    Evaluation of the technological characteristics and bread-making quality of alternative wheat cereals in comparison with common and durum wheat

    The growing sensibility toward those foods that are characterized by natural and healthy features has raised the interest toward alternative wheat cereals. This research was carried out to compare the technological characteristics and the bread-making quality of Khorasan wheat, type Kamut and spelt (cv. Forenza), to those of common (cv. Rio) and durum wheat (cv. Norba). The results obtained show that both Forenza and Kamut gave an acceptable bread-making performance. A certain variability affected flour characteristics (protein content, carotenoid pigments and alveograph indices) over the 2 years of experimentation, due to environmental effects. This reflected on the corresponding breads but the statistical analysis indicated that, on the whole, Kamut bread was characterized by a high content of carotenoid pigments. Regarding sensory properties (profiled by means of 11 descriptors of visual appearance, texture, odor and flavor) and loaf volumes, breads from Forenza and Kamut appeared different from each other but similar to those obtained from Rio and Norba grown in the same environment, respectively. © SAGE Publications 2011

    Nell'ambito dell'azione di raccolta di germoplasma del progetto SaVeGraINPuglia (Misura 214 del PSR 2007-2013 della Regione Puglia), sono state effettuate indagini in prossimità o all'interno di aree protette e rete Natura 2000, dove sono state raccolte testimonianze scritte e verbali oltre a diverse accessioni (cereali da granella e leguminose). Le indagini hanno riguardato anche diverse aziende agricole dislocate in vari Siti di Interesse Comunitario (SIC) presenti nel vasto territorio pugliese. Il territorio del Gargano, che comprende il Parco Nazionale del Gargano, al cui interno sono presenti numerosi SIC e ZPS (zone di protezione speciale), è caratterizzato da paesaggi montani brulli ma ricchi di biodiversità con la presenza di varietà cerealicole e legumi di antica origine. Gli agricoltori conservano ancora antiche accessioni, tramandate nel corso del tempo, che coltivano per uso personale. Le aree agricole sono ben integrate nel paesaggio naturale circostante. Il SIC "Zone umide della Capitanata" comprende il vasto territorio delle saline di Margherita di Savoia (Riserva Naturale Statale di popolamento animale) intorno alle quali si sviluppa il paesaggio agrario dove, un tempo, venivano coltivate varietà disparate di cereali oggi del tutto scomparsi. Gli studi condotti nell'area hanno comunque messo in luce come siano ancora presenti coltivazioni significative di legumi di antica tradizione. Le aree agricole tradizionali si armonizzano con le superfici naturali in un contesto paesaggistico tra i più antichi della Puglia (oliveti secolari), all'interno del SIC "Torre Guaceto e Macchia S. Giovanni", nella provincia brindisina, dove insistono valori di tutela del territorio volti alla sana agricoltura ecocompatibile. Qui gli agricoltori custodi si sono aggregati in un consorzio che tutela e valorizza i prodotti pugliesi tradizionali tra cui il grano duro Senatore Cappelli. Le indagini sul campo attestano che in alcune aree del territorio pugliese la tutela dell'agrobiodiversità è resa possibile grazie all'integrazione di pratiche agricole ecosostenibili con la tutela del patrimonio naturale

    The effect of year and variety on the nutritional value of Camelina sativa meal

    Camelina [Camelina sativa (L.) Crantz] is emerging as a promising crop due to its high oil content of seeds with a predominance of unsaturated fatty acids, and good protein content of defatted meal. This study investigated the nutritional composition of defatted camelina meal obtained from four varieties (three from Canada and one from Austria) grown in the Padana Plain (northern Italy) for four consecutive years (2016-2019). Statistical analyses were performed based on the collected data. Principal Component Analysis (PCA) revealed distinct nutritional profiles among varieties and growing seasons. Calena, the Austrian variety, exhibited good nutritional quality and stability over the years. Pearl showed an intermediate year-to-year stability but promising values for trypsin inhibitors, condensed tannins and in vitro digestibility. The anomalous quantity of rainfall recorded during the early stage of seed development in 2019 allowed us to state that extreme climatic events can significantly affect the seed composition of the camelina varieties. This makes it clear that varietal and environmental factors need to be considered to produce a crop that can be fed to livestock

    Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed

    Variations on the Author

    “Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
