New food ingredients for a sustainable and healthy diet: the case of apple pomace
A huge amount of apple “pomace” consisting of skins, seeds and stalks is produced every year from industrial processing worldwide. The recovery and re-use of these by-products in the food chain could increase sustainability of apple industry and contribute to a better nutrition. Indeed apple pomace contains valuable phytochemicals and fibers. The nutritional value of apple pomace is especially linked to its high content of phloridzin. This phenolic compound is known to inhibit competitively the Na+/glucose co-transporter and is recognized as an anti-diabetic agent.
The aims of this study were: to 1) to summarize the state of art of apple pomace potential food uses, and 2) to present novel results on the stability of phytochemicals in dried apple pomace.
For the experimental study, apple pomace and control apple pulp were dehydrated at different moisture levels. Major components were analyzed by AOAC procedures. Phytochemicals were analyzed by HPLC. Antioxidant and antiglycation properties were determined by spectroscopic and fluorescence techniques. Moisture properties were studied by 1H NMR. Storage was carried out at 30 °C for 9 months and kinetic models for phytochemical degradation were developed.
Phytochemical contents were more than one order of magnitude higher in the pomace than in the pulp of apple. These compounds showed long-term stability in the dried apple pomace, which was related to moisture properties.
The distinctive composition, properties and stability of dried apple pomace support its exploitation on industrial scale for new product development. Some uses of apple pomace as a food ingredient have resulted successful in terms of consumers’ liking, whereas apple pomace benefits in terms of health improvement still remain to be validated
Apple pomace is a good matrix for phytochemical retention
Phytochemical content and color changes in dried apple pomace and pulp (mixture of Red Delicious and Golden Delicious varieties) were studied during 9 months storage in the water activity (aw) range 0.11−0.75 at 30 °C. Water mobility
was measured at various aw levels by 1H NMR. During storage, antioxidant degradation (including flavonols, flavanols, dihydrochalcones, anthocyanins, and hydroxycinnamic acids) followed first-order kinetics, whereas color changes followed zero-order
kinetics. These changes were accelerated by increasing aw. Phytochemical and color were more stable in the pomace than in the pulp over the entire aw range, having 2−6 times smaller degradation rates. These results were related to the lower water mobility found in apple pomace as compared to the pulp. The overall results show that apple pomace can be exploited as a food ingredient with good hytochemical retention, and may help in the development of new matrices with maximum phytochemical retention

Phytochemical stability in dried tomato pulp and peel as affected by moisture properties
Phytochemical stability was studied in dried tomato pulp and dried tomato peel stored at 30 °C with various water activity (aw) levels and related to glass transition temperature (Tg) and water mobility. At aw 30°C for both the pulp and peel, indicating that they were in the glassy state, with little molecular mobility. At aw = 0.56, Tg was <30°C, indicating the samples were in the rubbery state, with decreased viscosity and increased molecular mobility. The hydrophilic antioxidants (hydroxycinnamic acids and naringenin) were stable for samples in the glassy state, but were unstable for samples in the rubbery state. In contrast, the lipophilic antioxidants lycopene and α-tocopherol were mostly unstable for samples in the glassy state. These results could be used to optimize phytochemical contents in tomato products that must be dried prior to further processing
Going Beyond Counting First Authors in Author Co-citation Analysis
The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation
counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed
Moisture properties and stability of novel bioactive ingredients
Substantial research has examined the influence of moisture
on lipid oxidation, browning reactions, and changes in nutrients in common foods.
However, the food supply chains are constantly changing in order to address either
the requirements for healthier foods, the need for better resource management, or
enhanced environmental protection. Promising
opportunities come from the recovery of phytochemicals and proteins from food
byproducts and their conversion into novel food ingredients. Even if consumers
are concerned about possible safety risks associated with food byproducts, suitable
management and traceability systems have become key tools to increase consumers’
trust. Little is known, however, about the storage
stability of phytochemicals and proteins as a function of moisture content. There is a
need to set predictive models for quality degradation in order to find out formulation
strategies aimed at the extension of the stability of these novel ingredients at ambient
temperature. In this context, in the following sections, recent research on
moisture-dependent stability of anthocyanins, flavonols, carotenoids and proteins, or
partially hydrolyzed proteins will be discussed
Variations on the Author
“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
Appropriate Similarity Measures for Author Cocitation Analysis
We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature.
