Past, Present, and Future: The Food Service Industry and Its Changes
In the article - Past, Present, and Future: The Food Service Industry and Its Changes - by Brother Herman E. Zaccarelli, International Director, Restaurant, Hotel and Institutional Management Institute at Purdue University, Brother Zaccarelli initially states: “Educators play an important role in the evolution of the food service industry. The author discusses that evolution and suggests how educators can be change agents along with management in that evolutionary progression.”
The author goes on to wax philosophically, as well as speak generically about the food service industry; to why it offers fascinating and rewarding careers. Additionally, he writes about the influence educators have on students in this regard.
“Educators can speak about how the food service industry has benefited them both personally and professionally,” says Brother Zaccarelli. “We get excited about alerting students to the many opportunities and, in fact, serve as “salespersons” for the industry to whoever (school administrators, legislators, and peers in the educational institution) will listen.”
Brother Zaccarelli also speaks to growth and changes in food service, and even more importantly about the people and faces behind everything that food service, and hospitality in general comprise. The author will have you know, that people are what drive an educator.
“What makes the food service industry so great? At the heart of this question\u27s answer is people: the people whom it serves in institutional and commercial operations of all types; the people who work within it; the people who provide the goods, services, and equipment to it; the people who study it,” says Brother Zaccarelli. “All of these groups have, of course, a vested personal and/or professional interest in seeing our industry improve.”
Another concept the author would like you to absorb, and it’s even more so true today than yesterday, is the prevalence of convergence and divergence within food service.
For food service and beyond, it is the common denominators and differences that make the hospitality-food service industry so dynamic and vibrant. These are the winds of change presented to an educator who wants to have a positive impact on students.
The author warns that the many elements involved in the food service industry conspire to erode quality of service in an industry that is also persistently expanding, and whose cornerstone principles are underpinned by service itself.
“The three concerns addressed - quality, employees, and marketing - are intimately related,” Brother Zaccarelli says in stripping-down the industry to bare essentials. He defines and addresses the issues related to each with an eye toward how education can reconcile said issues
A spherical model with directional interactions: II. Dynamics and landscape properties
We study a binary non-additive hard-sphere mixture with square well interactions only between dissimilar particles. An appropriate choice of the inter-particle potential parameters favors the formation of equilibrium structures with tetrahedral ordering (Zaccarelli et al 2007 J. Chem. Phys. 127 174501). By performing extensive event-driven molecular dynamics simulations, we monitor the dynamics of the system, locating the iso-diffusivity lines in the phase diagram, and discuss their location with respect to the gas-liquid phase separation. We observe the formation of an ideal gel which continuously crosses towards an attractive glass upon increasing the density. Moreover, we evaluate the statistical properties of the potential energy landscape for this model. We find that the configurational entropy, for densities within the optimal network-forming region, is finite even in the ground state and obeys a logarithmic dependence on the energy
The Underwater Archaeological Map of the Southern Apulia: the GIS (Geographic Information System)
The project allowed us to upgrade the computerized archive of Underwater Archaeological Map of southern Apulia published in 2004 (Auriemma, 2004) in the current Geographic Information System (WebGIS) shared on the network (Cossa, 2013: 3-4 http://www.arcgis.com/ apps/OnePane/storytelling_basic/index.html?appid=edb2b5022b3a4d4abb1b6f4abc95a2c7 ). Developed on the platform ArcGIS-online (www.arcgis.com), thanks to the support of the company Esri, the contribution of CUIS-Consorzio Universitario Interprovinciale Salentino, the partner (city of Racale-Lecce, ITALY) and in accordance with the Superintendence of Archaeological Heritage of Apulia region, this networked version of Forma Maris Antiqui consists of approximately 650 archaeological underwater contexts or artefacts assemblages along the coast of southern Apulia (Cossa et alii, 2010; Cossa et alii, 2012; Zaccarelli et alii, 2011). The cataloguing is in agreement with the ministerial ICCD (Istituto Centrale per il Catalogo e la Documentazione) standard. The next step, aims to include this GIS inside the larger information system of the Carta dei Beni Culturali della Puglia
Equilibrium gels of limited valence colloids
Gels are low-packing arrested states of matter which are able to support stress. On cooling, limited valence colloidal particles form open networks stabilized by the progressive increase of the interparticle bond lifetime. These gels, named equilibrium gels, are the focus of this review article. Differently from other types of colloidal gels, equilibrium gels do not require an underlying phase separation to form. Oppositely, they form in a region of densities deprived of thermodynamic instabilities. Limited valence equilibrium gels neither coarsen nor age with time. (C) 2017 Elsevier Ltd. All rights reserved
Dynamical properties of different models of elastic polymer rings: Confirming the link between deformation and fragility
We report extensive numerical simulations of different models of 2D polymer rings with internal elasticity. We monitor the dynamical behavior of the rings as a function of the packing fraction to address the effects of particle deformation on the collective response of the system. In particular, we compare three different models: (i) a recently investigated model [N. Gnan and E. Zaccarelli, Nat. Phys. 15, 683 (2019)] where an inner Hertzian field providing the internal elasticity acts on the monomers of the ring, (ii) the same model where the effect of such a field on the center of mass is balanced by opposite forces, and (iii) a semi-flexible model where an angular potential between adjacent monomers induces strong particle deformations. By analyzing the dynamics of the three models, we find that in all cases, there exists a direct link between the system fragility and particle asphericity. Among the three, only the first model displays anomalous dynamics in the form of a super-diffusive behavior of the mean-squared displacement and of a compressed exponential relaxation of the density auto-correlation function. We show that this is due to the combination of internal elasticity and the out-of-equilibrium force self-generated by each ring, both of which are necessary ingredients to induce such a peculiar behavior often observed in experiments of colloidal gels. These findings reinforce the role of particle deformation, connected to internal elasticity, in driving the dynamical response of dense soft particles
