    Characterization of the texture in ready meals

    The demand for ready to eat meals worldwide is growing rapidly. Maintaining the texture of these meals during storage and reheating is very important for the acceptability of these products by the consumer. The effect of chilled and frozen storage and reheating on the textural quality of ready meal components were determined using instrumental texture profile (TPA) and sensory analyses. Type of storage (frozen storage) had a more significant effect on the textural properties of ready meal components compared to method of reheating (P0.05), attesting that RM could preserve the fresh texture signature quality of re-heated meal. The sauces from RM, FM and FO samples were significantly more viscous (4.5-5.0 Pa.s) than from FC (1.3 Pa.s). The textural attributes of ready meal components were assessed by a panel made up of experienced, frequent ready meal consumers, using a 7-point hedonic scale. No significant difference was found in beef texture (chewiness, juiciness, tenderness) among FC, RM and FO (P>0.05). FM beef was tougher and chewier (4.4) compared to the others. Broccoli fresh cooked texture (5.0) was negatively impacted by frozen storage (FO= 2.4; FM=2.8) compared to FC (5.0) and RM (6.5). The textural signature of freshly cooked ready meal composed of meat, vegetables and sauce is better preserved when the meal is refrigerated and reheated in a microwave

    Most of the women above the age of 45years are experiencing the consequences of natural menopause. Menopausal women simultaneously face the challenge of menopausal symptoms plus the risk associated with non-communicable diseases. Cardiovascular diseases and steoporosis are abundant. Natural remedies are sought widely for this condition rejecting hormone replacement therapy blaming the risks associated. The intake of soybean isoflavones is the best choice as the natural treatment strategy for both symptom relief and disease prevention. This review focused on general information about soy isoflavones, their impact on menopausal health, isoflavone contents in different soy food, and their manufacturing suggestions. Founded in the literature evidence, soy food and isoflavones are satisfactorily effective and secure for menopausal health

    Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed.     “Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship

    Appropriate Similarity Measures for Author Cocitation Analysis

    We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature.     Biological invasions happen either deliberately or accidentally and are considered as serious threats to the biodiversity and its irreversible impact to the biodiversity is second only to the habitat loss. Thirty common IAS of plants were selected and the study inquired whether the local people were well aware about IAS of flora and if so, whether these species have badly influenced the environment and farming activities and its distribution in Galigamuwa area. Primary data were collected through a pretested self-administered questionnaire and 65 households were selected by using Multi stage random sampling technique.     Meat icing on muffins: Healthy snacking for older adults

    Older adults have a higher requirement for protein compared to younger adults. An imbalance between protein supply and protein need can result in loss of skeletal muscle mass. Ingestion of 25–30g of protein per meal stimulates muscle protein synthesis in both young and older individuals[1]. The quality of protein ingested is also essential to promoting muscle health. Red meat contains high quality proteins and is rich in leucine. Decreased chewing efficiency and digestion in the elderly are responsible for lower meat protein intake from this group. Minced beef has been shown to be more rapidly-digested than servings of intact beef, resulting in increased amino acid availability and greater postprandial protein retention[2]. Muffins are common bakery snacks,mosltly prefered by older adults [3]. Designing muffins to suit nutritional needs of older adults could contribute to increased dietary protein intake. This study proposed novel easy consumable dietary approach to enhance quality protein intake for older adults. Incorporation of meat into muffin’s icing provide better snacking option to complement their protein needs

    Liver-based infant complementary food

    Abstract- Weaning of infants involves the gradual introduction of solid foods and fluids along with the usual milk fed in their diet. After around six month of age, it becomes difficult to meet the nutritional requirements from the breast milk alone. This study developed beef liver based infant food as a complementary food for infants and determined its nutrient composition and sensory quality. Addition of liver to the vegetable base-formulation significantly improved the nutrient composition (P < 0.05) and consumer acceptance (P < 0.05) ofthe infant food compared to the treatments formulated with vegetables alone. The results of this study supports the importance of incorporating beef liver in to infant complementary food
