GC-IMS and FGC-Enose fingerprint as screening tools for revealing extra virgin olive oil blending with soft-refined olive oils: A feasibility study

The undeclared blending of EVOO with soft-refined oils is one of the main issue in the olive oil sector. Despite the efforts, reliable markers related to soft-refinement processes have not been found yet. In the present work, two rapid headspace-based techniques, namely gas-chromatography ion mobility spectrometry and flash gas chromatography electronic nose, were proposed and tested as rapid screening tools for the detection of this fraud practice. Since real counterfeited samples are not commercially available, soft refined and deacidified olive oils were recreated at a laboratory scale and mixed with EVOO at different percentages. Commercial EVOOs sampled over three harvesting seasons (2015/2016, 2016/2017 and 2017/2018), along with the in-house prepared blends, were analysed by means of the above-mentioned techniques. SIMCA was chosen as classification algorithm to discern the illicit mix from the authentic EVOOs. Both the analytical techniques exhibited notable robustness and stability over the time in terms of intra- and inter-day reproducibility. Concerning the samples discrimination, the final outcome was found to be greatly affected by the inclusion (or exclusion) of the EVOO15/16 group in the model training. When EVOO from more recent harvests (i.e. EVOO16/17, EVOO17/18) were used to calibrate the model, a practically 100% specificity was achieved by both the techniques and even the lowest-percentage adulterated samples (i.e. 10%) were recognized to be non-authentic EVOOs. On the other hand, poorer classification was achieved including the EVOO15/16 in the model training. The present work demonstrated that focusing on the volatile fraction might be the right strategy to overcome the lack of clear and specific process-related marker formed upon soft-refinement processes. At the same time, it highlighted how the EVOO chemical (in)stability would be a crucial aspect to be considered in the development of fingerprinting methods

"'That both English and Italians ... may be civil and humane to each other': l''Account of the Manners and Customs of Italy' di Giuseppe Baretti"

    No full text
The essay focuses on Giuseppe Baretti’s "Account of the Manners and Customs of Italy" published in London in 1768 as a firm refutation of Samuel Sharp’s slanderous "Letters from Italy" (1765) and of the books written by “those other English writers, who after a short tour have ventured to describe Italy and the Italians”. In the Preface, Baretti ascribes their distorted reports about the Bel Paese to “premature and rash judgments” and sets out to provide the English public with a new account of Italian life and culture interspersed with observations on the mistakes of those travelers whose only aim was to write fashionable books full of “slander and invective” just to please their readers’ “malignity and love of novelty”. His account results in an illuminating cultural document in which Italy is ‘explained’ to the English by an Italian intellectual long accustomed to England and English life. This allows him not only to ‘deconstruct’ Sharp’s book by punctually rebutting the prejudices and stereotypes Doctor Sharp shared with many of his contemporaries, but also to provide the reader with pregnant comparisons between the two countries. The essay also points out that Baretti’s position somewhat mirrors that of the traditional travel writer: while the latter usually reports upon a foreign nation to his fellow countrymen often surrendering, as it happens in Sharp’s "Letters", to common views and preconceived ideas, Baretti writes a book about his own country for the benefit of a foreign audience, whose culture and mentality he nevertheless knows well enough to be able to orientate his account in order to make it as appealing as possible to his English readers. A careful negotiation on the part of the author is therefore necessary, which the paper unveils in both its cultural components and argumentative strategies

All-solid state ion-selective carbon black-modified printed electrode for sodium detection in sweat

The synergic combination of printed electronics and printed electrochemical sensors has recently emerged as a new route for developing smart chemical wearable devices applied to sweat monitoring. Sodium ion is one of electrolytes monitored in sweat to evaluate sweating level for electrolyte replacement recommendations. Herein, we report the development of new designed screen-printed electrodes, in which working electrode has been easily modified by drop-casting with the nanomaterial carbon black and a selective membrane cocktail, and the reference electrode with a polyvinyl butyral-based membrane. Once optimised all conditions, the screen-printed electrochemical sensor demonstrated no aqueous layer formation between working electrode and selective membrane, long-term potential stability, good shelf life, and resistance to interferences from oxygen and light. The carbon black-based sensor allowed for the detection of sodium ions in range 10(-4) M e 1 M with a slope of 58 +/- 3 mV/decade and a detection limit of 63 mu M. The applicability for sweat analysis was evaluated by analysing three sweat samples collecting during running activity, obtaining concentrations of 44 +/- 4 mM, 55 +/- 6 mM, and 47 +/- 3 mM, values in agreements with sodium ions content in healthy people, as well as using artificial sweat with recovery values of 90 +/- 3%, 94 +/- 2%, and 94 +/- 5%
