Nilai Tambah Produk Sate Kelinci Di Rumah Makan “Warung Sate Kelinci Pak Sudjiono” Kota Batu
Rumah makan “Warung Sate Kelinci Pak Sudjiono”
merupakan usaha yang menjual makanan olahan daging
kelinci seperti sate kelinci, rica-rica kelinci, dan gulai kelinci.
Produksi sate kelinci dalam usaha ini tentunya terdiri dari
beberapa kegiatan dari karkas kelinci masuk, proses
pengolahan, hingga menjadi sate kelinci yang siap disajikan ke
konsumen. Penelitian ini dilakukan dengan tujuan untuk
mengetahui nilai tambah produk sate kelinci dan bagaimana
rantai nilai produk sate kelinci yang terjadi di “Warung Sate
Kelinci Pak Sudjiono”.Penelitian dilakukan di rumah makan
“Warung Sate Kelinci Pak Sudjiono” yang beralamat di Jl. Ir.
Soekarno Ruko Beji, Junrejo, Kota Batu. Penelitian ini
dilakukan selama 31 hari yang dimulai pada 29 Maret hingga
28 April 2019. Metode penelitian yang digunakan adalah
metode studi kasus yaitu kejadian nyata yang berkaitan dengan
nilai tambah sate kelinci. Metode pengambilan sampel yang
digunakan adalah teknik purposive sampling yaitu
pengambilan sampel dilakukan secara sengaja denganiv
bertimbangan bahwa usaha tersebut mengolah dan menjual
sate kelinci secara mandiri. Pengumpulan data dilakukan
dengan cara wawancara dan observasi. Data yang diambil
adalah data primer berupa data kuantitatif dan data kualitatif.
Data yang termasuk kuantitatif yaitu data biaya produksi sate
kelinci, jumlah sate kelinci yang diproduksi, dan satuan harga
sate kelinci yang ditetapkan. Sedangkan data yang termasuk
kuantitatif yaitu proses pengolahan sate kelinci dari hulu,
processing, hingga hilir beserta pemasarannya. Analisis data
yang digunakan adalah analisis data deskriptif untuk
menjelaskan rantai nilai produk sate kelinci dan analisis
ekonomi untuk menjelaskan biaya produksi dan nilai tambah
sate kelinci.
Rumah makan “Warung Sate Kelinci Pak Sudjiono”
didirikan oleh Bapak Sudjiono bersama istrinya Ibu Nurwati.
Usaha ini telah didirikan sejak tahun 2009 dengan
bermodalkan 10-15 juta rupiah. Tujuan didirikannya usaha ini
adalah sebagai mata pencarian untuk keluarga pemilik usaha.
Menu makanan yang ada hingga saat ini berjumlah 15 macam
dan menu minuman sebanyak 8 macam. Jenis tenaga kerja
yang digunakanadalah tenaga kerja dalam keluarga.
Pengolahan sate kelinci selama waktu penelitian
membutuhkan waktu sekitar 16 hari dengan jam kerja sekitar 4
jam/ hari. Usaha ini dapat menjual sate kelinci sekitar 4000-
5000 tusuk dengan pendapatan sate kelinci menyumbang
sekitar 45% dari total pendapatan usaha ini.
Hasil penelitian menunjukkan bahwa biaya produksi
yang dibutuhkan untuk mengolah 100 kg karkas kelinci
menjadi 4550 tusuk sate kelinci adalah Rp 10.937.209,38/
bulan. Biaya produksi ini terdiri dari biaya penyusutan alat,
penyusutan bangunan, karkas kelinci, bumbu, lemak sapi,v
tusuk sate, arang, pemakaian listrik dan jasa pemasaran
GrabFood. Hasil analisis rantai nilai produk sate kelinci di
“Warung Sate Kelinci Pak Sudjiono”terdapat pelaku yang
berperan yaitu peternak di sektor hulu; supplier karkas kelinci
dan “Warung Sate Kelinci Pak Sudjiono” di sektor processing;
serta GrabFooddan konsumen di sektor hilir. Aliran produk
yang terjadi mengalir dari sektor hulu menuju hilir berupa
ternak kelinci kemudian karkas kelinci dan produk akhirnya
adalah sate kelinci yang diterima konsumen. Aliran finansial
yang terjadi mengalir dari hilir ke hulu yang terdiri dari proses
transaksi, pinjaman modal dan layanan transaksi. Konsumen
mendapatkan kemudahan transaksi yang didapatkan dari jasa
GrabFood berupa jenis pembayaran tunai maupun e-money.
