Normative evolution and quality production. The case of olive oil
The olive oil sector is of notable economic and social importance in the province of Foggia. In this paper a significant number of oil samples produced in the countryside surrounding the province of Foggia from 1998-99 to 2001-2002 have been analysed in order to verify their quality, taking into consideration also the periodic revision of the body of legislation from the European Union which is constantly restricting its parameters, like for example the EC Regulation 1513/2001 which will come into effect on the 1st November 2003. The characteristic taken into consideration was free acidity, as defined by the EEC regulation 2568/91. In this paper we limited ourselves to consider only this parameter since the aim was to verify what effects the EC regulations 1513/2001 could have on the province of Foggia. If you consider the data obtained and the classification provided by the current body of legislation, you can see that almost all the samples are included in the category of extra-virgin olive oil. These considerations are valid even in view of the new EC Regulation 1513/2001 which will come into effect soon and which, as we have already said, provides for a different olive oil classification. As regards the oil produced in the province of Foggia, the research carried out allows us to state that it is undoubtedly of a higher quality

Evoluzione normativa e qualità delle produzioni alimentari: il caso dell'olio extravergine di oliva. Nota II
Con il Reg. CEE 2081/92 per i prodotti alimentari sono state istituite la “denominazione di origine protetta” (DOP) e la “indicazione geografica protetta” (IGP); per entrambe le denominazioni il Regolamento prevede che sia redatto un apposito disciplinare (art. 4) nel quale devono essere indicati: il nome del prodotto, la sua descrizione e le sue caratteristiche, l’area di produzione, gli elementi che comprovano la sua tipicità, la descrizione del metodo di ottenimento del prodotto, i riferimenti alle strutture di controllo, l’etichettatura, le eventuali condizioni da rispettare.
Con il Reg. CE 2325/1997 e il successivo Decreto del Ministero per le Politiche Agricole del 23/4/99 è stata istituita, per l’olio prodotto in provincia di Foggia, la DOP “Dauno”. Le caratteristiche al consumo contemplate dal relativo disciplinare di produzione sono: acidità, numero di perossidi, contenuto di polifenoli, panel test. Al fine di valutare la congruità di tali parametri alle caratteristiche della produzione olearia provinciale, nel periodo 1998-2002, su 180 campioni di olio rappresentativi dell’intera produzione provinciale, sono state determinate, in aggiunta ai parametri previsti dal disciplinare, le caratteristiche spettrofotometriche nell’UV e la composizione in acidi grassi. L’indagine ha consentito di suggerire
l’opportunità di modificare i limiti per alcuni dei parametri previsti dal disciplinare nonché di inserirne di nuovi. L’adozione di buone pratiche di coltivazione è stata valutata attraverso la ricerca di residui di fitofarmaci
Validating nmr methods for fingerprinting and simultaneous multicomponent quantitative analysis
The goal of this work was to set up validation procedures and new quality control parameters suitable for performance assessment in simultaneous multi component quantitative NMR analysis and NMR fingerprinting methods. In order to achieve the goal, three inter-laboratory comparisons (ILCs) were organized. The first one [1,2]consisted in the analysis of wheat and flours aqueous extracts (4 samples) and was aimed to ascertain the statistical equivalence of the scaled NMR spectra. Seven signals were submitted to univariate internationally agreed statistics typically applied in performance assessment of ILC participants. The second ILC [3]regarded a model mixture made up of five compounds. In particular, a model mixture made up of five compounds [Aldicarb, Methamidophos, Oxadixyl, Pirimicarb and 3-(trimethylsilyl)-2,2,3,3-tetradeutero-propionic acid sodium salt (TSP)] dissolved in deuterated water was submitted to NMR analyses. The analytical target of the second ILC was the quantification of analytes by the calibration line method. Such a method was chosen as it allows for identification of a theoretical line to be taken as reference in performance assessment. The third ILC consisted in the analysis of wine grape juice (7 samples) and was aimed to confirm the statistical equivalence of the scaled NMR spectra and to quantify several metabolites by standard addition method. Results show that quantitative NMR is a robust quantification tool. Performance assessment was carried out on single component quantification, by the popular and traditional z-score, and on multi-component analyses by means of a new performance index (named Qp-score) which is related to the difference between the experimental and the consensus values of the slope of the calibration lines. Qp-score is a parameter suitable for harmonization of fingerprinting protocols and simultaneous quantitative multi component analysis. Such parameter, that was designed considering consolidated internationally agreed statistics, represents an unbiased evaluation tools for NMR method validations
