    A quarterly, partial-equilibrium vector-autoregression model of the U.S. durum wheat and pasta markets was estimated and simulated under three trade-barrier changes that are of potential relevance for the current round of WTO agricultural negotiations: a rise in the U.S. market-clearing durum wheat quantity from increased imports; a policy- or tariff- reduction-induced decline in U.S. durum wheat price; and a tariff-induced rise in U.S. pasta product prices.     Pasta optimization for the production of pasta enriched with functional ingredients

    Despite being an iconic Italian food, pasta is nowadays appreciated around the world for several reasons, including its versatility and sensory features (i.e., al dente texture). As regards the nutritional properties, apart from being a medium-low glycemic index product, pasta has already been shown to be a good method to incorporate increased nutritional or functional compounds. Indeed, in the last years, different formulations have been developed to improve the nutritional profile of pasta. Semolina that is high both in protein and gluten content is recognized as the ideal raw material to produce conventional dry pasta. However, incorporating other grains (such as barley, pulses, etc.) or non-conventional ingredients (such as bran, soluble fibre and resistant starch) into the formulation often causes changes in pasta structure and cooking behavior. Thus, an understanding of the relationship between processing variables and pasta quality is crucial in order to optimize the redesign of the production process. In this context, this presentation will provide an overview on: (1) the main challenges of the pasta-making process, highlighting the processing variables that most affect pasta quality and elucidating how to optimize certain parameters to ensure the production of pasta with the desired characteristics; (2) the impact of non-conventional ingredients on pasta technological properties and in vitro measures of phytonutrient enhancement or changes to starch digestion

    The author, starting from the study of the new territory generated by the global system, which "produces", as is well known, greater social conflict due to unfair (not free and not fare) market competition (dumping), notes the new role of social "mediation" assumed by local authorities ( and in particular by decentralized police structures). Discussing, specifically, the Tuscan regional reality and moving from the observation of the current regional legislation in this regard (Regional Law 11/2020), the new roles and activities of the same local police will be indentified. In particular, the introduction of mediation has entailed training processes of the operators themselves aimed at grasping the final objective of territorial cohesion and the resolution of social conflicts. The case study of the municipality of Genoa and the training of personnel (InterregionalSchool of Local Police) is proposed, but suggesting a substantial reform in relation to the territorial processes underway: in health (Life Skills), socio-economic (Soft-Skills) and not-cognitive skills (in the school, socio-educational and training sectors) essential in the management of territorial socio-economic conflicts themselves

    New development for pasta products: immature wheat and functional component

    The development of foods that can provide benefits beyond their nutritional values has focused attention on public and industrial researchers.In recent years the ability of functional food to influence metabolic parameters and some chronic disease is being explored. Novel uses of cereals have shown that cereal grains harvested at milky stage produce raw material with usefull nutritional and chemical characteristics; so immature cereal grains appear to be an interesting raw material for functional foods as they contain fructooligasaccharides (FOS) in quantities significantly higher than mature grains. FOS are low molecular weight polymers of fructose and are classified as "prebiotic"; i fact are non-digestible compounds that beneficially affect the host by selectively stimulating the growth and/or the activity of one or a limited number of colon bacteria (e.g.Bifidobacteria). The addition of wholemeal from immature wheat grain to semolina was used for pasta production. The innovative pasta product have shown more interesting nutritional characteristics than those exhibited by whole meal spaghetti; the product is also characterised by reduced starch availability to digestive enzimes. The influence of immature wheat grain integration on glycemic index of pasta, together with the actual prebiotic effects of FOS have to be confirmed by in vivo studies

    The Author focused on ethnic and cultural issues regarding the immigration of Italians from Lucca area in Italy, dedicating an attention to local ,original production : from plaster statues,to literature in dialect and to the analysis of published epistolary material. Emigration from Lucca has been studied since the second half of the 80s of the twetieth century, who have laid the foundations for future research and interpretation. The choice of sources was rather limited, but above all selective in terms of quality,considering that the personal material of emigration contains an enormous number of publications of little interest for the study of social and cultural dynamics. The Author, therefore, used every texts published about Italian and "lucchese" emigration. The use of texts in English has been useful to identify the process of Italian emigration described by American researchers, often descendants of the emigrants themselves, who have worked with first-hand sources untraceable in Italy. This gave different points of view, born in the cultural environment of another country, so that the Author was able to present a more detailed and in-depth study with the use of sources and essays never translated into Italian . Italians and Americans tend to have two profoundly different visions of the question : if on the one hand the Italians feel it as their own history and underline its nutritious and heartbreaking character, the Americans,while recognizing the inhumanity of certain aspects, frame it under the more complete history of emigration to the United States in its entirety, extolling the successes and narrating the lives of the emigrants as an arduous climb in order to achieve a final improvement which is naturalization and citizenship. This study wants to highlight the topic to allow the collection and conservation of the epistolary heritage of emigration in the many villages that exist in the province of Lucca. Also for this reason the Author has given ample emphasis to personal stories, because this work intends to focus precisely on the issue of the ethnicity of the emigrant, identifying his characters from production in a personal context . The emigrant, who was influenced by the politics and economy of his own country and of the host country, was ,first of all, an individual with a strong cultural background, clearly visible in material production and in self-expression

    La Cittadinanza Onlife e il contrasto alla ‘povertà educativa digitale’

    Dal 2021 il Centro di Ricerca sull’Educazione ai Media, all’Innovazione e alla Tecnologia (CREMIT) dell’Università Cattolica ha proposto di utilizzare il nuovo costrutto di “povertà educativa digitale”, ampliando il concetto di “digital divide”. Tale fenomeno non è inteso unicamente come privazione dei dispositivi e di accesso alla Rete, e neppure come negata partecipazione alla didattica a distanza o didattica digitale integrata, che sono tendenze mappate da altre ricerche realizzate nel periodo di emergenza sanitaria. Si fa riferimento alla mancata acquisizione di competenze digitali, intese come nuovi alfabeti necessari nella società postmediale per analizzare la produzione e la fruizione dei diversi contenuti digitali da parte degli “spettautori” del social Web e “cittadini onlife”. Altri testi dei medesimi autori hanno sinora presentato il costrutto (Pasta, Rivoltella, 2022), discusso la misurabilità del fenomeno (Pasta, Marangi, Rivoltella, 2021), presentato uno strumento di rilevazione e discusso i primi dati di una rilevazione su 1.976 studenti di 112 classi in 39 scuole secondarie di I grado di tutta Italia (Marangi, Pasta, Rivoltella, 2022). In questo intervento, a partire dal progetto triennale “Connessioni digitali” (2021-24) realizzato dal Cremit insieme a Save the Children e la Cooperativa Edi Onlus e che coinvolge 100 scuole secondarie di I grado per un totale di 6.000 studenti e 400 insegnanti, si presenteranno l’impostazione teorica e le proposte didattiche di tale percorso biennale, integrato nel curricolo di educazione civica, a contrasto della povertà educativa digitale. Le quattro newsroom (Scrittura online, Podcast, Digital Storytelling, Marketing sociale), attorno a cui è costruito il percorso, riflettono una concezione di competenza digitale secondo una visione metacognitiva e strategica delle attività legate agli ambienti digitali, che è basata sulle competenze tecniche, intellettuali, di cittadinanza responsabile e partecipativo-relazionali e che al contempo, pur nel solco della Media Education, sviluppa la New Media Literacy intrecciando la dimensione critica, estetica ed etica. Si restituirà un’analisi dei prodotti realizzati dalle classi coinvolte nella prima annualità del progetto, rilevando come sia centrale considerare la creatività e la capacità di produrre prodotti narrativi e comunicativi nel contrasto della povertà educativa digitale, attraverso quattro differenti dimensioni di uso del digitale: l’accesso, l’analisi, la valutazione e la produzione. Infine, si noterà come l’effettiva promozione della competenza digitale, processo interessante anche in termini di future competenze per l’ambito lavorativo, si attiva solo se si è capaci di trasformare le competenze individuali in pratiche sociali e nella costruzione di un vero e proprio design interpretativo e produttivo

    In this study the Author deals with the globalization of Bilbao in the post-fordist transition : still current period of restructuring in the context of the new internationalization of Basque economy. I focused the work to the foreign trade of the city and the region as well as the global activities of Bilbao's local bank. In short, I study the specific processes through which Bilbao has become and is becoming part of global circuits, but I also pointed out that such global linkages could be considered the only basis to explain Bilbao's urban development : global flows must be studied in the context of broader developments at the local scale to get the reach of globalization. Globalization acquires specific meaning when it is considered within such plurality of forces ( the city,the region,the nation-state,the global economy) acting at various spatial scales. It does not consist only of relations or flows among structures or territories : rather the ways structures are changed in the globalizing process and the ways in which territories become embedded in such networks of relations

    Regional associations of States were born first of all as a need to build true indipendence through integration and cooperation : this in developing countries coincided with the end of colonialism . In this study we retrace the steps that go first from the 60s to the end of the 70s and then the 80s. The inevitable impact of both the crisis of the industrial system of the late 1970s and that one of the new global capitalist system at the end of the 1980s with need for larger and more competitive markets. After retracing the history of the creation of the ECOWAS and examining its political and economic achievements before the 1990's, the Author emphasizes topics such as political instability, the effects of military coups, presidential and parliamentary elections and the freedom of the mass media
