    Market developments in pork production: an economic analysis of the vertical commitment in the supply chain

    In recent years the inclusion of farmers in integrated supply chains has been one of the main research topics in agribusiness. Many researchers have pleaded for a stronger vertical binding by contract farming or vertical integration. Respective schemes from the poultry industry or from abroad (e. g. the Danish pork production) have often served as models. The following contribution deals with this hypothesis and on the basis of newer economic and behavioural theories phrases some critical questions regarding contract farming. By the example of pork production it is shown that there are good reasons for the still widely spread uncommitted production in Germany. Results from an extensive survey among pork producers support this hypothesis

    Die Fleischwirtschaft ist eine in Deutschland in der ökonomischen Forschung bislang wenig beachtete Branche – und dies, obwohl sie mit einem Wertschöpfungsteil von rund 20 % der wichtigste Sektor der Ernährungswirtschaft ist und ihre Spitzenposition in den letzten Jahren weiter ausgebaut hat. Dieses Buch verfolgt das Ziel, zum einen die zentralen Herausforderungen für die Fleischwirtschaft aufzuzeigen, zum anderen aber auch Hinweise zu geben, wo ein Überdenken gewachsener Reaktionsmuster notwendig oder sinnvoll wäre. Dies bezieht sich nicht allein auf das Marketing der Endprodukte, sondern auch auf die Struktur der Wertschöpfungskette und die Gestaltung der Zusammenarbeit zwischen den Stufen. Zu Wort kommen Fachwissenschaftler verschiedener Disziplinen – allerdings mit einem deutlichen Schwerpunkt auf ökonomischen Beiträgen – sowie Vertreter landwirtschaftlicher Verbände und Erzeugergemeinschaften.     Food, Agri-Culture and Tourism Linking local gastronomy and rural tourism: interdisciplinary perspectives

    The book will be a valuable source of information for those concerned with rural and farm tourism, sustainability issues in tourism and the marketing of local gastronomy.     Current and future trends in consumers' preference for farm tourism in Germany

    The aim of this study is to examine the potential of farm tourism differentiation. Accordingly, this article provides four concepts of a farm holiday and identifies five approachable segments of potential customers. Based on a consumer survey conducted in Germany in 2007 of 470 usable responses, a cluster analysis is employed to identify segments with a high level of preference towards the four variations of farm tourism. The clusters are profiled based on the respondents’ psychographic and demographic data. Furthermore, each identified segment is described in terms of its level of appreciation for current farm tourism. This enables us to suggest promotional campaigns which redirect or intensify interest in the new forms of farm tourism.L’objectif de cette étude est d’examiner le potentiel de l’agrotourisme allemand. L’article propose quatre concepts d’un séjour agrotouristique et identifie cinq secteurs pour clientèles potentielles. Basée sur une enquête réalisée en Allemagne en 2007 auprès des 470 consommateurs potentiels, une analyse de cumul d’agrégats est employée afin d’identifier les segments avec un haut niveau de préférence envers les quatre variations d’agrotourisme. Les agrégats sont profilés à partir de données psychographiques et démographiques. Chaque agrégat en outre, identifie est décrit en fonction de son niveau d’appréciation et le désir potentiel pour l’agrotourisme. Cette approche nous permet de suggérer des approches de marketing et de promotion qui pourrait encourager l’intérêt pour de l’agrotourisme

    Assessing determinants of organic food consumption using data from the German National Nutrition Survey II

    The organic food industry is continuously growing worldwide. Critical for sustaining this expansion is an adequate understanding of consumer behaviour. However, reported results of the numerous studies on factors determining consumer decisions are not very consistent. Therefore, we develop a comprehensive causal model to analyse data from 13,074 German consumers gathered through the representative German National Nutrition Survey II (Nationale Verzehrsstudie II). The findings indicate that altruistic motives are the major factors affecting consumer attitude and purchasing behaviour, making socio-demographic variables appear less important. Implications for the organic food industry and recommendations for further research are derived

    Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed
