Impact of Bacterial Nanocellulose on the Rheological and Textural Characteristics of Low-Lipid Meat Emulsions
Replacement of animal fat by vegetable or marine oils have been proposed to improve the fatty acid profile of meat emulsions. However, this replacement affects physicochemical and textural characteristics of these products, and the extent of the changes depends on the polysaccharides and non-meat proteins included in the formulation. In this chapter a novel application of bacterial nanocellulose (BNC) to low-fat meat emulsions formulated with high-oleic sunflower oil is discussed, analyzing the effect of BNC on proximate composition, process yield, color, texture, and rheological characteristics. Rheological temperature sweep curves showed a typical behavior of thermal gelation of meat systems where the main component corresponds to myosin denaturation. Formulations containing BNC showed higher elastic moduli, reflecting the formation of an important three-dimensional network with more solid-like characteristics than the BNC-free control with oil. Addition of BNC produced systems with adequate quality and physicochemical characteristics, similar to traditional sausages formulated with animal fat.Fil: Marchetti, Lucas. Nanotechnology in Microbial Food Safety
Research and development on food nanotechnology applications is rapidly growing, and it is becoming an increasingly important field worldwide. Many of the recent innovations in the global food and beverage industry are related to nanotechnology and have already been successfully utilized on a commercial scale in food processing, production, and packaging including automation. From a microbiological perspective, nanotechnology-based approaches can be applied to enhance the food quality and safety and such applications include but are not limited to the use of nanopackaging materials that improve product storage stability. Nanocomponents with antimicrobial properties that inhibit the growth of pathogenic microbes and activities of spoilage and the detection of food-borne pathogens, such as Salmonella, Escherichia coli, and Listeria monocytogenes using nanosensors and nanomaterial-based assays have been developed. This chapter focuses on the recent advances and future trends in nanotechnology with special reference to microbiological applications in enhancing food quality and safety. Although nanotechnology may hold great promise to improve the quality and microbial safety of foods, there are concerns related to the potential uncertainty of toxicological effects, health risks, and environmental impact of such application
Análisis narratológico de las novelas El sueño y la lluvia y Soñadora, Elena soñadora de Jorge Dávila Vázquez
Análisis Narratológico de la Novelas El sueño y la lluvia 2011 y Soñadora, Elena soñadora 2014 de Jorge Dávila Vázquez, presenta un estudio sobre los elementos narratológicos utilizados por el autor en la elaboración de sus obras narrativas. Encontramos que las obras estudiadas oscilan entre la fantasía y la realidad y están conjugadas y armonizadas magistralmente. En esta investigación revelamos que Dávila Vázquez, aborda la emotividad y la expresividad a inicios del siglo XXI, en un reencuentro con la cultura ancestral; también se analiza los personajes, espacio, tiempo, símbolos y valores literarios. Por otra parte, se destaca el ambiente sociocultural en el que se desenvuelve el autor y los rasgos literarios de los que se nutre, y que toma características narrativas que plasma en sus obras. Además se resalta la importancia de los testimonios ofrecidos por el autor, ya que constituyen un valioso aporte para la Literatura Infantil y juvenil. Finalmente esta investigación resulta interesante, porque se trata de novelas escritas en este siglo y es uno de los autores locales que trata temas frescos, de los cuales no se ha encontrado, aún ninguna investigación, por lo tanto se convierte en un ideal para el análisis literario entre jóvenes.Narratológico analysis of the novels 'The dream and the rain' and 'Dreamy, dreamy
Elena» from Jorge Dávila Vázquez, presents a study on the narratologicos elements used
by the author in the preparation of his narrative works. We find that studied works oscillate
between fantasy and reality that are harmonized and conjugate masterfully. In this
research we reveal that Davila Vazquez, deals with emotions and expression at the
beginning of the 21st century, in a reunion with the ancestral culture; also discusses the
characters, space, time, symbols and literary values. On the other hand, stands out the
socio-cultural environment in which it operates the author and literary traits that feeds, and
sampling narrative features plasma on his work. Also highlights the importance of the
testimony offered by the author, since they constitute a valuable contribution to literature
for children and youth. Finally, this research is interesting because it's novels written in
this century and is one of the local authors dealing with fresh themes, which could not be
found, yet no investigation, so it becomes an ideal for literary analysis among young
people
Satisfacción de las familias atendidas por los posgradistas de Medicina Familiar y Comunitaria, provincia de Santa Elena, año 2018.
Antecedentes: La Medicina Familiar y Comunitaria fortalece la atención primaria, que se refleja en el grado de satisfacción de las familias atendidas. Materiales y Métodos: Estudio observacional, descriptivo, transversal, en los consultorios asignados al posgrado de Medicina Familiar y Comunitaria en la Provincia de Santa
Elena durante el año 2018, con una muestra de 200 familias atendidas por el posgrado. El instrumento empleado fue una encuesta realizada por la autora y que fue aplicado al jefe de familia o su representante. El proceso se lo realizó previo consentimiento informado de los participantes. Resultados: El 61,5% de representantes de familias son mujeres. Predominan las familias nucleares (50%), medianas (50,5%) y con algún grado de pobreza (77%). Las acciones de salud realizadas con mayor frecuencia por los posgradistas según las familias fueron las relacionadas con la alimentación saludable con el 85,5% y la actividad física con 83,5%. El 70% de las familias consideraron buenas y muy buenas las acciones de salud realizadas por el posgrado. La percepción de satisfacción buena fue en el 100% de las familias atendidas por el posgrado, y el 39,5% de los hogares calificó con 9 puntos la atención médica de los residentes. Conclusiones: Las acciones de salud consideradas esenciales no fueron percibidas con la misma frecuencia por los hogares atendidos por el posgrado, Las familias santaelenenses se sintieron satisfechas con la atención médica recibida de los
residentes, independientemente de la ejecución o no de acciones de salud para mejorar los estilos de vida.Background: Family and Community Medicine strengthens primary care, which is reflected in the degree of satisfaction of the families served. Materials and methods: Observational, descriptive, cross-sectional study in the offices assigned to the postgraduate course of Family and Community Medicine in the Province of Santa
Elena during 2018, with a sample of 200 families attended by the graduate program. The instrument used was a survey conducted by the author and was applied to the head of the family or his representative. The process was carried out with the informed consent of the participants. Results: 61.5% of family representatives are women. The nuclear families predominate (50%), medium (50.5%) and with some degree of poverty (77%). The health actions carried out most frequently by postgraduates according to families were those related to healthy eating with 85.5% and physical activity with 83.5%. 70% of families considered good and very good health actions carried out by the graduate. The perception of good satisfaction was in 100% of the families attended by the graduate program, and 39.5% of the households rated the residents' medical attention with 9 points. Conclusions: The actions of health considered essential were not perceived with the same frequency by the homes attended by the graduate. The families of Santa Elena were satisfied with the medical attention received from the residents, independently of the execution or not of health actions to improve the styles of life
Análisis de los emprendimientos de gastronomía y su incidencia en la generación de empleo en la comuna San Pablo del cantón Santa Elena
Unemployment has recently become a global problem with the developing countries of the world that have most of the phenomenon. This has resulted in the migration of people, mainly from rural areas to the city (such as Quito or Guayaquil), which is why the promotion of entrepreneurship is a viable tool for generating employment and local socioeconomic development. This document investigated the intervention efforts of the economic precepts of the State and the attempts to address the problems of unemployment in the country and its effectiveness to encourage the sense of entrepreneurship, in order to facilitate the creation of employment for job seekers in rural areas, working as a team. The document was based on the main degree research carried out by the author, supported by the existing literature for this study. The discussion centers on the fact that the results obtained from the main study provided a positive perspective of entrepreneurship in the generation of employment, as a contribution made by the State for the promotion of productive development based on personal entrepreneurship, and the capacity of the entrepreneurial population in the construction of a microenterprise and SME sector, solid that takes advantage of existing potentials, such as gastronomic entrepreneurship, to strengthen the local economy and innovation, in areas such as the San Pablo Commune of the Santa Elena canton.El desempleo se ha convertido recientemente en un problema global con los países en desarrollo del mundo que tienen la mayor parte del fenómeno. Esto ha resultado en la migración de personas, principalmente desde las zonas rurales a la ciudad (tales como Quito o Guayaquil), razón por lo que, la promoción del emprendimiento constituye una herramienta viable para la generación de empleo y desarrollo socioeconómico local. Este documento investigó los esfuerzos de intervención de los preceptos económicos del Estado y los intentos de abordar los problemas del desempleo en el país y su eficacia para alentar el sentido del espíritu empresarial, con el fin de facilitar la creación de empleo para los buscadores de trabajo en zonas rurales, que trabajan en equipo. El documento se basó en la investigación principal de titulación realizada por la autora, sustentada a través de la literatura existente para este estudio. La discusión se centra en que los resultados obtenidos del estudio principal aportaron una perspectiva positiva del emprendimiento en la generación de empleo, como una contribución que realiza el Estado para el fomento del desarrollo productivo en base al emprendimiento personal, y la capacidad de la población emprendedora en la construcción de un sector microempresarial y PYME, sólido que aproveche los potenciales existentes, tales como el emprendimiento gastronómico, para fortalecer la economía local y la innovación, en zonas como la Comuna San Pablo del cantón Santa Elena
Russia’s classical alter ego, 1963-2016: classical reception in the poetry of Elena Shvarts, Il’ia Kutik, and Polina Barskova
Classical reception, suppressed under Stalin, returned to Soviet poetry during the
Thaw (c. 1953-63), and through the many political upheavals of the late twentieth
century it has remained a prominent trend in contemporary Russian poetry. This
thesis explores classical reception in the oeuvres of Elena Shvarts, Il’ia Kutik, and
Polina Barskova, whose poetry spans from 1963 to the present. They form part of –
and serve as case studies for – the wider trend of late- and post-Soviet poetic
engagement with classical antiquity. This phenomenon has been studied in the cases
of Thaw poets Iosif Brodskii and, to a lesser extent, Aleksandr Kushner, but
investigations have not extended beyond these figures to the succeeding Stagnation
and post-Soviet poets.
Shvarts, Kutik, and Barskova come from different generations and different poetic
schools, and have very different poetic styles. They share a sustained and playful
engagement with the literature and history of Ancient Greece and Rome, which is
often in dialogue with earlier Russian receptions of classical antiquity. Their classical
reception is frequently intended to ‘estrange’ Soviet/Russian contexts, thus making
antiquity an ‘alter ego’ of Russia. This objective is facilitated – and inspired – by the
Russian literary tradition. Since its inception Russian literature has set classical
antiquity before itself as a model, imitating its literary forms and emulating its
characters. This long-standing analogy between Russia and the classical world
underpins Shvarts, Kutik, and Barskova’s evocations of classical antiquity as
Russia’s alter ego. The utility of the classical alter ego lies precisely in its alterity: as
well as a vehicle for veiled dissidence, as with Aesopian speech, it can be a more
extreme, or fun, or ideal reality.
Inherent in Shvarts, Kutik, and Barskova’s recourse to classical reception as alter ego
is a desire to connect with Europe, from which Russians were palpably divided for
much of the twentieth century – the Mandel’shtamian ‘yearning for world culture’. It
stems also from their desire to connect with pre-Soviet (classically receptive)
Russian literature. The thesis begins with a history of classical reception in Russian
literature from Russia’s first contact with the classical world up to the present. Such
a history is crucial to understanding contemporary poets’ classical reception, as so
many of their references to classical antiquity are refracted through Russian
intertexts.
The chapters on Shvarts, Kutik, and Barskova examine the entire oeuvre (to date) of
each poet, selecting key poems and themes for close analysis. This is conducted
alongside the intertexts (quotations from classical texts are given in English only,
except where the original language has demonstrably informed reception). As well as
literary contexts, historical and personal contexts are considered. Interviews
conducted by the author with both living poets (Kutik and Barskova) inform the
analysis.
This thesis contends that the pervasive classical reception evident in Russian poetry
from 1953 to the present responds to the series of ontological crises Russia was
precipitated into by the upheavals of the twentieth century. With the loosening of
Socialist Realism’s control over literature after Stalin, Russian poets resume Russia’s
poetic tradition of using classical antiquity as an alter ego, both to heighten
portrayals of Russia, and to imagine another, alternate, Russia
Resilient Russian Women in the 1920s & 1930s
The stories of Russian educated women, peasants, prisoners, workers, wives, and mothers of the 1920s and 1930s show how work, marriage, family, religion, and even patriotism helped sustain them during harsh times.
The Russian Revolution launched an economic and social upheaval that released peasant women from the control of traditional extended families. It promised urban women equality and created opportunities for employment and higher education. Yet, the revolution did little to eliminate Russian patriarchal culture, which continued to undermine women’s social, sexual, economic, and political conditions. Divorce and abortion became more widespread, but birth control remained limited, and sexual liberation meant greater freedom for men than for women. The transformations that women needed to gain true equality were postponed by the poverty of the new state and the political agendas of leaders like Lenin, Trotsky, and Stalin.
The defunct economy and widespread famine, disease, and misery of the 1920s and the policies of collectivization and terror of the 1930s make those decades dark periods in Russian history, as Bolshevik male-dominated work culture triumphed and women’s needs and voices were ultimately silenced. When Russian society chooses to revisit those times, it will find in the remarkable poetry and prose of these resilient women plentiful evidence of the everyday horrors, struggles, and disappointments the people endured.

Remarkable Russian Women in Pictures, Prose and Poetry
Many Russian women of the late 19th and early 20th centuries tried to find happy marriages, authentic religious life, liberal education, and fulfilling work as artists, doctors, teachers, and political activists. Some very remarkable ones found these things in varying degrees, while others sought unsuccessfully but no less desperately to transcend the generations-old restrictions imposed by church, state, village, class, and gender.
