Development, Characterization, and Exploitation in Food Systems of Functional Ingredients Obtained from Artichoke By-Products Phenolic Extracts
The study aimed to assess the technological properties of six ethanolic phenolic-rich extracts derived from artichoke bracts, stems, and leaves using different extraction methods (maceration and ultrasonic-assisted extraction—UAE) for the formulation of oil-in-water emulsions in which pea protein concentrate served as an emulsifier. To this aim, the extracts were tested for their surface properties and their effect on the colloidal and antioxidant properties in emulsions. The extracts reduced the surface tension at the water/air interface in a dose-dependent manner, with the leaf extract obtained by UAE displaying the highest surface activity. In emulsions, the extracts increased oil droplet size and induced flocculation while being able to delay oxidation, as indicated by the induction period significantly higher compared to the control. In the last part of the work, encapsulation by spray-drying was explored on a selected leaf extract, and its release behavior in an enriched vegan mayonnaise was tested by in vitro digestion. The encapsulation influenced the release of phenolic compounds during simulated gastrointestinal digestion of the enriched vegan mayonnaise, demonstrating promising protective effects in the gastric environment and promoting a predominant release during the intestinal phase, potentially enhancing the absorption and bio-accessibility of the phenolic compounds

LC-MS/MS based analytical strategies for the detection of lipid peroxidation products in biological matrices
Oxidative stress (OS) arises mainly from exposure to reactive oxygen species (ROS) such as superoxide anion, hydroxyl radical, and hydrogen peroxide. These molecules can cause significant damage to proteins, DNA, and lipids, leading to various diseases. Cells fight ROS with detoxifying enzymes; however, an imbalance can cause damage leading to ischemic conditions, heart disease progression, and neurological disorders such as Alzheimer's disease. Accurate assessment of OS levels is then crucial and oxidized lipidic products are considered relevant OS biomarkers. In fact, lipids are particularly prone to ROS attack, leading to lipid peroxidation, cell membrane damage, and toxic by-products affecting DNA, proteins, and low-density lipoproteins. This review reports on recent advances in LC-MS/MS approaches for OS lipidic biomarkers, focusing on overcoming analytical challenges. 3 different classes of biomarkers have been reported, malondialdehyde, isoprostanes and oxidised sterols. For each class, the main analytical challenges with a particular focus on derivatisation procedure, sensitivity, matrix effect, ionisation have been described and discussed. The recent advancements of the LC-MS-MS procedures move towards simpler approaches, reducing errors and improving the reliability of the measurement thus enabling a comprehensive and robust OS assessment

Ricci si cercherà di mostrare come la teologia del XX secolo si sia confrontata, a partire da e attraverso la ‘morte di Dio’ nietzscheana, con la secolarizzazione e le istanze di rinnovamento e di riscatto della fede cristiana, soprattutto in ambito protestante. Pertanto, verrà assunto come punto di innesto al rapporto tra la cosiddetta ‘teologia della morte di Dio’ e il nichilismo secolare, una lettura della filosofia nietzscheana come grande critica al soggetto borghese-cristiano, critica condotta sia nello Zarathustra che nella Genealogia della morale e nell’Anticristo. Il nucleo di tale critica è in sostanza la negazione di quel primato della coscienza che costituisce il retaggio di tutta la grande tradizione del pensiero occidentale, da Agostino a Cartesio

The Public Procurement Sector is a strategic lever for the Economic System of every Country and, particularly in Italy, plays a very important role in the recovery of investment and the revival of the Economy, especially after the global Emergency caused by Covid-19. In this context, Italy and Europe have launched financial instruments and promoted legislative measures to make economies and societies more sustainable, resilient, and prepared for the challenges and opportunities of the Ecological and Digital Transition. Pursuant to Article 47 of Decree Law No. 77/2021 (with very recent innovations introduced by Article 12, paragraph 8, Decree Law No. 19/2024) and related and subsequent Legislation, Contracting Authorities shall include in their tender procedures, as necessary requirements and as additional award criteria, criteria aimed at promoting youth entrepreneurship, gender equality, the recruitment of young people and women (primary Public Policy Objectives), as well as the inclusion of people with disabilities in the workplace (a cross-cutting objective). However, recent interventions concern newly introduced regulations that have not yet been properly applied in the various sectors, the effects of which will only be visible in a few years' time, always in compliance with the EU principles governing tenders. Within the scope of this research, it is therefore considered useful to systematically reconstruct the problematic issues and critical points related to the applicability of Social Clauses in Italy in a complex sector such as Public Procurement and, in this case, Public Works Contracts, also highlighting how, through the latter, certain Public Policy Objectives can also be pursued across the board, in addition to the primary objective, which is to carry out good tenders in accordance with current legislation. In order to gain a comprehensive overview of the national and supranational Framework, we will study the legislation of other countries (the Netherlands) in the same sector from a comparative perspective and analyze concrete data provided by national Companies (Aniem Pescara-Chieti), where I carried out my Academic Mobility, as required by the Doctoral Regulations and the provisions of the PNRR
Exploring Extracellular Vesicles from Hop (Humulus lupulus) Pellets: A Comparative Analysis of Exosomes and Microvesicles
Development and technological functionality of micro and nano sized extracellular vesicles from plant matrices intended for food applications.
This doctoral research project aims to obtain innovative food ingredients with high bioactivity potential made of
encapsulated extracellular vesicles obtained from plant matrices and/or by-products. After extraction from selected plant
sources (citrus fruits, hops), the vesicles will be preliminarily characterised for their physical, structural, technological
and bioactivity (antioxidant and antimicrobial) properties. Encapsulation via spray-drying will be carried out by using
different carriers (maltodextrins, hydrocolloids and/or their mix) that will allow to obtain stable, low moisture powderlike products. The microencapsulated vesicles will be, eventually tested for their efficiency and technological
