Influence of Temperature and Solutes on the Kinetics of Mass Transfer in Osmotic Dehydration of Apple (Golden delicius)

El objetivo es evaluar la curva cinética de transferencia de masa en la deshidratación osmótica de manzana (Golden delicius) en concentraciones (40 %, 50 % y 60 %) a temperatura ambiente durante cuatro días en continuo cambio. Se conoció la pérdida de masa total, la masa de agua y la masa de sólidos solubles. Además, se evaluó los °Brix, donde mediante balance de masa se pudo obtener 45 g, luego del secado, presentó un peso total de 15 g. Con respecto a los °Brix, se observó que, a las concentraciones de 40 %, 50 % y 60 %, se obtuvieron 30.3, 27.1 y 36, respectivamente. En cuanto a la pérdida de peso al cambiar las concentraciones de 40 %, 50 % y 60 %, fueron de 3, 2, 2, 4 y g, g, respectivamente. También, hubo aumentos en el peso total de sólidos como 40 % (50 g), 60 g y 1 % (60 g). En las muestras sometidas a secado en horno, se observó una pérdida de peso al 40 % (34,57 g), 50 % (32,45 g) y 60 % (27,55 g), quedando un peso total mayor, 14 g más una concentración de 15 g más 12,5 g para así concluir con la mayor cantidad de 145 g. La pérdida de peso en diferentes concentraciones se produjo el segundo día.Osmotic dehydration involves the removal of water from food to decrease the development of microorganisms and unwanted chemical reactions, prolonging shelf life. The objective is to evaluate the kinetic curve of mass transfer in the osmotic dehydration of apple (Golden delicius) in concentrations (40 %, 50 % and 60 %) at room temperature for four days in constant change. The loss of total mass, water mass and mass of soluble solids were determined, in addition to this, the ° Brix were evaluated, where it was possible to obtain by means of mass balance of 45 g, after drying it had a total weight of 15 g, with respect to ° Brix it was observed that the concentrations of 40 %, 50 % and 60 % were obtained 30.3, 27.1 and 36 respectively. With respect to the weight loss in the change of concentrations of 40 %, 50 % and 60 % were 3 g, 2.1 g and 4.2 g respectively, there were also weight gains of total solids such as in 40 % (3 g), 50 % (1 g) and 60 % (0 g). The samples subjected to oven drying the weight loss that was observed in 40 % (34.57 g), 50 % (32.45 g) and 60 % (27.55 g) leaving these with a total weight of 12.43 g, 14.55 g and 15.45 g respectively resulting in the concentration with the highest amount of solids and yield is the concentration of 60 %. Finally, it is concluded that the greatest amount of weight loss in different concentrations was on day two
Going Beyond Counting First Authors in Author Co-citation Analysis

counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed

Get PDF“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
Appropriate Similarity Measures for Author Cocitation Analysis
Get PDFWe provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature. use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation
counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases. Note that the objective for the hut study was to evaluate the IRS treatment applications for residual efficacy against Anopheles mosquitoes, including the local An. coluzzii mosquito population. Cows were only used to attract mosquitoes into the huts and no tests were carried out directly on the cows. The author checklist is intended for use with studies where experiments are carried out on animals, which is why we have had such difficulty in completing this for the hut study, as many of the questions do not relate to how the cows were used
