Rapid method for proline determination in grape juice and wine
Proline is typically the most abundant amino acid present in grape juice and wine. The amount present is influenced by viticultural and winemaking factors and can be of diagnostic importance. A method for rapid routine quantitation of proline would therefore be of benefit for wine researchers and the industry in general. Colorimetric determination utilizing isatin as a derivatizing agent has previously been applied to plant extracts, biological fluids, and protein hydrolysates. In the current study, this method has been successfully adapted to grape juice and wine and proved to be sensitive to milligram per liter amounts of proline. At sugar concentrations above 60 g/L, interference from the isatin-proline reaction was observed, such that proline concentrations were considerably underestimated in grape juice and dessert wine. However, the method was robust for the analysis of fermentation samples and table wines. Results were within ±10% agreement with data generated from typical HPLC-based analyses. The isatin method is therefore considered suitable for the routine analysis required to support research into the utilization or release of proline by yeast during fermentation.Danfeng Long, Kerry L. Crystal Wilkinson: 48th Annual ODU Literary Festival
Crystal Wilkinson, a recent recipient of a Writing Freedom fellowship, is the award-winning author of Praisesong for the Kitchen Ghosts, a national-bestselling culinary memoir, Perfect Black, a collection of poems, and three works of fiction—The Birds of Opulence, Water Street and Blackberries, Blackberries. She is the recipient of an NAACP Image Award for Outstanding Poetry, an O. Henry Prize, an Academy of American Poets Fellowship, a USA Artists Fellowship, and an Ernest J. Gaines Prize for Literary Excellence. She has received recognition from the Yaddo Foundation, Hedgebrook, The Vermont Studio Center for the Arts, The Hermitage Foundation and others. Her short stories, poems and essays have appeared in numerous journals and anthologies including most recently in The Atlantic, The Kenyon Review, STORY, Agni Literary Journal, Emergence, Oxford American and Southern Cultures. She was Poet Laureate of Kentucky from 2021 to 2023. She currently teaches creative writing at the University of Kentucky where she is a Bush-Holbrook Endowed Professor and Director of the Division of Creative Writing. Ethnic density effects on birth outcomes and maternal smoking during pregnancy in the US linked birth and infant death data set
Objectives. We investigated whether mothers from ethnic minority groups have better pregnancy outcomes when they live in counties with higher densities of people from the same ethnic group—despite such areas tending to be more socioeconomically deprived.Methods. In a population-based US study, we used multilevel logistic regression analysis to test whether same-ethnic density was associated with maternal smoking in pregnancy, low birthweight, preterm delivery, and infant mortality among 581 151 Black and 763 201 Hispanic mothers and their infants, with adjustment for maternal and area-level characteristics.Results. Higher levels of same-ethnic density were associated with reduced odds of infant mortality among Hispanic mothers, and reduced odds of smoking during pregnancy for US-born Hispanic and Black mothers. For Black mothers, moderate levels of same-ethnic density were associated with increased risk of low birthweight and preterm delivery; high levels of same ethnic density had no additional effect.Conclusions. Our results suggest that for Hispanic mothers, in contrast to Black mothers, the advantages of shared culture, social networks, and social capital protect maternal and infant health
