    Microbial biocontrol strategies for sustainable food processes

    The doctoral thesis mainly focused on the use of Lactic Acid Bacteria (LAB) as biocontrol agent for maintaining the quality of agri-food products, on ready-to-eat fruits. A polyphasic characterization of the LAB strains selected for biocontrol was performed, by focusing also on probiotic and functional properties which they could give to ready-to-eat fruits. This thesis is structured in three parts: introduction (Chapter 1), experimental section (Chapters from 2 to 7) and conclusions (Chapter 8). The experimental section is subdivided into two sub-sections. The first experimental section consists in two chapters (Chapters 2 and 3) in which the methods for antifungal characterization and application of LAB metabolites (CFSs) in sliced kiwifruits (Chapter 2) and for isolation, antifungal and probiotic characterization and application of living cell (LAB suspension) in table grapes berries (Chapter 3) were preliminarily tested with LAB strains belonging to UNIFG microbial culture collection and coming from ecological niche (such as sourdough and honey, respectively) different to those of the final application (e.g. fruit surface and tissue, such as sliced kiwifruit and table grapes berries). The second experimental section, and the core of this work, consists in four chapters (Chapters from 4 to 7), in which the methods tested above were employed and new techniques and applications were developed from them, with the common thread that the same LAB strains were utilized during the whole section and that the LAB used in this case derived from ecological niches like those in which they were applied (e.g. fruit surface). In particular, these 5 LAB strains were isolated from the surface and tissues of wild fruits and vegetables and characterized for their probiotic activity (Chapter 4), subjected to an extensive metabolites profiling and characterization of antifungal activity (Chapter 5), and finally applied as LAB strains with dual functionality on table grapes berries (Chapter 6) and strawberries (Chapter 7), with different methods of application

    Questa tesi di dottorato, sviluppata nell’ambito del PON Ricerca e Innovazione 2014-2020 del PNRR, si concentra sulla pianificazione e gestione delle zone umide per promuovere biodiversità e sviluppo sostenibile in contesti agricoli. Il caso studio è l’Oasi Laguna del Re (Manfredonia, FG), una zona umida costiera di elevato valore naturalistico, caratterizzata da habitat prioritari riconosciuti dalla Rete Natura 2000. La ricerca si articola su tre pilastri interconnessi: a) conservazione della biodiversità, b) fornitura di beni e servizi sostenibili e c) conoscenza, educazione, ricreazione e governance. L’approccio metodologico combina il modello DPSIR e la Scala di Permanenza di Yeomans, fornendo le basi per un piano strategico e un programma attuativo mirati alla valorizzazione dell’area. Gli articoli scientifici prodotti, pubblicati in open access e parte integrante della tesi stessa, approfondiscono i servizi ecosistemici offerti dall’Oasi Laguna del Re, con un focus su: • Servizi di approvvigionamento e culturali: analisi delle specie fitoalimurgiche presenti, che connettono tradizione, patrimonio culturale locale e potenziale coltivazione di alofite di interesse commerciale, garantendo sempre la priorità alla conservazione della biodiversità. • Servizi di regolazione e culturali: studio del legame tra la tutela delle popolazioni ornitiche, con l’individuazione di specie "flagship" rappresentative, e il loro ruolo nell’attrarre visitatori, promuovendo attività come il birdwatching e altre esperienze culturali e ricreative. • Servizi di approvvigionamento e regolazione: valutazione delle opportunità agricole nell’Oasi, con particolare attenzione alla salicornia come coltura strategica per lo sviluppo di filiere agroalimentari sostenibili in ambienti salini, dove le opzioni colturali sono limitate. Il lavoro di tesi culmina in un piano territoriale integrato che armonizza conservazione, valorizzazione culturale e sviluppo socio-economico, proponendo un modello di gestione sostenibile e replicabile per altre aree umide.This PhD thesis, developed within the framework of the PON Research and Innovation 2014-2020 within the PNRR, focuses on the planning and management of wetlands to promote biodiversity and sustainable development in agricultural contexts. The case study is the King’s Lagoon Oasis (Manfredonia, FG), a coastal wetland of high naturalistic value, characterised by priority habitats recognised by the Natura 2000 Network. The research is structured around three interconnected pillars: a) biodiversity conservation, b) provision of sustainable goods and c) services and knowledge, education, recreation and governance. The methodological approach combines the DPSIR model and the Yeomans Permanence Scale, providing the basis for a strategic plan and implementation programme aimed at enhancing the area. The scientific articles produced, published in open access and an integral part of the thesis, delve into the ecosystem services offered by the King's Lagoon, with a focus on: • Supply and cultural services: analysis of the phytoalimurgical species present, linking tradition, local cultural heritage and potential cultivation of halophytes of commercial interest, always ensuring that biodiversity conservation is a priority. • Regulatory and cultural services: study of the link between the protection of bird populations, with the identification of representative ‘flagship’ species, and their role in attracting visitors, promoting activities such as birdwatching and other cultural and recreational experiences. • Provisioning and regulation: assessment of agricultural opportunities in the oasis, with a focus on glasswort as a strategic crop for the development of sustainable agri- food chains in saline environments, where cultivation options are limited. The work culminates in an integrated territorial plan that harmonises conservation, cultural enhancement and socio-economic development, proposing a sustainable and replicable management model for other wetlands

The disease typically begins with a single erythematous plaque called the "herald patch" (HP), followed by a secondary generalized, symmetrical eruption.     Fe-dependent structural evolution of peralkaline soda aluminosilicate glasses: Iron speciation vs. glass transition

    The incorporation of iron into peralkaline silicate glasses significantly impacts their structural and thermal properties. Here we investigate how addition of iron influences the network connectivity (short- and medium-range order) and glass transition temperature (Tg) with particular regard to the iron speciation and the Fe2+ and Fe3+ coordination state. We also found a sort of tipping point in iron concentration beyond which the short-range structures evolve linearly with density while the medium-range structure deviates from linearity. This behavior seems related to a re-enrichment of tetrahedral units triggered by iron self-compensation effect explaining the observed jump in Tg
