    Diversity of Saccharomyces cerevisiae strains associated to racemes of Grillo grape variety

    The most important oenological characteristics of high-quality sparkling wines are high content of acidity and low pH. Racemes are late-maturing grapes of Grillo variety characterized by low pH and high content of tartaric and malic acids and, due to their intrinsic characteristics, might represent an interesting technological solution to increase acid quality of base sparkling wine. To this purpose, the use of yeasts able to ferment grape must at very low pH is mandatory for the success of the process. In this work, 261 Saccharomyces cerevisiae isolated from spontaneous vinifications of Grillo grape racemes were subject to intraspecific characterization by interdelta analysis which evidenced a total population consisting of 82 strains which were screened for their basis of technological traits including SO2 and alcohol tolerance, flocculence, growth at low temperatures and qualitative features such as H2S production. A total of 11 strains with interesting technological performance in vitro were inoculated into musts obtained from racemes of Grillo grape variety and microfermentation were monitored. For the first time an ecological investigation of yeast associated to raceme grapes has been carried out and provided an innovative strategy to improve the acidity of a Sicilian sparkling base wine from Grillo grape variety

Vengono quindi presi in considerazione i temi principali degli spettacoli degli anni '90, la creazione di un blog di crescente successo e quindi i primi passi in campo politico, a cominciare dai "V-day". L'articolo si interroga sulla provenienza (da destra o da sinistra) del primo seguito del blog e del Movimento 5 stelle. Dopo aver seguito la crescita dei consensi elettorali del Movimento, il capitolo si conclude analizzando le sue peculiarità organizzative e mettendo il luce il problema ancora irrisolto della sua istituzionalizzazione

    No dia 12 do mês de abril de 2022, Sheila Vieira de Camargo Grillo, professora livre-docente e pesquisadora da FFLCH/USP, recebeu-nos, gentilmente, em sua casa, para a realização desta entrevista, por meio da qual pudemos ouvir a autora a respeito de alguns pontos essenciais de uma nova abordagem de investigação científica no Brasil, a Análise de Discursos Comparativa ou Análise do Discurso Contrastiva (denominação adotada na França, país de origem da abordagem). A professora Sheila Grillo, a partir das perguntas que lhe fizemos, discorreu, dentre outros aspectos, sobre o surgimento dos princípios epistemológicos da abordagem em nosso país, citou alguns de seus importantes eventos ocorridos até o presente momento, bem como nos falou acerca da importância de trabalhos desenvolvidos entre ela e demais pesquisadores do Grupo de Pesquisa Diálogo (CNPq/USP) com professores e pesquisadores do grupo CLESTHIA – axe sens et discours, da Université Sorbonne Nouvelle, Paris 3. Desse modo, aproveitamos o espaço para agradecer à entrevistada pelo acolhimento e pelas informações disponibilizadas. Convidamos o leitor da Linha D’Água a apreciar o resultado deste trabalho.On April 12, 2022, Sheila Vieira de Camargo Grillo, a professor and researcher at the Faculty of Philosophy, Languages and Literature, and Human Sciences of the University of São Paulo, kindly welcomed us to her home for this interview. We were able to hear the author talk about the essential points of a new approach to scientific investigation in Brazil, Comparative Discourse Analysis or Contrastive Discourse Analysis (the name adopted in France, where it originated). Professor Sheila Grillo, based on the questions we asked, spoke about, among other topics, the emergence of the epistemological principles of Comparative Discourse Analysis in Brazil, mentioned some of the important events that have taken place until 2022, and also told us about the importance of the work carried out between herself and other researchers from the Diálogo Research Group (CNPq/USP) with professors and researchers at CLESTHIA - axe sens et discours, from Université Sorbonne Nouvelle, Paris 3.     Radial fast diffusion on the hyperbolic space

