    Introduction: Tortilla is corn processed products similar to chips which has yellow character, crunchy, thin and easily breakable. Fish bone flour has high calcium content and can be used as a fortification of other food ingredients. Objective: To understand the effect of substitution of catfish bone flour on tortilla receiving power. Method: The design of the research used was complete randomized design with 4 substitution of catfish bone flour :0%, 15%, 20% and 25%. The acceptability data was analyzed using one way anova and then continued with Kruskal wallis. Result:The color of the tortilla most preferred by panelists is tortilla with a 20% substitution, while in the aroma, taste, the preferred texture is tortilla with a 15% substitution. Conclusion: There is an influence of substitution of catfish bone flour on the acceptance of tortillas

    Dodol is one of Indonesian food made from glutinous rice flour, coconut milk and sugar. Canna strach can be used as a substitute material of glutinous rice flour in making dodol. The substitution of canna strach affect in the texture of dodol, so it’s necessary to test the texture. The quality of food is also determined by the nutritional content, the proximate compotition testing of dodol canna is also required. The aim of the study was to know the effect of canna starch as a substitute of glutinous rice flour in making dodol. Completely randomized design was used, with four levels of canna starch substitution, were 0%, 25%, 50%,and 75% with three replications. Texture was measured with tensile strength test. Proximate composition including moisture, ash, protein, fat and carbohydrates were tested using by different method. The acceptance of the product was tested by untrained panelists. The results indicated that there was a significant effect of canna starch substitution on dodol texture.the higher the substitution of canna starch, the lower the texture of dodol. The highest of the texture of dodol was gave by 0% substitution, followed by 25%. Proximate compotition of dodol showed that there was an effect of canna starch substitution on protein on dodol. However, there was no effect on moisture, ash and fat contens. The highest acceptance of dodol gave by 0% substitution, followed by 25% substitution. There is an effect of canna starch substitution on texture, proximate compotition and acceptance level of dodol

    Introduction : Flakes are prepared products which are favored and quick in the preparation. The raw material used in flakes preparation is corn. The addition of banana flower flour in flakes is to enhance it’s fiber. Purpose : The purpose of the research was to determine the effect of banana flower flour substitution on corn flakes to the brittleness and acceptance of the flakes Method : The research method was completely randomized design with 4 treatments of banana flower flour substitution ie 0% (control), 15%, 20%, 25%. The analysis of brittleness was using Texture Analyzer CT-03 Brookfield. Data was analysed of one way statistical (ANOVA) and followed by Duncan Multiple Range Test (DMRT) with a 95% significance level. Result : The results showed that banana flower flour substitution did not affect of the brittle power of flakes. The highest and lowest of brittleness gave by substitution of 15% and 20%, respectively based on 4 substitution treatments, the best acceptance of flakes displayed by substituted of 0%, followed by 15%. Conclusion : There was no effect of the banana flower flour substituion to the brittleness of flakes. the acceptance of banana flower flour substitution affect on color, aroma, taste and overall, but did not affect to the texture of flakes. Suggestion : It is necessary to analyse proximate composition and fiber content in corn flakes

    Arrowroot biscuits is biscuit made from arrowroot flour. Rambutan seeds flour can be used as substituents of arrowroot biscuit. The impact of the rambutan seeds flour substitution will effect of colors and acceptabillity on arrowroot biscuits. The purpose of this study was to determine the effect the substitution of rambutan seeds flour on colors and acceptabillity of arrowroot biscuit. The completely randomized design was used in the research with 4 treatments substitution of tempeh flour were 0%, 5%, 10%, and 15%. Data of color, and acceptabillity of arrowrot biscuit were analyzed using one-way ANOVA and followed by Duncan at significance level of 95%. The higher value of lightness colour of arrowroot biscuits is 45,96.The higher value of redness colour is 11,12. The higher value of yellowness colour is 25,81. The higher score of colour acceptabillity is 5,27. The higher score of flavor acceptability is 5,17 The higher score of taste acceptabillity is 5,03. The higher score of texture acceptabillity is 5,43 and the higher score of overall acceptabillity is 5,27. There is an effect by the substitution of rambutan seeds flour to the colour of arrowroot biscuits. There is an effect by the substitution of rambutan seeds flour to the acceptability of arrowroot biscuits. Based on acceptabillity of arrowroot biscuit, to substitute 15% rambutan seed in arrowroot biscuits

    Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed

    “Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship

    Appropriate Similarity Measures for Author Cocitation Analysis

    We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature.     Dispelling the Myths Behind First-author Citation Counts

    We conducted a full-scale evaluative citation analysis study of scholars in the XML research field to explore just how different from each other author rankings resulting from different citation counting methods actually are, and to demonstrate the capability of emerging data and tools on the Web in supporting more realistic citation counting methods. Our results contest some common arguments for the continued use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases. It is argued that increasingly available digital full text research papers make it possible for citation analysis studies to go beyond what the ISI databases have directly supported and to employ more sophisticated methods
