Case Studies in the Wine Industry aims to close the gap between academic researchers and industry professionals through real world scenarios and field-based research. The book explores how consumer and sensory science has been implemented in the wine industry to achieve certain goals, including the rejuvenation of product image, the shaping of new market places, the achievement of market differentiation and geographical diffusion, the achievement of customer loyalty, and the promotion of traditional features of the product. There is an emerging demand from wine industry professionals and undergraduate and postgraduate students who attend business and agricultural studies courses who want to gain practical information through real cases and field-based research

    The hazardous orienteering problem

    No full text
This article studies the Hazardous Orienteering Problem (HOP), a variant of the more famous Orienteering Problem (OP). In the OP, a vehicle earns a profit for each customer it visits (e.g., to pick up a parcel) subject to an upper bound on the tour time. In the HOP, the parcels picked up at some customers have a probability of triggering a catastrophic event. The probability depends on how long the parcels travel on the vehicle. If any catastrophic event triggers, the entire collected profit is lost. The goal is to determine the tour that maximizes the expected profit. The problem has interesting applications in routing of hazardous material, cash-in-transit, and law enforcement. We propose a mixed-integer nonlinear formulation and techniques both to obtain dual bounds and to produce primal solutions. Computational tests investigate the efficacy of the methods proposed and allow to gain insights into solution features. The work of Alberto Santini has received funding from the European Union’s Horizon 2020 research and innovation programme under the Marie Skłodowska Curie grant agreement number 945380

How Can Consumer Science Help to Reduce the Risk of Market Failure? An Academician-Practitioner Approach in the Italian Olive Oil Industry

    No full text
The olive oil business worldwide has flourished over recent years and new competitive challenges have emerged. Given the changes in the competitive scenario and the risk related to the international reputation of this product, today Italian producers must understand how to manage traditional features of their products and under what conditions country of origin can be managed as a strategic asset. This chapter explores the influence of origin on quality perception of Mediterranean extra virgin olive oil. Moving from a deep analysis of the competitive framework of the business at a global level in the period between 2009 and 2016, this work describes how a company employed information about quality perception to plan a successful marketing strategy. After a description of the business environment, we introduce the experimental sessions that have adopted consumer science tools. Then, emerging outcomes are discussed. Finally, suggestions addressed to both academics and practitioners are provided