    We consider positive radial solutions to the fast diffusion equationon the hyperbolic space. By radial, we mean solutions depending only on the geodesic distance r from a given point o ∈ H^N. We investigate their fine asymptotics near the extinction time T in terms of a separable solution defined in terms of the unique positive energy solution, radial with respect to o, to a semilinear elliptic problem thoroughly studied in [G. Mancini and K. Sandeep, ‘On a semilinear elliptic equation in Hn’, Ann. Sc. Norm. Super. Pisa Cl. Sci. 7 (2008) 635–671; M. Bonforte, F. Gazzola, G. Grillo and J. L.     Use of grape racemes from Grillo cultivar to increase the acidity level of sparkling base wines produced with different Saccharomyces cerevisiae strains

    The most important oenological characteristics of high-quality sparkling wines are aromatic aspect, taste persistence, perlage, high levels of acidity and low pH. Due to hot climate and reduced rainfall that characterize Sicily region, white grape varieties such as Grillo cultivar cultivated in this area are characterized by very low concentrations of malic and tartaric acids. Grillo cultivar is characterized by an intense production of raceme grapes with low pH and high content of tartaric and malic acids. These fruits possess the chemical properties useful to increase the amounts of acids in the final wines. With this in mind, the present research was carried out to test the ability of four Saccharomyces cerevisiae strains (CS182, GR1, MSE13 and MSE41) to ferment a raceme must with a pH of 2.9 at two concentrations (14° and 16° Babo degree) of total sugars. The inoculation of the strains was performed after a preadaptation at pH 2.5. The chemical parameters and kinetics of the fermentations were monitored. The experimental sparkling base wines were characterized by a very high total acidity with 16–17 g/L of tartaric acid and 9–10 g/L of malic acids. On the other hand, ethanol was detected at low values in the range 9–10% (v/v). The base wine obtained with GR1differed in their high acidity values, whereas trials inoculated with CS182 showed more intense odors and exotic fruit. Experimental wines produced in this study represent an innovative strategy for “blending wines” to produce sparkling wines in dry Mediterranean climate

La politique italienne (la « casta ») semble avoir peur du blogueur et cherche à compliquer légalement la publication des blogs.If Second Life can be considered as a form of virtualization of the socio-cultural sphere, Beppe Grillo’s blog can be thought of as a realization of socio-political life in Italy through the Internet.     Use of selected indigenous yeasts from racemes of Grillo grape variety to improve the production of sparkling base wine

    The production of sparkling wines in Sicily is increasing considerably. The most important oenological characteristics of high quality sparkling wines are high content of acidity and low pH. In Sicily, white grape varieties such as those of the cultivar Grillo are characterized by very low concentrations of malic and tartaric acids due to hot climate and reduced rainfall typical of the production area. On the other hand, a very large amount of raceme grapes, characterized by low pH and high content of tartaric and malic acids, is largely produced by Grillo varieties. Hence, the winemaking of racemes might represent a technological solution to increase the quality of the acids in the final wines. At the same time, the selection of yeast strains able to ferment grape must at very low pH is mandatory. With this in mind, the present research was carried out to isolate and selected novel yeast strains from racemes of Grillo cultivar and to set up an innovative ad hoc winemaking protocol to increase the acidity of sparkling base wine. From spontaneous vinifications on Grillo grape racemes, 2873 yeasts were isolated and characterized at the phenotypic and genotypic level. A total of 493 Saccharomyces cerevisiae isolates were subject to intraspecific characterization by interdelta analysis. These strains were also screened on the basis of technological criteria (fermenting power and vigor, SO2 and alcohol tolerance and flocculence) and qualitative features (H2S production). Four strains of S. cerevisiae were selected and inoculated individually into must obtained from Grillo racemes at 12 and 16 % (w/v) of total sugars. All strains displayed a technological potential to drive the fermentation of must into wine at very low pH (2.5-2.8). The inoculation of the strains was performed after a pre-adaptation at pH 2.5. Thus, starters were able to successfully lead fermentation. For the first time an ecological investigation of yeast ecology of raceme grapes has been carried out and an innovative strategy to improve acidity of sparkling base wine in hot climate regions has been designed
