Microbiology, energy, packing and control of the canning production

The role of microorganisms in canning production is characterized, microbiological bases of conservation are lit, microbiological indicators and main types of microbiological damage of raw materials and finished goods, the characteristic of separate groups of microorganisms, components residual microbio-that canned food are given, and also data on test cultures of microorganisms according to which the operating modes of thermal treatment are developed for the wide range of canned food. Data on power efficiency of modern designs of the sterilizing equipment of the canning industry are provided and use of the concept "exergy" for an assessment of efficiency of technological decisions is offered. COMPLEX OF CHEMICAL-TECHNOLOGICAL AND SANITARY-HYGIENIC QUALITY INDICATORS OF THE NEW PASTRY PRODUCTS OF SPECIAL NUTRITION
The complex of chemical-technological and sanitary-hygienic quality indicators of new pastry products of special nutrition was studied. The original recipes of meat pastries for special nutrition, enriched with biologically active components at the expanse of vitaminized blended vegetable oils (VBVO) and protein-fatty emulsions (PFE) on their base, were elaborated. There were elaborated four recipes of pastries of chicken and turkey with PFE, included in recipes in the amount 15…20 % and with vitaminized blended vegetable oils of two-component and three-component composition in the amount 10 %. Pastry samples, prepared according to SSTC 4432:2005 were used as a control.
VBVO composition and fat-soluble vitamins content in them was determined by the gasochromatographic method.
Molecular-genetic methods were used for the accelerated diagnostics of pastries safety by agents of food intoxications– Clostridium perfringens and Bacillus cereus, number of mesophyl aerobic and facultative-anaerobic microorganisms (NMAFAnM), classic ones – colon bacillus group bacteria (CBGB), sulphite reductive clostridia, Staphylococcus aureus, L.monocytogenes, Salmonella. The storage term of products was prolonged in 2 times (48 against 24 hours) according to SSTC). The expedience of their introduction in production was proved.</jats:p
MODELLING OF ENTERPRISE’S ACCOUNTING POLICY: THEORETICAL ASPECT
The purpose of this article is to study the possibility of modelling accounting policies and accounting processes. Since accounting processes don’t have defined parameters, to study them we can model their functional features and forecast the behaviour of the object in question in various situations. It is achieved by means of developing certain sign patterns: charts, schemes, unified forms and rules for filling them out. Such modelling is called sign modelling. The most important type of sign modelling is logical-mathematic. In logical mathematic modelling, sign formations and their elements are considered in connection with certain transformations and operations with them. A logical mathematic model (LMM) is a basis (mathematic and linguistic provision) for creating algorithms for accounting processes and software development. Since the accounting objects are rather diversified, the principles of processing corresponding information can also differ. For instance, the most efficient accounting methods and approaches for large enterprises and turn out to be irrational for small enterprises and even result in additional losses and unnecessary increase in the amount of differently detailed information. Methods of the research: the statistical method of the questionnaire and generalization for studying the preconditions of accounting policy development at enterprises; the method of expert evaluation of strong and weak points of the analysed enterprises to define options and threats for their economic activity. Practical results. The content of the conceptual apparatus “accounting policies” is considered. The expediency of application of mathematical modelling information of accounting policy of the enterprise for the choice of effective methods of conducting financial accounting is substantiated. Elements of stages of the process of modelling accounting processes and accounting policy are studied and improved. When creating an accounting model, it is important to take into account which of the factors should be entered into the model. On the one hand, while using a model for forecasting, it is necessary to take into account as many factors as possible. On the other hand, gathering and processing large amounts of information are time-consuming, therefore, it is better to reduce the number of factors restricting by the most powerful ones. Value/originality. The choice of accounting policy should be based on modelling, the central link of which is a system of accounting and analytical support
Russian Genocide in Ukraine as an Attempt to Destroy the Ukrainian Nation
The article assesses the recent and ongoing criminal acts of the Russian Federation in terms of their compliance with existing international crimes, in particular with the crime of genocide, with the aim of correct criminal-law qualification. It provides an analysis of actus reus of genocide as an international crime under the Convention on the Prevention and Punishment of the Crime of Genocide (hereinafter: Convention). The illegal action of the Russian Federation is analysed in the context of the so-called “denazification,” as the main goal of the full-scale aggression of Ukraine. The author attempts to show the distinction between the groups protected by the aforementioned Convention and the term “Nation,” which seems to have much broader sense. The author also concludes that the actus reus of the Russian perpetrators is not aimed solely at the destruction of any of the groups of the Convention, but actually at the destruction of the Ukrainian nation, its culture, language, history and statehood. In this context, the views of Raphael Lemkin, the founder of the concept of genocide as an international crime, are analysed. The necessity of international legal qualification of the actions of the Russian Federation as a new international crime has been substantiated and its conditional name – “natiocide” is proposed