Transaksi yang terjadi antara “Warung Sate Kelinci Pak
Sudjiono” – supplier karkas kelinci – peternak berupa sistem
pembayaran tunai maupun transfer. Pinjaman modal ini
dilakukan oleh supplier karkas kelinci kepada peternak yang
sudah dianggap loyal dan selalu melakukan transaksi jual-beli
ternak kelinci. Pinjaman modal yang dilakukan adalah dengan
pemberian modal untuk indukan baru, bibit baru, maupun
perluasan kandang. Aliran informasi yang terjadi mengalir
secara dua arah baik dari hulu ke hilir maupun hilir ke hulu.
Aliran informasi yang terjadi dalam rantai ini berkaitan
dengan ketersediaan barang. Aliran mengalir secara vertikal
artinya terdapat koordinasi pada mata rantai yang berbeda
yaitu antara peternak, supplier,“Warung Sate Kelinci Pak
Sudjiono”, jasa GrabFood, dan konsumen sedangkan aliran
secara horizontal artinya terdapat koordinasi pada sesama
anggota mata rantai. Hasil analisis nilai tambah produk sate
kelinci di “Warung Sate Kelinciadalah Rp 1.712.790,62 atau
setara dengan Rp 3.764,37/ porsi (12,54%). Nilai tambahvi
secara sosial yang dihasilkan “Warung Sate Kelinci Pak
Sudjiono” berupa penggunaan teknologi dalam transaksi,
meningkatkan peluang kerja, dan menambah keterampilan
pekerja dalam proses pengolahan. Penggunaan teknologi
seperti metode pembayaran transfer rekening antara supplier
karkas kelinci dengan “Warung Sate Kelinci Pak Sudjiono”
mempermudah dan mempersingkat waktu transaksi jual-beli
karkas kelinci. Adanya “Warung Sate Kelinci Pak Sudjiono”
juga meningkatkan peluang kerja untuk warga setempat
beserta dengan keterampilan pekerja dalam proses pengolahan
sate kelinci.
Kesimpulan dari penelitian ini adalah nilai tambah
produk sate kelinci di “Warung Sate Kelinci Pak Sudjiono”
secara ekonomi adalah Rp 1.712.790,62 atau Rp 3.764,37/
porsi dan persentase sebesar 12,34%. Nilai tambah secara
sosial di “Warung Sate Kelinci Pak Sudjiono” adalah
meningkatkan peluang kerja untuk warga setempat beserta
dengan keterampilan pekerja dalam proses pengolahan sate
kelinci.Rantai nilai produk sate kelinci di “Warung Sate
Kelinci Pak Sudjiono” terdiri dari beberapa lembaga yaitu
peternak kelinci di sektor hulu; supplier karkas kelinci dan
usaha “Warung Sate Kelinci Pak Sudjiono” di sektor
processing; serta GrabFood dan konsumen di sektor hilir.
Aliran barang yang terjadi berupa karkas kelinci dan produk
akhirnya yaitu sate kelinci. Aliran finansial yang terjadi
memiliki kemudahan pembayaran melalui transfer. Kerjasama
antara “Warung Sate Kelinci Pak Sudjiono” dengan supplier
karkas kelinci memberikan “Warung Sate Kelinci Pak
Sudjiono” keuntungan berupa harga karkas yang stabil disisi
lain timbul ketergantungan terhadap supplier tersebut. Aliran
informasi yang terjadi berupa akses informasi ketersediaanvii
karkas kelinci yang dapat dilakukan melalui telepon seluler
tanpa harus bertemu langsung.Pemilik “Warung Sate Kelinci
Pak Sudjiono”dapat mengolah daging kelinci menjadi olahan
lain untuk meningkatkan nilai tambah dan disarankan
mengurangi ketergantungan terhadap satu supplierdengan cara
bekerjasama dengan peternak kelinci lain dalam pemenuhan

Going Beyond Counting First Authors in Author Co-citation Analysis
The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation
counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed
Variations on the Author
“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
Appropriate Similarity Measures for Author Cocitation Analysis
We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature. Dispelling the Myths Behind First-author Citation Counts
We conducted a full-scale evaluative citation analysis study of scholars in the XML research field to explore just how different from each other author rankings resulting from different citation counting methods actually are, and to demonstrate the capability of emerging data and tools on the Web in supporting more realistic citation counting methods. Our results contest some common arguments for the continued
use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation
counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases. We have done our best to complete the author checklist relating to the use of animals in the hut study. Note that the objective for the hut study was to evaluate the IRS treatment applications for residual efficacy against Anopheles mosquitoes, including the local An. coluzzii mosquito population. Cows were only used to attract mosquitoes into the huts and no tests were carried out directly on the cows. The author checklist is intended for use with studies where experiments are carried out on animals, which is why we have had such difficulty in completing this for the hut study, as many of the questions do not relate to how the cows were used
