiiで調製した血栓症予防効果のある甘酒を肉や魚などタンパク質が豊富な食材の料理に用いた場合は線溶活性や抗トロンビン活性、抗酸化活性の機能性が付加され、さらにプロテアーゼによるタンパク質分解能力によって軟らかくおいしい料理ができることが考えられる。The health effect of the fermented rice amazake is reported. The fermented rice which makes the fermented rice amazake was made from Aspergillus oryzae. Aspergillus or other fungi has some useful fungi which can expect various functionality. I studied of Fibrinolytic activity, Thrombin Time activity, Antioxidant activity of the fermented rice amazake made from Aspergillus kind of five for the thrombosis prevention function. And measured protease activity for application to cooking. A. oryzae and A. sojae demonstrated on Fibrinolytic activity. A. kawachii demonstrated ThrombinTime activity, A. oryza, A. sojae, A. kawachii, A. luchuensis demonstrated Antioxidant activity. But No fungi having common activity in fibrinolytic activity, antithrombin activity, and antioxidant activity was found.
Hence A. oryzae which makes the fermented rice amazake has fibrinolytic activity, antioxidant activity. And this amazake possible to improve functionality that add to A. kawachii which has antithrombin activity. Best of enzyme activity of the fermented rice amazake was heat keeping 0 hour. Therefor when cooking , expected to be effective meal by add to fermented rice amazake which just mixed fermented rice and water. Proteinase activity measurement results demonstrated that A. sojae and A. oryzae were highly active. And M. purpureus was kept proteinase acyivity on all heat keeping time. In consequence the fermented rice that mix A. sojae, A. kawachii, M. purpureus, cooking on add to protein like meet or fish, and we can eat softly ,delicious meal which has function.departmental bulletin pape

Characteristics of motor function in terms of the relationship between coordination ability and degree of locomotion: For the participants of Mukogawa Women's University Open College
Get PDF本研究は武庫川女子大学オープンカレッジ講座の参加者を対象に，ロコモ度テスト（立ち上がり，2ステップ，ロコモ25）から運動機能の特性について，また握力による出力調節課題を用いて調整力について検討し，中高年以降の女性における調整力と運動機能との関連の一端を示した．運動機能に関して，立ち上がりテストと2 ステップテストは年代が上がるほどロコモ度が高くなり，ロコモ25 では年代による違いはみられなかったことから，客観的に評価される移動機能と，主観的に評価される生活活動機能では，加齢に伴う変化が異なることが示唆された．調整力については，力を減少させる調節において目標値よりも力を減らし過ぎる傾向が示され，年代による差異がみられた．ロコモと筋力との関連については，最大握力と立ち上がりテスト，最大握力と2 ステップテストとの間に，ロコモと調整力との関連については，力を減少させる調節とロコモ25 の間に関係性がみられた．This study examined the characteristics of locomotor function in middle-aged and older women learning at Mukogawa Women's University Open College using the Locomotor degree test（ which includes the stand-up test, two-step test, and 25-question Geriatric Locomotive Function Scale ［GLFS-25］）,and the coordination ability test using force adjustment tasks. The results showed that the degree of locomotion increased with age for the stand-up and the two-step tests; however, GLFS-25 showed no difference by age. The results suggest that changes with age differ between objectively assessed locomotor function and subjectively assessed activities of daily living function. The tendency of undershooting the target value in coordination ability was seen in the adjustment of decreasing force, and the influence of age was observed. Furthermore, relationships were observed between maximum grip strength and the stand-up test, between maximum grip strength and the two-step test, and between adjustment of decreasing force and GLFS-25.departmental bulletin pape
Students’ Perceptions of Online Pediatric Nursing Practice Using a Pediatric Training Manikin
Get PDFオンラインで小児看護学実習を行った学生の意見を、小児実習モデル人形を用いたオンライン実習で学んだこと・できたこと、困難に感じたこと・できなかったことについて明らかにすることを目的に、学生6名に半構造化面接調査を行い、内容分析を行った。学んだこと・できたことは45コードあり、【患児と家族に対するコミュニケーションの方法を学べた】【声や動き、カルテの情報で患児の反応をつかめた】など12カテゴリに分類された。困難に感じたこと・できなかったことは41コードあり、【バイタルサインの測定や日常生活援助が経験できなかった】【人形なので患児の表情や症状の観察ができなかった】【目線を合わせることが難しかった】など15カテゴリに分類された。学生はオンラインでも人形の声や動き、文字情報により患児の反応をとらえ、コミュニケーションの方法を学べたと考えていた。一方で、接触を伴う実践ができなかったとの意見が得られた。departmental bulletin pape
