Studies on the Materials of Processed Foods : The efficacy of sweet taste and umami on the sodium-restricted Kimuchi
Get PDFThe pickles are the preservation-related superior processed foods which preserved vegetables in salt. Excessive salt becomes the difficult point nutritionally, it is used salt in processing procedure. The kimuchi comes to account for the first place of the pickles amount of production in current Japan. Therefore, among the spices which constituted "yannyomu" used for the kimuchi, we paid our attention to taste and sweetness and made the kimuchi based on the experimental condition that varied in the density of dashi and sugar. As a result, the water included in cells of the Chinese cabbage was increased in soup stock density and that of sweetness material to 2 times - 2.5 times, and the salt was decreased by the ingredients in yannyomu which is a liquid penetration in the cells. In addition, the taste ingredient which occurred by the enzyme reaction was increased , and lactic acid and a very small amount of alcohol were generated by work of a lactic acid bacterium and the yeast more, and sodium restriction was showed that there was an good effect without spoiling a flavor of the kimuchi.departmental bulletin pape

Effects of guardians' lifestyle on dietary behaviors in preschool children
Get PDFThe objective of this study was to clarify the current dietary habits of young children and the dietary awareness of their guardians. A questionnaire survey was administered to the guardians of young children living in Gifu Prefecture in order to analyze the effects of guardians' lifestyle and interest in dietary behavior on young children. The subjects were 336 guardians of preschool children (response rate, 85.3%). Guardians with earlier bedtimes were found to be more likely to eat breakfast with their families, and their children watched less TV during dinner and exhibited less picky eating behavior than the children of guardians with later bedtimes. These findings suggest that steady sleeping behaviors in guardians are associated with dietary behaviors in children.departmental bulletin pape
A Consideration of the Possibility of Metonymy in Rhetorical Criticism: Reading the Texts of Michel de Certeau and Paul de Man
Get PDFRhetoricians have long thought highly ofmetaphor as a trope, while paying less attention to metonymy. This study deals with the possible function of metonymy especially in thinking patterns. We discuss this notion referring to the relation between `strategy and tactics' corresponding to the concept of `place and space' presented by Michel de Certeau. This theorist regards rhetoric as one of the most important `tactics', particularly focusing on metaphor as rhetoric. Get PDF"Social nicotine dependence" is a new concept for describing a psychological and psychosocial state associated with cognitive distortions of smoking, which have induced the great difficulty to quit smoking in Japanese society. In the present study, we calculated the psychological state for environmental tobacco smoking (ETS) of Japanese female college students who had never have smoked in their life, using "the Kano Test for Social Nicotine Dependence (KTSND)." Furthermore, we examined the effects of attributes and lifestyle factors with social nicotine dependence. Mean score of KTSND was 10.3 in this population. Students of 2nd grade, fashion design course attend this project to understand the system of fashion business and apparel industry of Gifu area. They apply their original design illustration for middle aged women after studying fashion trends of 2013-14 AW to the organization. After the competition 16 designs were selected. They draw their pattern and specification form and ask to make garments to apparel industry. There were some collaboration works between students and industry until making up products.
